TOMATO-BASIL MEATLOAVES



Tomato-Basil Meatloaves image

Make four mini loaves and freeze 'em, and you can have a hearty main dish at a moment's notice.

3 eggs
2 lb lean (at least 80%) ground beef
1/2 cup Progresso™ Italian style bread crumbs
1 cup chopped Italian plum tomatoes (3 medium)
1/2 cup finely chopped onion (1 medium)
1/2 cup ketchup
2 teaspoons dried basil leaves
1/2 teaspoon salt

Steps:

  • Heat oven to 350°F. In large bowl, beat eggs. Stir in all remaining ingredients until well blended. On large sheet of waxed paper, shape mixture into 4 (6 1/2x3-inch) loaves. Wrap 3 meatloaves tightly in heavy-duty foil; freeze up to 2 months.
  • Place 1 loaf in ungreased shallow baking pan; bake 40 to 50 minutes or until thoroughly cooked in center and meat thermometer reads 160°F. Let meatloaf stand 5 minutes before serving.
  • To thaw frozen meatloaf, place in refrigerator for 24 hours, or unwrap and place on microwavable plate; microwave on Defrost about 10 minutes or until thawed. Bake meatloaf as directed above.

Italian Meatloaf With Fresh Basil and Provolone image

Meatloaf sandwiches are one of the best reasons to make this dish. Serve leftover slices on sourdough bread with mayonnaise, Dijon mustard, leaf lettuce and red onions.

1 cup boiling water
1/2 cup sun-dried tomato, packed without oil
1/2 cup ketchup
1 cup seasoned bread crumbs
1/4 cup finely chopped onion
1/2 cup chopped fresh basil
1/2 cup shredded provolone cheese
2 large egg whites
1 garlic clove, minced
1 lb ground round

Steps:

  • Combine boiling water and tomatoes in a bowl; let stand 30 minutes, or until soft.
  • Drain the tomatoes and finely chop.
  • Preheat the oven to 350°F.
  • Combine ketchup, breadcrumbs, and the next 6 ingredients in a large bowl.
  • Add the tomatoes to the meat mixture.
  • Shape the meat mixture into a 9x5-inch loaf on a broiler pan, coated with cooking spray.
  • Spread 1/3 cup ketchup over meatloaf.
  • Bake at 350°F degrees for 1 hour.
  • Let stand 10 minutes before slicing 12 slices.
  • Serves 6.

  • Heat oven to 375°F. Line 15x10x1-inch pan with foil. Place broiler pan rack or metal cooling rack in pan.
  • Place diced tomatoes in blender or food processor. Cover; blend on high speed about 5 seconds or until tomatoes are still slightly chunky. In large bowl, mix beef and pork. Stir in tomatoes, marinara sauce, bread crumbs, egg, salt and pepper just until combined. Shape mixture into 9x5-inch loaf. Place loaf on rack in pan.
  • Bake 1 hour. Top with cheese. Bake 15 minutes longer or until no longer pink in center and meat thermometer inserted in center of loaf reads 160°F. Let stand 5 minutes before serving. Garnish with plum tomatoes and basil.
