CLASSIC SPANISH SANGRIA
This is an authentic version of the popular wine drink. You can add any fruit that you want, but I find that apples and pears absorb all the rum. This one is not diluted with carbonated beverages. I have much success with red Burgundy wine and white rum, though spiced rum is nice too.

Steps:
- Have the fruit, rum, wine, and orange juice well chilled. Slice the lemon, lime and orange into thin rounds and place in a large glass pitcher. Pour in the rum and sugar. Chill in refrigerator for 2 hours to develop the flavors.
- When ready to serve, crush the fruit lightly with a wooden spoon and stir in the wine and orange juice. Adjust sweetness to taste.

TRADITIONAL SPANISH SANGRIA RECIPE
Steps:
- Optional: If you want to use sugar to make a sweeter sangria, dissolve two tablespoons of brown sugar in two tablespoons of water over low heat to create a syrup. Afterward, let it cool.
- Juice 1.5 oranges so that you have around 3/4 cup of fresh orange juice.
- Chop the remaining half orange and half an apple into small pieces.
- Stir together one bottle of dry red wine, the fresh orange juice, optional syrup, brandy or vermouth (optional), and the orange and apple pieces.
- Add ice cubes (and optional a carbonated beverage) just before serving.
- Enjoy your homemade sangria!

- In a large pot or bowl, combine the wine, brandy, orange juice, and sugar and stir until the sugar dissolves. Add the orange, lemon, and lime slices, the apples and refrigerate until well chilled, about 1 hour. Remove from the refrigerator and add the soda. Serve in glasses over ice.
EASY TRADITIONAL WHITE SANGRIA

Steps:
- Add lime, lemon, and sugar (or other sweeteners) to a large pitcher (or use multiple pitchers if making a larger batch) and muddle with a muddler or gently crush with a wooden spoon for 45 seconds.
- Add apple brandy and muddle again to combine for 30 seconds. Add apple, nectarine, and strawberries and stir to incorporate. Then add wine and stir once more.
- Taste and adjust flavor as needed, adding more sweetener of choice for sweetness, lemon or lime juice for acidity, or fruit. Stir to combine.
- Add ice or frozen berries and stir once more to chill. Serve as is or with a bit more ice and mint (optional). To dilute the mixture, top off glasses with a bit of sparkling water (optional).
- Store leftovers covered in the refrigerator for up to 48 hours, though best when enjoyed within the first 1-2 days.

CAVA SANGRIA RECIPE

- In a large bowl combine the sliced apple, orange and diced pineapple. Cover with two tablespoons of sugar and let sit for at least 10 minutes.
- Add the brandy, orange liqueur, pineapple juice, mint and spices. Using the back of a wooden spoon, muddle the mint and fruit just a bit.
- Chill this mixture (if possible) for at least an hour.
- Before serving, add the chilled cava and frozen grapes, and lightly stir to combine. Adjust for sweetness by adding sugar (superfine is best) or simple syrup. To serve, either ladle it into glasses filled with ice cubes, or into a serving pitcher filled halfway with ice.

AUTHENTIC SPANISH SANGRIA
I'm sick of getting american sangria that's just wine and grape juice. After two years in Madrid and literally hundreds of bars surveyed throughout the country (in the name of cuisine of course) this is the receta that i've come up with. Since they don't sell caserra in the US i've got a good substitute. mucha mierda Note: These measurements are VERY general. I always make it to taste and I'd advise you to do the same.

- Note: Because of the large volume I suggest making this in batches. This is one reason for the vagueness of the measurements.
- Mix the wine with 3/4 cup sugar. Set rest of sugar to the side.
- Add Liquors and stir.
- Slowly add 1/2 ltr lime seltzer and stir.
- Taste now and add any ingredients to taste. There SHOULD be a bit of a liquor bite to it, but it should NOT be overpowering. Likewise it should be sweet but not send you into a diabetic coma. It should also have a decent fizz to it, if it's too thick, add seltzer. Just experement.
- Once you've got the taste you want, add the slices of fruit. I've found that the sangria i get in America tends to be loaded down with fruit. Remember that it's more of a garnish and only adds a bit of flavor. If you need a ton of fruit to get the desired flavor, you haven't got the right mixture.
- Have fun experementing, and enjoy it. It's perfect for summer days and bbqs.
