RORO'S PINEAPPLE COOKIES
My memories of Christmas always include my mom's pineapple cookies. The kids called her Roro, and we still make them every year to keep her memory alive. You can substitute your favorite flavor of preserves for the pineapple. -Donna Scarano, East Hanover, New Jersey

Steps:
- Preheat oven to 375°. Combine flour, sugar, baking powder and salt; cut in butter until well blended. In a small bowl, whisk egg with water. Gradually add to flour mixture; stir to form a soft dough., Turn onto a lightly floured surface; divide into 2 portions. Roll each half into a 12x6-in. rectangle. Spread 1/4 cup preserves down the center of each rectangle. Starting at a long side, fold dough over filling; fold other side over top. Pinch to seal seams and edges. Place seam side down on parchment-lined baking sheets., Bake until lightly browned, 20-25 minutes. Cut each rectangle diagonally into 1-in. strips. Remove to wire racks to cool completely. Dust with confectioners' sugar.

PINEAPPLE COOKIES
These pineapple cookies with icing have a wonderful tropical flavor.

Steps:
- Preheat oven to 325 degrees.
- Drain pineapple reserving 3 tablespoons of juice for the frosting.
- In a mixing bowl, cream together butter and brown sugar until light and fluffy.
- Beat in egg, pineapple, and vanilla.
- In another bowl combine flour, baking powder, baking soda, and salt and stir or whisk until thoroughly mixed.
- Gradually add dry ingredients to the creamed butter and sugar.
- Grease a cookie sheet with non-stick spray.
- Use a cookie scoop to drop cookie dough onto the baking sheet about 2 inches apart. These cookies will spread.
- Bake at 325 degrees for 17 to 20 minutes or until golden.
- Transfer cookies to wire racks to cool.
- Place powdered sugar, lemon zest, and 2 tablespoons pineapple juice in a small bowl. Stir to combine. Add more pineapple juice, about ½ teaspoon at a time, if needed to achieve spreading consistency.
- Spread the frosting on the cooled cookies.

These are fun to make for something different--a great change from oatmeal and chocolate chip. They would be great for tea! - Mix shortening, sugar and egg. Stir in pineapple. Sift together and stir in: flour, soda, salt and nutmeg. Stir in nuts. Chill at least 1 hour.
- Drop rounded teaspoonfuls about 2 inches apart on lightly greased baking sheet. Bake at 400 degrees for 8-10 minutes or until, when touched lightly with finger, no imprint remains.

I saw this recipe on the web and thought it looked so good I had to try it immediately - so I did! The results were wonderful. Even my fiance (who swears he doesn't like pineapple) thought they were great. I found a couple of similar recipes on zaar, but not one exactly like this.

- Preheat the oven to 325 degrees F (165 degrees C). Grease 2 cookie sheets.
- In a large bowl, using a hand-held electric beater, cream together the shortening and sugar until light and fluffy. Add the egg, beat well, and then stir in the vanilla and pineapple. Combine the flour, baking powder, baking soda and salt in a medium bowl, then gradually stir into the creamed mixture. Drop rounded spoonfuls, 2 inches apart, onto the prepared cookie sheets. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
PINEAPPLE DROP COOKIES WITH PINEAPPLE BUTTERCREAM FROSTING RECIPE
Moist Pineapple Drop Cookies that are so easy to make and bursting with pineapple flavor.

- Cream together brown sugar, sugar, butter shortening, eggs and vanilla.
- Then add in the flour, baking powder, baking soda, salt, and drained crushed pineapple. Stir together until blended.
- Drop dough onto ungreased cookie sheet, or line your cookie sheet with a silpat baking sheet. If your dough is thick enough you could also roll it into 1 1/2 inch balls. Bake at 400 degrees for about 10 minutes.
- Cool completely.
- Mix softened butter with powdered sugar.
- Add in about 2 Tablespoons pineapple juice that you reserved from the crushed pineapple and vanilla. If you need to thicken up the frosting add more powdered sugar. If it's too thick add a little more pineapple juice.
- Spread frosting on cooled cookies. Top with drained crushed pineapple.

SOFT AND CHEWY PINEAPPLE COOKIES
Even if you don't care for pineapple, this soft and chewy cookie is fantastic! Mom's recipe (and her favorite, as well). Have to laugh, every time I make them, she CANNOT walk past them without taking one. You can add chopped nuts, too if you are a nut fan :)
