Steps:
- Prepare and cut vegetables.
- Heat 1 tablespoon oil in a 10" to 12" skillet to medium heat.
- Add onion and green bell pepper and cook until they begin to soften, then add the mushrooms.
- Season with salt and pepper and allow them to caramelize while continuing to stir.
- Once they are cooked remove from the pan and set aside. Do not clean pan so you can keep the seasoning.
- Heat 1 tablespoon of oil to the same pan to medium high heat. Add thinly sliced steak to pan, season with salt & pepper and let sit for about 4 to 5 minutes before stirring so the meat can brown.
- After 4 to 5 minutes begin to stir and cook until fully cooked about 1 to 2 more minutes.
- Once the meat is cooked, drain grease from the pan into a strainer and then return the meat, onions, bell pepper and mushrooms back to pan and stir to mix.
- Heat up panini press.
- Butter the outside of the San Luis Sourdough bread and lay butter side down on panini press.
- Add meat mixture and 2 slices of white American cheese over top the meat.
- Add the 2nd slice of sourdough bread to the top of cheese with butter side facing out and close press gently so the sandwich presses together.
- Cook for a few minutes until the cheese is soft and the bread is a crispy golden brown color.
- Remove from press and enjoy!

- Shingle 12 slices of the bread onto the sheet pan, making sure each slice overlaps and the bread reaches the edges.
- Preheat oven to 400°F (200°C).
- Place any fillings you choose onto the bread. You can mix and match any flavor combos you prefer!
- For the ham and cheese sandwich, place 2 slices of cheddar cheese on the bread, four slices of ham, and 2 more slices of cheddar cheese.
- For the chicken-bacon-ranch sandwich, place the shredded Monterey Jack cheese, 3 bacon slices, grilled chicken slices, and ranch dressing on the bread.
- For the roast beef and onion sandwich, sprinkle on the shredded cheddar cheese, sliced roast beef, and half of the sautéed onions.
- For the cheesesteak sandwich, add the provolone cheese, grilled steak, sautéed onions, and sautéed peppers.

- Bake the sheet pan for 20 minutes or until the fillings have warmed through.
- Remove the heavy objects and the top sheet pan, and bake the pressed sandwiches for another 20 minutes or until the bread turns golden brown and crisps up.
- Remove the sandwiches from the oven, carefully flip the tray onto a large cutting board, and slice squares of sandwiches.
- Enjoy!

TONY LUKE'S AUTHENTIC PHILLY CHEESESTEAK
I saw Tony Luke prepare this sandwich on a Bobby Flay Throwdown episode. He maintains that the authentic Philly cheesesteak only really has these ingredients.

Steps:
- Try to get thin butcher cut Rib Eye. It is much easier than doing it yourself.
- Tony Luke fresh bakes his rolls. Make rolls out of fresh baked French bread so they hold up better if you're not making your own.
- Fry 1/4 to 1/3 pound of the meat on a griddle, moving it as it cooks. It should stay moist, but be thoroughly cooked through. It should have a gray tinge to it.
- Heat Cheese Whiz and keep warm.
- Saute a handful of the onions in oil or butter on the grill.
- Open a roll and grill it till lightly browned.
- Assemble the sandwiches: roll, slather cheese on one side. Top with sauteed onion. Place meat on the other side and close the sandwich.
- Serve immediately.
