THE TOSTADA CONNECTION
Love Mexican food? Give your taste buds a treat and have a slice of tostada pizza with a crispy, healthier cauliflower crust. Trust me on this one, it works! Garnish with sour cream, salsa, pickled jalapenos, and additional Cheddar cheese.

Steps:
- Preheat the oven to 425 degrees F (220 degrees C).
- Cook and stir ground beef in a skillet until browned and crumbly, 4 to 5 minutes. Drain grease from skillet, stir in tomato sauce and taco seasoning, and cook for about 2 minutes. Set aside.
- Place frozen pizza on a pizza or round baking pan. Spread refried beans evenly over the crust, followed by a layer of the ground beef mixture. Sprinkle the pizza with shredded Cheddar cheese.
- Bake in the preheated oven until crust is crispy, edges are golden brown, and cheese is melted, 15 to 17 minutes.

JEN'S TOSTADA PIZZA
I came up with this when I was craving CPK's Tostada Pizza. It's so easy to put together and it tastes and looks so fresh. I will definately be taking a picture of this one the next time I make it. Baking time is approximate depending on what brand of crust you use.

Steps:
- Spread the Rotel tomatoes on pizza crust.
- Scatter black beans over tomatoes evenly.
- Scatter tortilla chips over that, then cover with shredded cheese.
- Bake according to pizza crust directions until heated through and cheese is melted.
- Layer with shredded lettuce and tomato. You can add whatever else you may want like green onions, olives, etc.
- Drizzle with ranch dressing or dollop with sour cream if you prefer.
- Enjoy!

TOSTADA PIZZA
Very tasty and quite easy. Note: Do not put veggies on the whole pizza if you want to have leftovers...they get yucky when you try to re-heat. I also like to substitute pepper jack cheese for cheddar.

Steps:
- In large skillet cook meat until brown. Drain off fat. Stir in 3/4 cup water, chile peppers, taco seasoning mix, and chile powder.
- Bring to boil; reduce heat. Simmer uncovered for 15-20 minutes (until most of the liquid is gone).
- Meanwhile, grease a baking sheet and sprinkle with the cornmeal. Pat pizza dough into a 12x8-inch rectangle on the baking sheet. Bake in a 400 degree oven for 5 minutes.
- In a bowl, mash beans with a fork; spread over partially baked dough to within 1/2 inch of the edges.
- Spoon meat mixture over beans. Bake uncovered, 10 minutes more, or until crust is just golden.
- Sprinkle with cheese. Bake 1-2 minutes more (until cheese melts).
- Top with lettuce, tomato, and onion. If desired, serve with taco sauce.

- Preheat oven to 450 degrees F. (or check store-bought dough package for cooking temperature.)
- In a large skillet over medium-high heat, cook ground beef until brown there is no longer any pink. Drain any grease in the skillet. Season with chile powder, oregano, cumin, salt, and pepper. Add water, stir, and simmer until water is gone, about 3 to 5 minutes. Set aside.
- Preheat a pizza stone in the oven. Spread out pizza dough on pizza stone and par-bake dough for 5 to 7 minutes. (Or use a pizza pan that has been greased and floured - or line a baking sheet with a silicone mat)
- Carefully remove the dough from oven and top with refried beans. Spread beans evenly to within about 1/2-inch of the dough’s edge. (I never use all the beans, don’t feel like you have to.) Top beans with the ground beef, and bake for 5 more minutes.

- Combine Bisquick and cold water in a small bowl. Pat out mixture onto bottom of pizza pan until uniformly covered and flattened out. (Or roll the Bisquick mixture out into a circle on a flat surface and transfer to pizza pan) Crimp edges up and poke a few times with a fork.
- Brown meat; drain any fat. Add 3/4 cup water, chilies and taco seasoning. Bring to a boil. Simmer uncovered 15 minutes or until thickened.
- Spread beans on dough. Top with meat mixture. Bake 20 minutes. Top with cheese and return to oven until cheese is melted. Cut like a pizza and serve with or without toppings. ENJOY!
