7 sheets phyllo dough (14 inches x 9 inches)
1/3 cup olive oil
7 tablespoons crumbled goat cheese
1 cup thinly sliced sweet onion
1 cup shredded fontina cheese
4 plum tomatoes, thinly sliced
2 tablespoons minced chives
1 tablespoon minced fresh basil or 1 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 375°. Place one sheet of phyllo dough on a parchment-lined baking sheet. Brush with oil and sprinkle with 1 tablespoon goat cheese. (Keep remaining phyllo covered with plastic wrap and a damp towel to prevent it from drying out.) Repeat layers, brushing oil all the way to edges., Sprinkle onion over top to within 1 in. of edges; sprinkle with fontina cheese. Arrange tomato slices in a slightly overlapping pattern over fontina cheese. Sprinkle with chives, basil, salt and pepper. Bring up edges of tart over filling., Bake until crust is golden brown, 30-35 minutes.

1 package (17.3 ounces/2 sheets) puff pastry, defrosted
Good olive oil
4 cups thinly sliced yellow onions (2 large onions)
3 large garlic cloves, cut into thin slivers
Kosher salt and freshly ground black pepper
3 tablespoons dry white wine
2 teaspoons minced fresh thyme leaves
4 tablespoons freshly grated Parmesan, plus 2 ounces shaved with a vegetable peeler
4 ounces garlic-and-herb goat cheese (recommended: Montrachet)
1 large tomato, cut into four 1/4-inch-thick slices
3 tablespoons julienned basil leaves

Steps:

  • Unfold a sheet of puff pastry on a lightly floured surface and roll it lightly to an 11 by 11-inch square. Using a 6-inch wide saucer or other round object as a guide, cut 2 circles from the sheet of puff pastry, discarding the scraps. Repeat with the second pastry sheet to make 4 circles in all. Place the pastry circles on 2 sheet pans lined with parchment paper and refrigerate until ready to use.
  • Preheat the oven to 425 degrees F.
  • Heat 3 tablespoons of olive oil in a large skillet over medium to low heat and add the onions and garlic. Saute for 15 to 20 minutes, stirring frequently, until the onions are limp and there is almost no moisture remaining in the skillet. Add 1/2 teaspoon salt, 1/4 teaspoon pepper, the wine, and thyme and continue to cook for another 10 minutes, until the onions are lightly browned. Remove from the heat.
  • Using a sharp paring knife, score a 1/4-inch-wide border around each pastry circle. Prick the pastry inside the score lines with the tines of a fork and sprinkle a tablespoon of grated Parmesan on each round, staying inside the scored border.
  • Place 1/4 of the onion mixture on each circle, again staying within the scored edge. Crumble 1 ounce of goat cheese on top of the onions. Place a slice of tomato in the center of each tart. Brush the tomato lightly with olive oil and sprinkle with basil, salt, and pepper. Finally, scatter 4 or 5 shards of Parmesan on each tart.
  • Bake for 20 to 25 minutes, until the pastry is golden brown. The bottom sheet pan may need an extra few minutes in the oven. Serve hot or warm.

One of these days Michele and I will travel to the south of France, where we'll eat this amazing tomato tart at least once a day. It's going to be hot, since we'll have to go in the middle of summer to enjoy best possible tomatoes, but that's fine, as long as there's chilled rosé. One layer of tomato is plenty, since more than that will make for an overly wet tart, which means your pastry will not stay crispy.

1 sheet frozen puff pastry, thawed and cut into quarters
2 ½ tablespoons Dijon mustard
1 large ripe tomato, sliced into 1/4-inch rounds
salt and freshly ground black pepper to taste
3 pinches herbes de Provence
1 tablespoon freshly grated Parmigiano-Reggiano cheese
2 tablespoons extra-virgin olive oil, divided
1 pinch chopped fresh oregano
1 pinch chopped fresh parsley
1 pinch chopped fresh thyme

