Easy Baked Eggs in a Savory Tomato Sauce image

A favorite savory dish to enjoy for a leisurely breakfast or brunch, which is chock-full of good for you nutrients.

Ingredients

1 TBSP. extra virgin olive oil
½ small red onion, minced
⅓ small red pepper, seeded and chopped
1 small garlic clove, minced
¼ tsp. cumin
--- pinch of red pepper flakes
9 oz. fire-roasted tomatoes, chopped (⅔ of a 14oz. can)
--- sea salt & freshly ground pepper
2 large organic eggs
2 oz. Greek Feta cheese, crumbled
2 TBSP. fresh cilantro, minced (optional)

Steps:

Preheat the oven to 400°F.
Heat the olive oil in a small, ovenproof skillet over medium heat. Cook the onion and pepper for a few minutes, add the garlic and the spices, and cook until everything is softened.
Add the tomatoes, salt and pepper and simmer for 10 minutes until the sauce is slightly reduced.
Make two small wells in the cooked tomato and pepper sauce and crack one egg inside each one. Place the skillet in the oven and cook until the eggs whites are just set and yolk is still runny, about 10 to 12 minutes.
To serve, sprinkle some Feta cheese and some minced cilantro over each skillet and serve.

3/4 cup egg substitute
2 tablespoons reduced-fat ranch salad dressing
1/8 teaspoon garlic powder
1 plum tomato, seeded and diced
1 slice process American cheese

Steps:

In a large bowl, whisk the egg substitute, salad dressing and garlic powder. Spray the bottom of a 3-cup round baking dish with cooking spray. Pour half of the egg mixture into dish; top with tomato and cheese. Pour the remaining egg mixture on top., Bake at 350° for 22-26 minutes or until completely set and a knife comes out clean.

1 onion, diced
diced tomato
grated cheese
2 eggs, beaten
salt and pepper
parsley (to garnish)

Steps:

Saute chopped onion in a little butter til soft.
Add diced tomatoe and saute a little longer.
Stir in grated cheese, salt and pepper.
Add beaten eggs and stir gently over low heat til cooked (about 2mins).
Serve on hot buttered toast sprinkled with chopped parsley.
Cheese and/or parsley can be omitted if desired.

This is my favorite 'tomato-as-a-side-dish' recipe. It adds color to your plate, great flavor, and depending on what crumbs you use, can be low-fat (low-fat cheese works well, too), and can take on a variety of flavors.

4 medium tomatoes
salt and pepper
1/2 teaspoon crushed basil
1/2 teaspoon crushed oregano
1/3 cup coarsely crushed cracker crumb (or crouton crumbs)
1/3 cup shredded cheddar cheese (reduced fat, if desired)

Steps:

Remove stem ends from tomatoes.
Cut tomatoes in half horizontally.
Trim ends to make the halves stand flat, if necessary.
Arrange cut side up on microwaveable plate.
Mix crumbs and herbs; mound evenly on tomatoes.
Microwave uncovered on high for 2 minutes, rotating after 1 minute.
Sprinkle cheese on top of tomatoes and either microwave 1 minute until cheese is melted, or transfer tomatoes to an appropriate pan to broil in the oven or toaster oven until the cheese is bubbly and begins to brown.

10 slices white bread
4 medium tomatoes, sliced 1/2 inch thick
1 cup shredded cheddar cheese
4 green onions, thinly sliced
4 large eggs
2 cups whole milk
1/2 teaspoon salt

Steps:

Line a greased 8-in. square baking dish with four bread slices. Layer with half of the tomatoes, cheese and onions. Top with remaining bread (slices will overlap). Layer with remaining tomatoes, cheese and onions., In a small bowl, whisk the eggs, milk and salt. Pour over the top. Cover and refrigerate overnight., Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 45-50 minutes or until a knife inserted in the center comes out clean. Let stand for 5 minutes before cutting.
