TORTELLINI TUSCANY STYLE

Steps:
- Bring a large pot of lightly salted water to a boil and add tortellini.
- Meanwhile in a large skillet heat the oil over medium heat.
- Add the onion and Italian seasoning mix, cooking for 6 minutes, stirring occasionally.
- Add the garlic and cook for 1 minute more.
- In a medium bowl whisk together the cornstarch and milk.
- Whisk into pan with onions and cook until thickened, around 8 minutes.
- Stir in the parmesan cheese, spinach, beans and 1/2 the tomatoes.
- Cook for 4 minutes.
- Drain tortellini and place in a serving bowl.
- Pour sauce on tortellini and top with remaining tomatoes.
- Serve.

CHEESY ITALIAN TORTELLINI
This easy cheesy slow cooker dish is my family's favorite. Make it once and I bet you'll make it once a month from now on.

Steps:
- Crumble the ground beef and Italian sausage into a large skillet. Cook over medium-high heat until browned. Drain.
- Combine the ground meats, marinara sauce, mushrooms, and tomatoes in a slow cooker. Cover, and cook on LOW heat for 7 to 8 hours.
- Stir in the tortellini, and sprinkle the mozzarella and cheddar cheese over the top. Cover and cook for 15 more minutes on LOW, or until the tortellini is tender.

- In a very large skillet, heat oil over medium heat until hot. Add onion, stir constantly 30 seconds. Add garlic and stir another 2 minutes or until aromatic and tender.
- Push onion mixture to the edges of pan and add sausage into the center of pan. Cook and break up sausage; once it’s half-cooked, stir together with the onion mixture and continue cooking until browned.
- Add tomato sauce, diced tomatoes with juices, broth, and half/half. Stir and bring to a simmer. Add frozen tortellini, stirring to submerge tortellini in the sauce. Cover and simmer until tender, about 7-8 minutes.
- Remove from heat. Gently stir in spinach and just until wilted. Add 1/4 tsp freshly ground black pepper or to taste. Serve immediately with freshly shredded Parmesan cheese.