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place 2 pieces of puff pastry onto a silicone-lined baking sheet. Press the short seam of 1 piece onto the other to form the rectangular base of the tart. Cut seams off the other 2 pieces of puff pastry and press them into the edges of the base to act as the border.
  • Freeze dough until firm, about 10 minutes.
  • Score border with a knife, making shallow cuts 1/4-inch apart. Press the bottom of a fork onto the seam in the middle and poke holes all over the base.
  • Bake tart shell until lightly golden and partially puffed, about 10 minutes. Press down on the base using the bottom of a fork. Avoid pressing border. Let cool for 10 minutes.
  • Spread mustard over the inside of the tart. Arrange tomato slices into a single layer on top and cut a few slices in half to fill in the gaps. Season with salt and pepper. Generously sprinkle herbes de Provence on top. Add Parmigiano-Reggiano cheese and drizzle most of the olive oil on top.
  • Bake in the preheated oven until pastry is well browned and crispy, 25 to 30 minutes. Cool to room temperature on the baking sheet or transfer to a wire rack using 2 spatulas. Drizzle remaining olive oil over the tart and sprinkle fresh oregano, parsley, and thyme on top.

200g plain flour , plus extra for dusting
100g butter , cold and cubed
50g mature English cheddar , grated
small bunch basil or flat-leaf parsley, leaves roughly chopped
175g curd cheese
8 medium tomatoes , thinly sliced
a little olive oil , to serve
handful mixed soft herbs , (we used chervil, mint and flat-leaf parsley), to serve

Steps:

  • Put the flour, 1⁄2 tsp salt and butter into a food processor and whizz very roughly - you want the butter to stay in fairly large clumps. Tip into a bowl, stir in two-thirds of the cheddar, then bring together to a soft dough with about 100ml ice-cold water - add a little more if you need to. Knead quickly, then wrap in cling film and chill for at least 30 mins. Mix the chopped basil or parsley and remaining cheddar into the curd cheese, then season.
  • Dust the work surface with flour, then roll out the pastry to a long rectangle. Fold the top third down, then the bottom third up. Roll, then fold three more times to build up the flaky layers. Chill for at least 10 mins.
  • Heat oven to 220C/fan 200C/gas 7. Roll the pastry until large enough to cut a round about 27cm across (use a dinner plate as a guide). Lift the pastry onto a lightly floured baking tray, prick with a fork, then bake for 15 mins. Let cool for a few mins.
  • Spread the herby curd cheese over the pastry, taking it almost to the edge, then arrange the tomatoes on top in overlapping circles. Season and bake for 15 mins until the pastry is golden around the edges. Turn oven down to 150C/fan 120C/gas 2 and bake for another 30-40 mins until the tomatoes look quite dried out and the pastry is cooked through. To serve, let the tart cool a little, then drizzle with olive oil. Toss the herbs with more oil, then pile in the middle of the tart to serve.

7 fresh or frozen filo pastry sheets, thawed
1/4 cup melted butter
2 tablespoons Dijon mustard
2 cups grated Swiss cheese (recommended: Emmenthal)
8 large ripe tomatoes, sliced 1/4-inch thick
Coarse salt
Freshly ground black pepper
1 tablespoon fresh thyme leaves
12 fresh basil leaves, for garnish

Steps:

  • Preheat oven to 400 degrees F.
  • On a large baking sheet, place 1 sheet filo pastry and brush with melted butter, repeat, stacking them on top of each other as you build your pie crust. You may want to stagger the sheets a little bit to ensure that the baking sheet is well covered allowing a little bit of an edge.
  • On the top layer, brush on the mustard. Sprinkle the cheese evenly over the pastry to ensure even coverage. Lay the tomato slices generously, all over, overlapping, as needed. Season with coarse salt, and ground black pepper. Sprinkle the thyme leaves on top.
  • Bake in the oven until the pastry is crisped and browned at the edges, about 25 minutes.
  • Add another sprinkling of coarse salt, and cut the tart into 8 squares. Garnish with fresh basil leaves. Delicious when served hot, warm, or at room temperature.

