1 small onion, chopped
1 teaspoon poultry seasoning

Steps:

  • Moisten all the bread with as much water as is needed to make moist. Add the onion, seasoning, and salt and pepper. Mix with hands.

BASIC BREAD STUFFING

Basic Bread Stuffing image

This was my Mom's staple recipe every Thanksgiving for stuffing....Sometimes she would add some chopped giblets to it, but usually she made it exactly like this...It's VERY simple and basic, but very home-made and very comforting!!! She hand-wrote this recipe for me many years ago the first time I tried to cook a Thanksgiving meal at my house. :)

Provided by Stacky5

Categories     < 60 Mins

Time 1h

Yield 8-10 serving(s)

Number Of Ingredients 9

12 cups dry bread cubes
1 cup chopped onion
1 cup chopped celery
3 teaspoons salt
3/4 teaspoon pepper
3/4 teaspoon poultry seasoning
1/2 teaspoon sage
1 cup melted real butter (not margarine)
1/2-1 cup hot chicken broth or 1/2-1 cup turkey broth, to moisten

Steps:

  • Combine bread, onion, celery and all seasonings. Add melted butter. Toss gently to mix. Then add hot broth to moisten to desired consistency (but be careful NOT to make it soggy; a little dry is best since it will retain juices from cooking inside the turkey).
  • Stuff into the cavity of the turkey before roasting, if desired.
  • OR: Pour all into a large casserole and bake in a preheated 350 degree oven for 35-45 minutes, not letting the top get too crispy.
  • NOTE: Allow 1 cup stuffing for each pound of poultry.

OLD-FASHIONED BREAD STUFFING

Old-Fashioned Bread Stuffing image

You can't Thanksgiving without the turkey dressing. This delicious traditional stuffing recipe makes enough to stuff up to a 15-pound Thanksgiving turkey. The old-fashioned dressing can also be baked in a casserole dish.

  • The night before you make the stuffing, dice the bread and leave it out overnight. You can also try spreading the diced bread out on a large baking sheet and baking at 350F, stopping every 5 minutes to stir, until the bread is stiff but not croutons. Keep in mind the bread will crisp a bit as it cools as well. Ours usually takes around 10 minutes. If you dry the bread in the oven, make sure you let it cool before moving to the next step.
  • When you’re ready to make the stuffing, preheat your oven to 350F and spread some refined coconut or olive oil on the surface of a 15x9 casserole dish.
  • Heat the olive oil in a large sauté pan and add your minced carrot, celery, and onion over medium high heat. Add a pinch of salt and saute until onion is translucent (about 5-7 minutes). Add these veggies to a large mixing bowl with the diced bread.
  • Now, make your seasoned broth: Whisk all the ingredients in a large measuring cup or small mixing bowl with a fork. Slowly pour the seasoned broth into the bread and veggie mixture, tossing with your hands to make sure it is well incorporated throughout the mixture.

  • Tear bread into small pieces (about 1 inch x 1 inch) and place in a large bowl. *If bread is fresh, let sit on the counter for several hours, tossing several times to dry out a bit.
  • In a skillet, melt the butter over medium heat. Add onions, celery and all the spices and cook for 10 to 15 minutes until the vegetables are tender. *Taste test a piece of celery and make sure it is tender. Take the pan off the heat and let cool for a few minutes.
  • Pour the mixture over the cubed bread and stir to distribute with the bread. This is where you need to get your hands dirty! Dig in with your hands and “squeeze” the mixture together, so that the butter mixture gets right into the bread. You can also break up the bread chunks a bit.
  • Immediately add stuffing to turkey cavity or follow the directions below to bake immediately. *You can bake ahead, refrigerate then reheat later, but you should not make ahead and not bake, for food safety reasons.
