Categories     Beef     Cheese     Dinner     Lunch     Brisket     Steak     Bon Appétit     Peanut Free     Tree Nut Free

Yield Makes 8

Number Of Ingredients 15

1 1/4 pounds well-chilled beef brisket, trimmed of excess fat and sinew
1 1/4 pounds well-chilled boneless short ribs, trimmed of excess fat and sinew
1 1/4 pounds well-chilled hanger steak, skirt steak, or carne asada meat, trimmed of excess fat and sinew
5 ounces well-chilled beef suet
3 ounces well-chilled beef bone marrow
2 tablespoons red miso mixed with 1/4 cup water until smooth
Olive oil (for brushing)
8 large slices sharp cheddar cheese
8 large sesame seed buns, halved
8 tomato slices
8 red onion slices
Fresh watercress sprigs
Red Vinegar Pickles
Spiced Ketchup
Ingredient Info: Suet and bone marrow are sold at some upscale supermarkets. To make sure your market carries both, be sure to call ahead. You may need to special-order the items. Red miso (sometimes labeled aka miso) can be found in the refrigerated Asian foods section of some supermarkets and at natural foods stores and Japanese markets.

Steps:

  • Back to the grind:
  • To make this burger, the meats, suet, and marrow must be ground. There are three different ways to do this.
  • 1 Have the butcher grind the meats. Ask your butcher to cut all trimmed meats into 3/4-inch pieces, chop the suet and marrow, and grind everything into 1/16-inch pieces.
  • 2 Use a meat grinder.
  • 3 Use a food processor. Cut all trimmed meats into 1/4-inch pieces. Chop the suet and marrow. Freeze until partially frozen. Working in batches and using on/off turns, grind into 1/16-inch pieces.
  • Combine all ground meats, beef suet, and bone marrow in large bowl and mix lightly with fork. Add miso mixture and stir lightly just to incorporate (do not overmix). Divide meat mixture into 8 equal portions. Form each portion into scant 4-inch-diameter patty. Sprinkle both sides of patties generously with salt and pepper.
  • Brush 2 large skillets with oil; heat over medium-high heat. Add 4 burgers to each skillet; cook 3 minutes. Turn burgers over. Cook 2 minutes; top with cheese and cook 30 seconds to 1 minute longer for medium-rare. Remove from heat.
  • Place 1 bun bottom on each of 8 plates. Top each with 1 burger, 1 tomato slice, 1 red onion slice, watercress, and Red Vinegar Pickles. Spread bun tops generously with Spiced Ketchup and place atop burgers.

JUICY GRILLED CHEESEBURGERS

Juicy Grilled Cheeseburgers image

These quarter-pounders are lightened up with 90-percent lean beef and a mere half-ounce of Cheddar, and they're served on wholesome whole wheat English muffins.

Provided by Food Network Kitchen

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 10

Canola oil or nonstick grilling cooking spray, for oiling the grates
1 medium red onion, thinly sliced
Kosher salt and freshly ground black pepper
2 tablespoons ketchup
2 tablespoons yellow mustard
4 whole wheat English muffins, split
1 medium ripe tomato, cored and cut into 4 thick slices
1 pound 90-percent lean ground beef
2 ounces 50-percent reduced-fat sharp Cheddar, grated (about 1/2 cup)
Pickles, for serving, optional

Steps:

  • Heat a grill to medium-high direct heat and lightly oil the grates using a paper towel soaked in canola oil or nonstick grilling cooking spray.
  • Spread a 16-inch-long piece of nonstick aluminum foil on a cutting board (or mist a piece of regular aluminum foil with nonstick cooking spray). Top with the onions, 1/4 teaspoon each salt and pepper and 1 tablespoon water. Bring two sides of the foil together, fold over twice to create a seal and then seal the remaining two ends. Put on the grill and cook for 12 minutes, flipping once. The onions should be tender with only a bit of charring. Carefully open the top of the foil to let all the steam out and continue to cook the onions, tossing, until browned and lightly charred, 3 minutes longer. Remove from the heat.
  • While the onions cook, mix the ketchup and mustard together in a small bowl. Season with pepper and set aside.
  • Lightly toast the English muffins on the grill and place one top and bottom on each of 4 plates. Spread some of the ketchup sauce on the bottom half of each muffin and top with a slice of tomato.
  • Divide the beef into 4 patties about 4 inches in diameter and just under 1/2-inch thick. Sprinkle with a total of 1/2 teaspoon salt and 1/4 teaspoon pepper. Place the burgers on the grill. Cook until the edges of the burgers are browning, 3 to 5 minutes, and then flip. Brush the burgers with the remaining ketchup sauce and evenly top with the shredded cheese. Cover the burgers with the grill lid or a large heatproof bowl and continue to cook until the cheese has melted and the burgers are still a bit pink on the inside, about 3 minutes more.
  • Put one burger on top of the assembled muffin bottom and top with some of the grilled onions and the top of the muffin. Serve with pickles if desired.