CHERRY TOMATO TART

This tart came about as a way to use up some odds-and-ends ingredients that I had been wanting to get used up. Make sure to place a baking sheet under the tart pan while baking--those tomatoes can make a bit of a mess when they burst open! They add quite a bit of juice, which can pool on top a little. I simply dabbed up extra juice with a paper towel and that worked fine. This is best served warm, on the day it's made. Garnish with additional basil, if desired.

1 recipe pastry for a 9-inch pie crust
1 tablespoon olive oil, or as needed
1 large onion, sliced
4 cloves garlic, minced
1 cup shredded Gouda cheese
½ cup chopped fresh basil
⅓ cup mayonnaise
¼ cup shredded sharp Cheddar cheese
¼ cup freshly grated Parmesan cheese
1 tablespoon Dijon mustard
1 tablespoon chopped fresh oregano
¼ teaspoon freshly ground black pepper, or to taste
1 pinch ground nutmeg
1 pinch salt, or to taste
4 cups cherry tomatoes

Steps:

  • Roll out pie dough into a 12-inch circle on a lightly floured surface. Gently transfer dough to a 9-inch tart pan with a removable bottom; press to fit snugly. Trim dough so there's 1/2-inch overhang on all sides. Gently fold edges of dough under to create a slight lip of dough over the top of the pan on all sides.
  • Prick the bottom of the crust several times with a fork, being sure to not puncture all the way through. Place the prepared crust into the freezer until completely chilled, at least 30 minutes.
  • Meanwhile, prepare the filling. Heat olive oil in a medium skillet over medium heat. Add onion and garlic; cook until golden brown, stirring often, about 10 minutes. Remove from heat and cool to room temperature.
  • Mix Gouda, basil, mayonnaise, Cheddar, Parmesan, Dijon mustard, oregano, pepper, nutmeg, and salt together in a medium bowl. Stir in the cooled onion and garlic until completely combined.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Remove tart pan from the freezer. Gently spread the cheese mixture evenly over the bottom. Place cherry tomatoes evenly over the top and gently press down. Place tart on a large baking sheet.
  • Bake in the preheated oven until the crust is golden brown, cheeses are bubbly, and most of the tomatoes have burst, 55 to 65 minutes. Cool for 20 minutes. Gently remove the tart from the pan and place on a serving platter. Serve warm.

1 medium onion, finely chopped
1 clove garlic, minced
2 medium ripe tomatoes, peeled, seeded and finely chopped
1 tablespoon minced fresh basil
2 sun-dried tomatoes, minced

3 eggs, lightly beaten
1 1/4 cup half-and-half
1 cup fresh goat cheese, mashed
1/2 cup freshly grated Parmesan cheese
1 9-inch parbaked pie crust
1 large tomato, peeled and sliced
1 tablespoon sweet butter

Steps:

  • Heat the oil in a skillet. Saute the onion until soft but not brown. Stir in the garlic, then add the chopped tomatoes. Simmer for about 10 minutes until the mixture is thick. Season with basil, sun-dried tomatoes, salt and pepper. Allow to cool to room temperature.
  • Preheat oven to 350 degrees.
  • Beat eggs with half-and-half and a pinch of salt. Stir in the cheeses and the tomato mixture. Pour the mixture into the pie crust.
  • Arrange the tomato slices on top and dot with butter. Bake about 35 minutes, until the custard is set. Cool briefly, then serve.

I made this to take to a dinner party. Not only is it easy, it is super yummy and beautiful! Using a tart pan with removable sides make for a nicer presentation. Combing the two cheeses works best, but you can use one or the other. Don't be tempted to add more cheese than suggested, it will be too thick with cheese and changes the outcome, IMO.

3 -4 tablespoons Dijon mustard
4 ounces gouda cheese, shredded
4 ounces swiss cheese, shredded
2 -3 tomatoes, seeded, thickly sliced
2 -3 tablespoons minced fresh herbs, combination of thyme & basil
salt & pepper
2 tablespoons olive oil

Steps:

  • Preheat oven to 425°.
  • Roll crust to fit a tart pan with removable bottom or in a pinch, use a pie plate.
  • Brush bottom & sides of crust with mustard.

