TRADITIONAL SCOTTISH RECIPES - BROKEN BISCUIT CAKE

Traditional Scottish Recipes - Broken Biscuit Cake image

Another recipe I found on rampantscotland.com which is resourceful, easy, rich and makes a huge amount. Hope you enjoy this. This is the description of this on their web site. In the old days, when biscuits were sold loose, grocers sold mixed, broken biscuits at a lower price. This recipe was a good way of using them up and as a cake which requires no cooking, it can be easily made by the kids as well as experienced cooks. (Cooking time is set up time)

  • Cranachan. Cranachan is a traditional Scottish pudding, similar to a trifle. It’s a layered dessert, consisting of whipped cream, toasted oats, and juicy raspberries.
  • Scottish Tablet. Scottish tablet is often compared to fudge, but it really deserves some love on its own merits. It’s sweeter than fudge, and more crumbly.
  • Scottish Shortbread. This is a great recipe for first-timers. If you’ve never made shortbread before, you’ll be amazed at how easy it is to whip up a tray.
  • Dundee Cake. Authentic Dundee Cake is a glorious thing. Rumoured to be the Queen’s favorite afternoon snack, this is a dense fruit cake flavored with nuts and spices.
  • Clootie Dumplings. The amusingly-named clootie dumplings take their unusual moniker from a strip of cloth known as cloot. This baked pudding was traditionally wrapped in a rag, or cloot, and then steamed.
  • Petticoat Tails. Petticoat tails are a traditional Scottish shortbread, cut into triangles or “tails.” They make a great holiday gift for the dessert lovers in your life or the perfect bite for Christmas parties.
  • Scottish Tea Cookies. These tasty tea cookies are the ideal answer to the dreaded mid-afternoon slump. The perfect pick-me-up, they are basically little drop cookies – soft dough surrounding a fruit centre (in this case, tangy apple butter).
  • Millionaire’s Shortbread. We have Mary Queen of Scots to thank for shortbread. The legendary queen made it popular in the 16th century, introducing an egalitarian treat enjoyed by the ruling classes and peasantry alike.
  • Scottish Scones. Nobody does scones like the Scottish. Airy, light, buttery and soft, they’re an institution all over the British Isles, but especially up north.
  • Scottish Macaroons. Yes, macaroons may be a classic French dessert, but that doesn’t mean you can’t give them a Scottish spin. While the French get fancy with meringue and almond paste, the Scots opted for the humble potato.

  • Traditional Scottish Shortbread. Let’s get the show on the road with the most traditional of them all. The classic Scottish shortbread has been around since the 12th century, so trust that the recipe for it is tried and true.
  • Lemon Scottish Shortbread Cookies. This version of the classic shortbread is infused with lemon, giving it a sweet and citrusy flavor profile. Want to save this recipe?
  • Oat and Walnut Biscuits. If your cheese is looking a little bit lonely, these oatcakes (which are actually crackers) are the perfect accompaniment. They may not be as pretty as other desserts, but these humble biscuits will absolutely knock your socks off.
  • Scottish Oat Cakes. Here’s another oat cake recipe, because when it comes to these biscuits, you don’t want to run out. These triangular treats have a different shape than the ones above, but they’re just as terrific.
  • Parlies. Parlies or Parliament cakes are a type of dark-hued shortbread biscuits. Legend has it that a shop in Potterow, Edinburgh, which was owned by a certain Mrs. Flockhart (Luckie Fyckie, to locals), created the biscuits in the 18th century and supplied them to the gentlemen of the Scottish Parliament.
  • Petticoat Tails. It doesn’t sound like a name for a cookie, but it is. And, these petticoat tails are truly tasty! Petticoat tails are large, round shortbread cookie that’s cut into cake-like sizes.
  • Melting Moments. I’m pretty sure the name of these cookies alone will get you intrigued. Melting moments – how can that not pique your interest? These cookies are a staple in Scotland’s afternoon teatime.
  • Millionaire’s Shortbread. Feast your eyes on these drool-worthy shortbread cookies! This Americanized version of the classic Scottish confection tastes like a million bucks.
  • Brown Sugar Scottish Shortbread. It’s just like the classic shortbread, but with a chewy, brown sugar twist. The use of brown sugar instead of white gives this shortbread a sweeter flavor and a wonderful chewy layer.
  • Abernathy Biscuits. Abernathy biscuits are small, round biscuits with a nutty and citrusy flavor from caraways seeds. They’re not too sweet and are a perfect afternoon teatime treat.

  • Scottish Mince Recipe with Tatties. Mince is the British name for ground meat, and it usually refers to beef. If you’ve ever been to England or Scotland, you may have seen simply “mince and potatoes” on pub menus.
  • Scottish Rumbledethumps. This fantastic, vegetarian-friendly side (though it could be a main, too) is super affordable and makes a nice change from the usual mashed potatoes.
  • Scottish Bubbles And Squeak Patties. Bubbles and squeak can be made and served as a side with roast chicken or pork, but it’s often made the day after a big dinner with leftovers.
  • Scottish Oatmeal Rolls. Oats are a huge part of Scottish cuisine, and these rolls are no exception. They’re light but have a distinct oaty texture, which I think you’ll fall in love with.
  • Haggis. We’ve all heard of haggis, but how many people know what it actually is? I have to admit, I’ve tried it, and I wasn’t 100% sure what I was eating at the time.
  • Traditional Old-Fashioned Scottish Flummery Recipe. Flummery can be traced back to royal feasts in the 15th century, so you know they must be doing something right here.
  • Traditional Scottish Shortbread. Shortbread was invented in Scotland, so if you want the best recipe, look for something with Scottish in the title, like this recipe!
  • Easy Traditional Scottish Crumpets. Scottish crumpets are a little different from English, which typically use yeast and require resting time. The batter is pretty thick, and they’re made with metal rings, so they stay perfectly round and rise like a dream.
  • Scottish Steak Pie. Spend a little time in the UK or Australia, and you’ll soon learn that their pie culture is pretty intense. And by pie, I mean meat pie.
  • Slow Cooked Scottish Beef Stew. I adore beef stew! It’s the most comforting food, and when it’s done right and the meat is super tender, I can’t stop at just one bowl.
