Steps:
- Bring water, onion, and 1/2 teaspoon salt to a boil in a heavy medium saucepan, then cook over medium heat, covered, stirring occasionally, until onion is tender, about 5 minutes.
- Increase heat to medium-high and stir in butter and peas, then cook, covered, stirring occasionally, until peas are tender, about 8 minutes. Season with salt.
MASHED POTATOES AND SAUTEED ONIONS WITH PEAS

Steps:
- Scrub potatoes -- do not peel -- and cover with water in pot. Cover pot, and bring to a boil, 10 to 20 minutes, depending on size.
- Meanwhile, chop onion. Heat a small nonstick saute pan until very hot; reduce heat to medium-high, and add oil. Saute onion until golden.
- Mince garlic, and add to onion.
- A minute before potatoes are cooked, add peas, and finish cooking. Drain potatoes, remove them from peas and mash them. Stir in onion mixture and buttermilk. Add peas,if desired. Season with salt and pepper.

- In a large skillet, saute onions and red pepper in oil until onions just begin to soften. Add peas; cook, uncovered, stirring occasionally, for 10 minutes or until heated through. Stir in mint and cook for 1 minute.

Steps:
- In a blender or food processor, mince onion garlic and ginger.
- Over medium heat warm oil in a skillet.
- Add asafoetida and cumin.
- Let spices darken (2seconds).
- Add blended onion mixture and cook until browned (12minutes).
- Add salt, cayenne, tumeric, garam masala & tomatoes and cook until softened (5minutes).
- Add peas and water, reduce heat to low and cover.
- Cook for 5-10 minutes.
- Serve with rice.
- Enjoy!

TOMATOES AND ONIONS AND PEAS, OH MY!
Very colorful, very simple and very good. I had this at a restaurant in downtown Asheville, NC called "Jack of the Wood". In addition to good food, they have wonderful live entertainment on the weekends and brew their own Green Man Ales. Check them out if you are in the area. They served this with "Bangers and Mash". Lovely.

Steps:
- Melt butter in skillet.
- Chop tomatoes into approx.
- 1 inch cubes.
- Place thawed peas in skillet and cook until warm.
- Add onion, saute until just limp.
- Add carrot.
- Stir until carrot is warmed, 1-2 minutes.
- Add tomato and saute until warm.
- Don't overcook.
- Serve warm.