2 cups flour
1 tablespoon unsalted butter
3 tablespoons olive oil
1 egg yolk
Pinch of salt
3 tablespoons tepid water
5 1/2 ounces Montrachet goat cheese
1 cup heavy cream
2 egg yolks
1 tablespoon chopped garlic
1 pint yellow cherry or pear tomatoes
1 pint red cherry or pear tomatoes
2 tablespoons olive oil
2 tablespoons rosemary leaves, chopped
1 tablespoon thyme leaves
Coarse salt and freshly ground pepper to taste

Steps:

  • Make the pie crust. Sift the flour into a mixing bowl and using the tips of your fingers, work in the butter and the olive oil. Add the egg yolk, salt and water and mix together until the dough forms a ball (do not overwork the dough). Refrigerate for one hour.
  • Roll out the dough and fit it into a 10-inch pie shell. Preheat the oven to 350 degrees.
  • Make the filling. Combine the goat cheese and heavy cream in a saucepan and melt the cheese over moderate heat. Remove from heat and allow to cool slightly. Beat in the egg yolks with the garlic.
  • Prebake the crust for five minutes. Pour in the goat-cheese mixture and bake until it is set (about 10 minutes). Remove from the oven and turn the heat up to 375 degrees.
  • While the tart is still warm, arrange the tomatoes, alternating the colors, onto the custard. Sprinkle them with olive oil, rosemary, thyme and coarse salt and pepper. Put the tart back in the oven until the tomatoes are wrinkled (about 10 minutes). Cool and serve at room temperature. Do not refrigerate.

1 cup all purpose flour, plus more for dusting
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
8 tablespoons unsalted butter, cubed and chilled
1 cup shredded cheddar cheese
1 teaspoon apple cider vinegar
3 tablespoons cold water
2 tablespoons dijon mustard
⅓ cup shredded cheddar cheese
3 heirloom tomatoes, of varying colors, thinly sliced
1 tablespoon fresh thyme leaf, plus more for garnish
1 small shallot, thinly sliced
½ teaspoon kosher salt, plus more to taste
½ teaspoon freshly ground black pepper, divided
1 large egg, beaten
6 tablespoons sour cream, for serving

Steps:

  • Make the crust: Add the cheese crackers to the bowl of a food processor. Pulse for 20-30 seconds, until the crackers are broken down into crumbs.
  • Add the flour, salt, and pepper to the food processor and blend for 20-30 seconds to incorporate into the cracker crumbs.
  • Add the butter and cheddar cheese and blend for 30-60 seconds, until the butter is broken down into pea-sized pieces.
  • Transfer the mixture to a medium bowl. Add the apple cider vinegar and 3 tablespoons of cold water and mix with your hands to combine. Add more water, 1 tablespoon at a time, until the mixture holds together well, feels slightly damp, and does not crumble when pressed.
  • Shape the dough into a disc and tightly wrap in plastic wrap. Chill in the refrigerator for 1 hour.
  • Preheat the oven to 375˚F (190˚C).
  • Lightly dust a clean surface and a rolling pin with flour. Set the chilled dough on the floured surface and begin to roll out the dough, starting from the center and working your way outwards, applying even pressure. The fewer passes of the rolling pin over the dough, the more tender the crust will be. Rotate the dough as you roll it out, using a bench scraper, as necessary to keep the dough from sticking to the surface. If the dough begins to feel sticky, lightly dust with more flour. Roll the dough out to ⅛- to ¼-inch (3 mm - 6 mm) thick. The dough should be wide enough to fit into a 11-inch (27 cm) tart pan with some excess dough overhanging.
  • Wrap the dough around the rolling pin and transfer to the tart pan, gently draping it over. Press the dough down into the bottom of the pan and up the walls. Roll the rolling pin over the top of the pan to trim the edges. Transfer the tart crust to the refrigerator to chill while you cut out dough strips for the top.
  • Gather the excess dough into a ball. Shape the dough in a rectangle and roll out to about 4 inches wide (10 cm) and 12 inches (30 cm) long, ⅛- to ¼-inch (3 mm - 6 mm) thick.
