JALAPENO POPPER CHILI
A delicious and creamy chili with all of the goodness of a jalapeño popper packed inside!

Steps:
- In a large pot add the extra virgin olive oil. Sauté onion, bell pepper, jalapeño, and garlic over medium heat until tender. Add the ground beef and cook until no longer pink. Add in the taco seasoning.
- Add the black beans, corn, diced tomatoes, salsa, chicken broth, and chopped cilantro. Bring the chili to a simmer and cook for 30 minutes to allow flavors to blend.
- Meanwhile, cook and crumble the bacon. Add the bacon and cream cheese right before serving. Stir until melted and creamy. Serve with desired toppings.

- In a large saucepan over medium high heat, combine the ground beef, onion and bell peppers. Saute for about 5 minutes, or until beef is browned. Drain excess fat.
- Add the chili powder, garlic, bay leaf, cumin, chile peppers, tomatoes, tomato sauce and salt and pepper to taste. Bring to a boil and reduce heat to low. Cover and simmer for 1 1/2 hours, stirring occasionally. Stir in the beans and heat through.

SPICY VEGAN CHILI
Made this by tweaking a family recipe to make it vegan. Great on Cinco de Mayo or football Sunday! Cornbread is a great addition to this dish.

Steps:
- Heat oil in a pot over medium-high heat. Saute bell pepper, onion, and jalapeno peppers until tender, about 3 minutes. Add chili powder, salt, cumin, and garlic. Cook, stirring occasionally, for about 10 minutes, making sure chili powder does not burn.
- Stir tomatoes, beans, water, and rice into the pot. Bring to a boil. Reduce heat to low, cover, and simmer until rice is fully cooked, about 20 minutes. Check every 10 to 15 minutes if extra water is needed; add 1/4 cup at a time.
- Stir corn and pepper into the chili and cook until heated through, about 5 minutes. Serve with vegan cheese.

JALAPENO PEPPER CHILI
This is a simple chili with a lot of hot pepper kick! The best part is that it's served in its own bowl, a bread boat made out of hard rolls.

- Heat a large pan over medium heat. Add the ground beef and ground pork. Stir and break up the meat until it is cooked. Drain off any excess grease. Add the kidney beans, tomatoes, beef broth, tomato sauce, chili powder, and jalapeno to the pan. Bring the mixture to a boil then reduce the heat to a simmer. Cover and cook for 20 minutes. While the chili is cooking, slice a section lengthwise from the top of each roll. Scoop out the interior leaving a 3/4-inch shell. When the chili is ready to serve, spoon it carefully into the bread boats. Top with sour cream, grated cheese, and sliced jalapenos. Serve immediately.

Steps:
- Brown ground beef (you can also use ground turkey or pork).
- Dice peppers, onion, and jalpeno.
- Mix all ingredients in a medium to large crock pot.
- Make sure you drain the red kidney beans but not the chili beans.
- Make sure you include the gravy from the chili beans Cook on low for 6-8 hours.
- occasionally stir to make sure all ingredients are mixed together.

- This recipe is extremely spicy, you have been warned!
CHILI WITH SAUSAGE AND JALAPENO
This is a real tasty sweet and spicy beanless chili that I tried from Bon Appetit magazine. The recipe was found in the RSVP section as a request from a restaurant in Rochester New York called Dinosaur Bar-B-Que. We loved it and beans could be added easily if you are a bean fan.

Steps:
- Heat 2 T.
- oil in a large pot over high heat.
- Add beef and sausage; cook until brown, breaking up with spoon, about 8 minutes.
- Transfer meat mixture to bowl.
- Reduce heat to medium high.
- Add remaining oil to pot.
- Add onion, bell pepper, jalapenos and bay leaves.
- Cook until vegetables are soft, stirring frequently.
- Add garlic; sauté 1 minute.
- Return meat mixture to pot.
- Mix in tomatoes and next 7 ingredients.
- Simmer 25 minutes, stirring occasionally.
- Mix in lime juice.
- Season with salt.
- Serve chili in bowls, passing hot sauce, cheese, red onion and sour cream separately.
