Steps:

  • Preheat oven to 350℉ (180℃). Beat bananas, sugar and eggs together until light. Stir in milk. Add sifted dry ingredients and mix thoroughly. Stir in melted butter, vanilla, and nuts or raisins or chocolate chips if using. Pour into 1 standard or 2 smaller baking pans and bake one hour or until done. Baking time may need to be reduced for smaller pans. Done when toothpick tests dry. Cool thoroughly before slicing. Freezes well.

Tom's Favorite Banana Bread image

My husband is a great fan of banana bread, so I took a couple of his "sort of" favorites and came up with this one, which he raves about. You may use all vanilla extract if you don't have, or can't find the Vanilla Nut extract. Look for it if you can, it's a really nice flavoring.

1 cup all-purpose flour
3/4 cup whole wheat flour (can use all white)
1 teaspoon cinnamon
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon salt
3 large very ripe bananas, mashed
1/2 cup milk
1 teaspoon vanilla
1/2 teaspoon vanilla nut extract
1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar
2 eggs
1 cup nuts (optional)

Steps:

  • Preheat oven to 350°F.
  • Butter and flour(or line with parchment paper)loaf pan.
  • Whisk together dry ingredients in small bowl. Mix bananas, milk, vanilla and vanilla nut extract in another bowl.
  • Beat butter and sugar in mixing bowl until light and fluffy. Add one egg at a time, mixing until incorporated. Then alternate mixing in dry ingredients in two batches starting and ending with dry ingredients.
  • Stir in nuts, if using. Pour into prepared pan.
  • Bake for approximately 1 hour and 10 minutes, (checking at 1 hour) until toothpick inserted comes out clean.

This is so buttery and moist. My extended family always goes nuts over it. Except I don't put nuts in it because two nephews are deathly allergic. But you can :-) Use 1/2 pecans if you want them.

2 cups flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
4 bananas, overripe
1 cup sugar
3/4 cup butter, melted
2 eggs
1 teaspoon vanilla
1/4 cup powdered sugar

Steps:

  • Preheat oven to 350°F Lightly grease loaf pan or put liners in muffin pan.
  • In medium bowl, combine flour, baking soda and salt; set aside.
  • In large bowl, add 2 bananas and sugar. Whip for a good 3 minutes until light & fluffy. Add melted butter, eggs and vanilla; beat well scraping sides. Mix in dry ingredients until just blended. Mash other 2 bananas so they still have a bit of texture and fold into.
  • Pour batter into loaf pan or muffin cups.
  • Bake for 1 1/4 hours if in loaf pan. Approx 15-20 minute if large muffins. Check with toothpick.
  • Cool for 10 minutes then turn out loaf or pull muffins out of pan to cool completely. Dust with powdered sugar.
  • Optional, toast bread slices.

I really think that this threads the needle between something that has the flavor of banana bread, but that is very close to the texture of a classic pancake. Top with butter and banana slices and serve with warm maple syrup.

1 ¼ cups all-purpose flour
½ teaspoon kosher salt
½ teaspoon baking powder
¼ teaspoon baking soda
1 large ripe banana
1 large egg
⅓ cup white sugar
¼ cup milk
¼ teaspoon vanilla extract
¼ cup unsalted butter, melted
½ cup finely chopped walnuts
1 tablespoon unsalted butter, or as needed

Steps:

  • Combine flour, salt, baking powder, and baking soda in a small bowl with a whisk. Reserve until needed.
  • Place banana in a mixing bowl and mash into a smooth paste with a potato masher. Add egg and sugar and whisk thoroughly until sugar is dissolved and mixture is smooth and creamy, about 2 minutes. Add milk, vanilla extract, 1/4 cup melted butter, walnuts, and flour mixture. Whisk until just combined.
  • Let batter rest for 10 minutes.
  • Melt 1 tablespoon butter in a large, nonstick pan or skillet over medium-high heat. Once the pan is hot, transfer in about 1/3 cup of the batter per pancake. Reduce heat to medium and cook until edges start to look dry and small air bubbles pop up through the surface, about 3 minutes. Flip and cook until golden brown, about 3 minutes more. Serve immediately.

Very moist and nutty, this bread has a flavor of butter that lingers on the palate. The spices in this are very subtle, but if you like a spicier bread, just increase those for a richer flavor.

1 3/4 cups sifted all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon ground ginger
1/2 teaspoon grated nutmeg
1/3 cup butter, softened
1/2 cup sugar
2 eggs
1 cup mashed ripe banana
1/2 cup chopped walnuts or 1/2 cup pecans

Steps:

  • Preaheat oven to 350F.
  • Cream together softened butter and sugar in a mixer at medium speed until lightly fluffy.
  • Add eggs one at a time, waiting a few moments after each addition to give time to blend.
  • Add the dry ingredients alternatively to the mixer with some of the banana, allowing each to blend before adding some of the other.
  • When all is mixed, fold in the chopped nuts.
  • Grease sides and bottom of a 9x5-inch loaf pan and add batter to it.
  • Bake in preheated oven for 1 hour or until it tests clean with a toothpick.
  • Cool on a rack 10 minutes, then remove from pan to finish cooling.
  • Dust with confectioners sugar (if desired), or you may use your favorite glaze (optional).
  • Store unused portions in refrigerator, wrapped in foil.
