Torta Margherita (Sponge Cake) image

Torta Margherita is a simple sponge cake enriched with lemon zest. It probably owes its name to its yellow color and dusting of powdered sugar that are similar to the colors of a "margherita" (daisy); delicious on its own or with jam filling.

2/3CUP sugar
7/8CUP all-purpose flour, plus extra
1/4CUP unsalted butter, plus extra
1 1/2OZ. wheat starch
6 egg yolks
2 large eggs
zest of 1 lemon
1 packet vanillin
salt

Steps:

  • Beat the eggs and egg yolks with a pinch of salt and the sugar. Place the bowl over a double boil and continue to beat the eggs with a whisk for around 5 minutes, until the eggs reach a temperature of around 98 °F.
  • Remove from the heat and continue to whip the mixture using an electric mixer, for around 10-15 minutes. You should obtain a frothy and smooth mixture. If you pick up the beater and let the batter fall, it can be clearly seen on the surface. Add the grated lemon rind and a packet of vanillin.
  • Preheat the oven to 350 °F.
  • Add the sifted flour and wheat starch to the batter very carefully, making sure not to deflate it.
  • Pour the batter into a greased cake pan (ø 9 1/2") lined with a sheet of greased and floured parchment paper; bake at 350 °F for around 30 minutes or until a tester inserted into the center comes out clean. Let cool and dust with powdered sugar.

  • In the mixing bowl beat the eggs, yolk, vanilla and sugar until light fluffy about 3-4 minutes, gradually add the melted cooled butter while beating. Then alternately add the dry ingredients and milk, beating until smooth.
  • Pour half the mixture in the prepared bundt pan, drizzle the hazelnut cream on top and cover with remaining batter. Bake for about 30-35 minutes or until toothpick comes out clean. Let cool before dusting with powdered sugar if desired. Enjoy!
