TRIPLE-LAYER COOKIE BARS
My family just loves these chewy chocolate and peanutty bars. They're perfect for dessert and snacks. I make them whenever I get a craving for something sweet and special. -Diane Bradley, Sparta, Michigan

Steps:
- In a large bowl, combine the first six ingredients. Cut in butter until crumbly. Beat in eggs. Spread in a greased 13-in. x 9-in. baking pan. , Bake at 350° for 8 minutes. Sprinkle coconut over crust; drizzle with milk. Bake 20-25 minutes longer or until lightly browned. , Meanwhile in a microwave, melt chocolate chips and peanut butter; stir until smooth. Spread over brownies. Cool on wire rack. Cut into bars.

NO-BAKE CHOCOLATE MINT BARS
Make an extra batch of these impossibly good layered bars--they won't last long. Chocoholics take note: you get the double-whammy of melted chocolate chips and chocolate cookies in these treats.

- Lightly grease 9-inch square pan with shortening or cooking spray. In 2-quart saucepan, melt 1/2 cup butter and 1/4 cup of the chocolate chips over low heat, stirring constantly. Remove from heat. Stir in cookie crumbs until well mixed; press evenly in pan. Refrigerate until firm, about 10 minutes.
- Meanwhile, in small bowl, beat 1/4 cup butter, the milk, peppermint extract, vanilla and food color with electric mixer on medium speed until well mixed. On low speed, gradually beat in powdered sugar until smooth.
- Spread peppermint mixture evenly over crumb mixture. In 1-quart saucepan, melt remaining chocolate chips and 1/3 cup butter over low heat, stirring constantly; spread evenly over peppermint mixture. Refrigerate until chocolate is set, 10 to 15 minutes. For bars, cut into 5 rows by 5 rows.

TRIPLE LAYER CHOCOLATE PEPPERMINT BARS
This recipe was printed in a recent issue of the Cooking Club of America magazine. Note- Pulse 24 chocolate wafer cookies in food processor or place in plastic bag and crush with a rolling pin to make cookie crumbs. Also noted, crush peppermint candies with flat side of meat mallet; shake crushed candy in fine strainer to remove fine candy powder. Prep time is a guesstimate. Posting for safe keeping.

- Heat oven to 350 degrees. Line 8" square baking pan with foil; spray foil with cooking spray.
- To make crust - Heat chocolate mint chips and butter in medium saucepan over medium low heat until melted, stirring constantly. Remove from heat; stir in cookie crumbs. Press into bottom of pan.
- Bake 6-8 minutes or until fragrant. Cool competely on wire rack.
- To make filling - Heat 1/2 c chocolate mint chips and 1 T butter in small saucepan over medium low heat until melted, stirring constantly. Remove from heat; cool to room termperature.
- Beat remaining 1/4 c butter and cream cheese in large bowl at medium speed until smooth. Beat in 2 T cream and peppermint extract and vanilla. Reduce speed to low; beat in cooled chocolate mixture. Slowly beat in powdered sugar. Stir in remaining 1/4 c chocolate mint chips. Spread over crust; smooth top. Refrigerate 15 minutes or until set.
- To make topping - Meanwhile, place chopped chocolate in medium bowl. Bring cream to a boil in small saucepan over medium heat; pour over chocolate. Let stand 1 minute; stir until smooth. Cool at room temperature 3-5 minutes or until slightly thickened but still pourable. Spread over filling; sprinkle with peppermint candies. Refrigerate 1 hour our until set. Store in refrigerator.

3-LAYER BARS
My mom got this recipe 30 years ago from a friend of hers who was from Australia. I don't know if this is an Australian dessert, I have heard that it is similar to a Canadian dessert called Nanaimo bars, though. This is a Christmas tradition in my family, but is wonderful anytime!

- First Layer - Mix all ingredients together to form a crumbly mixture.
- Press into the bottom of a 9 x 13" pan, pressing firmly.
- Place pan in the freezer to set while preparing the next layer.
- Second Layer - Mix the first three ingredients together, using enough milk to make a stiff, frosting-like consistency.
- If desired, add a drop of yellow food coloring.
- Do not add too much milk, you want the mixture to be pretty stiff, but still spreadable.
- Remove the pan from the freezer and scrape the second layer onto the first, spreading as evenly as possible, and then using your hands to press down to smooth.
- Return pan to freezer.
- Third Layer - Melt the chocolate chips together with the butter. You can use a double boiler, but I have had good luck using a small saucepan and very low heat, with stirring.
- Remove the pan from the freezer.
- Pour the melted chocolate mixture over the second layer.
- Working quickly (before the chocolate sets), spread the chocolate layer evenly.
- Return the pan to the freezer for no more than a few minutes. You want the chocolate to begin to set before you cut the bars - but if you wait too long, the chocolate will be too hard and you won't be able to cut through it without it breaking. The point at which the chocolate loses its shine and takes on a dull appearance is the right time to remove the pan from the freezer and cut into small squares.
- After cutting, return to the freezer to harden completely, then remove from the pan.
- Store in the refrigerator.
