1 pkg. (8 oz.) KRAFT Mozzarella Cheese, cubed
2 cups cherry tomatoes, halved
1 large green pepper, chopped
1 small red onion, finely chopped
1/2 cup chopped OSCAR MAYER Pepperoni
1 can (2.25 oz.) sliced black olives, drained
1 cup KRAFT Zesty Italian Dressing
2 Tbsp. KRAFT Grated Parmesan Cheese
2 Tbsp. chopped fresh basil

Steps:

  • Combine first 7 ingredients in large bowl.
  • Add remaining ingredients; mix lightly.
  • Refrigerate several hours or until chilled.

1 (16 ounce) package refrigerated cheese tortellini
4 ounces sliced pepperoni, quartered
2 green onions, sliced
1 (2.25 ounce) can sliced black olives
1 (6.5 ounce) jar marinated artichoke hearts, drained and chopped
6 ounces mozzarella cheese, diced
⅓ cup extra-virgin olive oil
1 ½ tablespoons balsamic vinegar
1 ½ tablespoons distilled white vinegar
1 teaspoon dried Italian herb seasoning
salt and black pepper to taste

Steps:

  • Cook the tortellini according to package instructions, drain in a colander set in the sink, and rinse with cold water.
  • Place the tortellini, pepperoni, green onions, olives, artichoke hearts, and mozzarella cheese in a large salad bowl.
  • Whisk together the olive oil, balsamic vinegar, white vinegar, Italian seasonings, and salt and pepper in a bowl, and pour over the salad ingredients. Gently stir to combine, and refrigerate to chill before serving. For even better flavor, let chill in refrigerator for at least 2 hours before serving.

1 (19 ounce) package cheese tortellini
¾ cup pesto
1 cup cherry tomatoes, halved
1 cup mini mozzarella pearls
¼ cup basil, thinly sliced
salt and pepper, to taste

Steps:

  • In a large pot of boiling water, cook the tortellini al dente according to the instructions on the box. Before draining, reserve about 1 cup of the cooking water and set it aside. Drain the pasta and rinse with cool water.
  • In a large bowl, whisk the pesto together with ¼ cup of the reserved pasta cooking water. Add the tortellini and toss to coat evenly. If the sauce is too dry, add more of your reserved pasta water.
  • Add in the tomatoes, mozzarella, and basil; toss to combine. Season with salt and pepper to taste.
  • Serve immediately or refrigerate until serving. Enjoy chilled or at room temperature!

1/3 cup reserved oil from marinated artichokes
1/3 cup olive oil
2 tablespoons balsamic vinegar
2 tablespoons red wine vinegar
1 tablespoon fresh garlic (minced)
1 1/2 tablespoons dried Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
2 20 ounce-each packages cheese filled tortellini
1/2 cup red onion sliced
1 6.5 ounce jar marinated artichokes (drained and oil reserved)
8 ounces genoa salami (sliced into 1/4 inch strips)
1 15 ounce can garbanzo beans (drained and rinsed)
1 cup pitted black olives (cut in half)
1 cup pitted Italian green olives (cut in half)
1/3 cup peperoncini peppers (sliced)
1/3 cup peppadew peppers (sliced)
1 large red bell pepper (julienned)
2 (8 ounces containers) fresh mozzarella ball in water, (drained and cut Into 1/2 inch cubes)
10 ounce container grape tomatoes (cut in half)
1/4 fresh basil leaves (julienned)
2 tablespoons to 1/4 Cup Olive Oil (optional)

Steps:

  • In a very large mixing bowl, whisk together the ingredients of the dressing until well combined. Set aside.
  • Cook the tortellini according to package directions and drain well.
  • While pasta is still warm, toss it in the mixing bowl with dressing. Allow pasta to cool.
  • When dressed pasta has cooled to room temperature, add the rest of the salad ingredients to the pasta and toss well.
  • Refrigerate 6 hours, or even better, overnight.
  • Toss before serving, adjust seasoning and add olive oil as needed. Topped with fresh Basil and Serve

2 cups fresh basil leaves (tightly packed)
3-4 cloves garlic (peeled)
1/4 cup toasted pine nuts
1/2 cup extra virgin olive oil (plus extra for tossing)
Juice and zest of 1 small lemon
1 cup freshly grated parmesan cheese*
kosher salt and freshly ground black pepper (to taste)
1 pound fresh cheese tortellini
8 ounces fresh mini mozzarella balls (pearl sized)
1 pint sweet cherry/grape tomatoes (halved)

Steps:

  • Sauce: add basil, garlic, and pine nuts in food processor and pulse several times until chopped. Add olive oil and lemon juice with zest. Process until smooth and well blended. Add freshly grated parmesan and pulse a few times just to combine.
  • Transfer: use rubber spatula to scrape all of the pesto sauce into a container; season with kosher salt and fresh pepper to taste. Cover airtight and chill until ready to serve.
  • Cook: in pot of generously salted water, cook tortellini to al dente according to package instructions. Drain, but do not rinse. Toss with 2 tablespoons olive oil to prevent sticking.
  • Combine: gently toss tortellini with mozzarella and tomatoes in a serving bowl. Add desired amount of pesto sauce. Save any leftover sauce in airtight container to keep in fridge.

  • Prepare Italian Dressing according to directions. Refrigerate until ready to use then shake or whisk to recombine before using.
  • Cook tortellini in salted water according to package directions. Rinse with cool water, drain and add to a large serving bowl. Pour half of the dressing over the warm pasta and toss to combine. Add the remaining salad ingredients to the tortellini.
  • If serving within the hour: toss with desired amount of remaining dressing. Although you can serve salad immediately, I highly recommend refrigerating for at least 30 minutes for the flavors to meld and salad to chill.
  • If serving later: Gently toss ingredients to combine but do NOT add remaining dressing yet. Cover and refrigerate. When you are ready to serve, toss with desired amount of remaining dressing. This salad is excellent the next day.
