COPYCAT UMAMI SEASONING

Copycat Umami Seasoning image

This umami seasoning -- inspired by Trader Joe's version -- gets its savory flavor from porcini mushroom powder. It can be scaled up easily and keeps well, so make a double batch to keep on hand to use when you're looking to add a flavor boost to any dish.

Ingredients

2 1/2 teaspoons porcini powder
2 teaspoons white mushroom powder
2 teaspoons onion powder
1 teaspoon crushed red chile flakes
1 teaspoon mustard powder
1/2 teaspoon dried thyme
Kosher salt and freshly ground black pepper

Steps:

Combine the porcini powder, white mushroom powder, onion powder, chile flakes, mustard powder, thyme, 2 teaspoons salt and 1/2 teaspoon pepper in a small bowl. Transfer to an airtight container. Umami seasoning keeps up to 3 months at room temperature.
Here are two of our favorite ways to use the seasoning.
Mac and Cheese: Stir 1 tablespoon umami seasoning into the cheese sauce from your favorite boxed mac and cheese before you toss it with the pasta.
Popcorn: Pop a 3.5-ounce package of natural microwave plain popcorn. Drizzle with 1 tablespoon olive oil and sprinkle with 1 teaspoon umami seasoning.

This is a "close copycat" recipe of Trader Joe's Umami Seasoning Blend. A few things are changed, but it lends a wonderful umami flavor to your recipes.

Ingredients

3 Tbsp porcini mushroom powder (See notes.)
2 Tbsp mushroom blend powder (Or white button mushroom powder. See notes.)
3 Tbsp onion powder
1 Tbsp yellow mustard powder
1 Tbsp jalapeño pepper powder (Sub crushed crushed red pepper, chipotle powder, etc)
2 tsp thyme (Dried spice.)
1 tsp black pepper (Or sub white pepper for a different flavor profile!)
1/2 tsp sea salt (Optional.)

Steps:

If applicable, grind dried mushrooms in a coffee grinder until it's a find powder.
Add all ingredients to a bowl, and mix thoroughly.
Store in an airtight container, such as an old spice bottle.

Roasted Eggplant. Andy picked eggplant because it's a great neutral vegetable that can really take on strong flavors. Split a Japanese eggplant in half—which cooks more quickly—score the flesh, and brush it with a mix of umami paste and vegetable oil.
Cucumber Salad. Slice three medium cucumbers, salt them, and put them aside while you make a dressing. All you need is 1 tsp. umami paste, ½ tsp. chile oil, ¼ tsp.
Crispy-Skinned Chicken. Alex Lau. This could apply to any cut of chicken, but he went with a single chicken breast that can cook in 15 minutes. (It'd also work for crispy chicken thighs, but those take a little longer to cook.)
Peanut Noodles. Combine ½ cup peanut butter, 1 tsp. sesame oil, 1 to 2 Tbsp. umami paste, and 1 Tbsp. unseasoned rice vinegar, and then thin with ¼ cup warm water.
Compound Butter. If you find you really love umami paste, you can put it on everything by making a simple compound butter. Mix together 1 stick of softened butter with 1 to 2 Tbsp.
