3 large apples - peeled, cored and chopped
½ cup chopped celery
½ cup dates, pitted and chopped
3 tablespoons orange juice
½ cup sour cream
1 tablespoon mayonnaise
2 tablespoons frozen whipped topping, thawed
½ cup chopped toasted hazelnuts

Steps:

  • In a medium-sized bowl, combine apples, celery, dates, and orange juice. Stir well to coat evenly.
  • In a separate bowl, whisk together sour cream, mayonnaise and whipped topping. Pour over apple mixture and blend until thoroughly mixed.
  • Chill for several hours. Add nuts just before serving.

1 envelope unflavored gelatin
1 cup unsweetened apple juice
1 tablespoon sugar
1 cup unsweetened applesauce
1/4 teaspoon almond extract
1 cup diced apple
1 teaspoon lemon juice
vegetable oil cooking spray
apple, wedges (optional)
fresh mint sprig (optional)

Steps:

  • Sprinkle gelatin over apple juice in a small saucepan, let stand 1 minute.
  • Add sugar; cook over low heat, stirring constantly, until gelatin and sugar dissolve.
  • Remove from heat; stir in applesauce and almond extract.
  • Chill until the consistency of an unbeaten egg white.
  • Combine diced apple and lemon juice, tossing well.
  • Fold apple into gelatin mixture.
  • Spoon into a 3 cup mold coated with cooking spray.
  • Cover and chill until firm.
  • Unmold salad onto a serving plate.
  • If desired, garnish with apple wedges and fresh mint sprigs.

2 tbsp white wine vinegar
1 tsp clear honey
1 tsp Dijon mustard
2 x 250g packs halloumi cheese , sliced
1 tbsp mayonnaise
150g pack radishes , coarsely grated
150g pack sugar snap peas , sliced lengthwise
½ cucumber , cut into thin batons

Steps:

  • Make a dressing by mixing together the vinegar, honey and mustard with a little pepper - you don't need to add any salt as the cheese is quite salty. Toss the halloumi slices in half the dressing, then place on a baking sheet. Griddle or barbecue for 5 mins, turning until browned and crisp on the edges.
  • Stir the mayonnaise into the rest of the dressing, then toss through the radishes, peas and cucumber. Serve with the warm halloumi.

For the salad:
4 red apples, sliced into thin matchsticks, (like Fuji or Gala)
0 Juice of half a lemon
1/3 cup sliced almonds
1 medium cucumber, chopped
1/2 ounce fresh mint, finely chopped
6 ounces pea shoots, or fresh chopped spinach
2 ounces alfalfa sprouts
For the lemon dressing:
1 cup Best Foods® Carefully Crafted Dressing and Sandwich Spread
1 tablespoon lemon juice, plus zest
3 tablespoons extra-virgin olive oil
¼ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • In a small bowl, combine the lemon dressing ingredients and set aside.
  • In a large bowl, combine apples and lemon-this will prevent the apples from turning brown. Add the chopped mint, sliced almonds, cucumber, and half the lemon dressing. Combine.
  • Arrange the pea shoots in the bottom of 6 small serving bowls. Divide the apple mixture among the 6 bowls and place over the pea shoots. Top with alfalfa sprouts and extra dressing if desired.