BARBECUE CHEESEBURGERS

Barbecue Cheeseburgers image

Provided by Food Network Kitchen

Categories     main-dish

Time 1h

Yield 6 servings

Number Of Ingredients 19

For the barbecue sauce:
2 tablespoons vegetable oil
1 red onion, chopped
2 cloves garlic, chopped
1 1/2 tablespoons chili powder
3/4 cup ketchup
1/4 cup apricot preserves
3 tablespoons yellow mustard
3 tablespoons apple cider vinegar
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
For the burgers:
2 1/2 pounds ground beef chuck
Kosher salt and freshly ground pepper
1 red onion, sliced into rings
1 tablespoon vegetable oil
6 slices monterey jack or pepper jack cheese
6 sesame seed hamburger buns, split
2 avocados, sliced

Steps:

  • Make the barbecue sauce: Heat the vegetable oil in a medium saucepan over medium heat. Add the onion and garlic and cook, stirring, until softened, about 4 minutes. Add the chili powder and cook, stirring, until toasted, about 1 minute. Stir in the ketchup, preserves, mustard, vinegar, soy sauce, Worcestershire sauce and 1/2 cup water. Bring to a simmer and cook until slightly thickened, about 10 minutes. Transfer to a blender and puree until smooth; let cool to room temperature.
  • Make the burgers: Combine the ground beef and 3 tablespoons of the prepared barbecue sauce in a bowl; mix with your hands until just combined. Form the meat into six 1/2-inch-thick patties; season both sides with salt and pepper.
  • Preheat a grill to medium. Toss the onion with 1 tablespoon of the barbecue sauce and the vegetable oil. Grill (use a grill basket if you have one), turning occasionally, until lightly charred, about 8 minutes.
  • Transfer 1/2 cup of the remaining barbecue sauce to a separate bowl for brushing. Increase the grill temperature to medium high and grill the patties, brushing with the barbecue sauce and flipping occasionally, about 8 minutes for medium rare; top with the cheese during the last minute and cover to melt. Toast the buns on the grill. Serve the burgers on the buns; top with the grilled onions, avocado slices and more barbecue sauce.

TRIPLE D CHEESEBURGER SOUP

Triple D Cheeseburger Soup image

This recipe was based on the Diners, Drive-Ins and Dives show. However, I'm not entirely happy with it. I think it would be easier to just make cheeseburgers. Season with salt and pepper as you like; however, Velveeta is incredibly salty and I would never salt any of this until after having a chance to taste it after the addition of the cheese. I put the half and half in when specified (with the Velveeta); however, the soup curdled. Not surprising considering most recipes call for things like that to be put in at the end, so I'm changing the recipe accordingly. Perhaps using full-fat half and half would solve the curdling problem also.

Provided by Debbie R.

Categories     Meat

Time 1h50m

Yield 6 serving(s)

Number Of Ingredients 10

1 large onion, diced
3 tablespoons butter
1 lb lean ground beef (use very lean beef)
1/4 cup flour
1/2 cup water
16 ounces unsalted chicken stock
16 ounces Velveeta reduced fat cheese product
2 cups fat-free half-and-half
2 medium tomatoes, chopped
2 cups iceberg lettuce, chopped

Steps:

  • Melt butter and cook onion until translucent. Remove onion.
  • Put ground beef in pan. Season with pepper (and perhaps salt, but keep in mind that Velveeta is really salty). Cook until browned and somewhat crispy. Drain. Remove from pan.
  • Mix flour and water to make a slurry. Add chicken stock first and then slurry to the pan. Bring to boil, scraping bits off the bottom. Add Velvetta and cook until cheese is melted. Do not bring to a boil.
  • Add in onion and hamburger. Season to taste and lower heat to stove's lowest setting. Cover and cook for about 55 minutes. Add half and half, and heat only until serving temperature. Add tomatoes and lettuce at the end. Stir and serve.
