Tom Saap is a simple broth-based Thai soup that really showcases the fragrant depths that fresh lemongrass, galangal and kaffir lime leaves can add to soups.

Number Of Ingredients 12

2 quarts pork broth, (or water)
1 pound pork spareribs, (cut across the bone into 2-inch pieces)
2 stalks lemongrass, (cut into 1-2 inch slices)
2 inch piece galangal, (cut into slices)
8-10 kaffir lime leaves, (ripped)
3-4 cloves garlic, (chopped)
2 shallots, (chopped)
Fish sauce
Fresh chiles
Chile powder
Thai basil
Lime juice

Steps:

  • Slice spareribs into 2-3 inch pieces.
  • Add spareribs and pork broth or water to a stock pot, bring to a boil and skim scum that forms on the surface. Once broth or water boils, reduce to a simmer and then add lemongrass, galangal, garlic and shallots and simmer for about an hour until the spareribs are tender.
  • In the last ten minutes, add the kaffir lime leaves and simmer about 10 minutes. Strain or discard the lemongrass and galangal, optional.
  • Ladle into bowls and add seasonings, to taste.
  • Serve with a side of jasmine rice, optional.

  • Pour approx. 8 cups of new water into the pot with the ribs, and add in the shallots, lemongrass, galangal, and salt to the pot.
  • Check the ribs are tender, then add in the kaffir lime leaves, (chilis if you want it spicy and if you’re not on AIP), fish sauce, the juice from 1 lime, and salt to taste.
