BOBA (COCONUT MILK BLACK TEA WITH TAPIOCA PEARLS)



Boba (Coconut Milk Black Tea with Tapioca Pearls) image

Boba tea, or bubble tea, is a popular drink that originated from Taiwan. I made this coconut variation because I had coconut cream on hand and wanted something different from the regular black milk tea variation. This coconut version tastes just like the one you'll find in a bubble tea cafe.

7 cups cold water
½ (8.8 ounce) package tapioca starch balls
½ cup brown sugar
½ cup white sugar
4 cups brewed black tea (such as Lipton®), chilled
1 (14 ounce) can coconut cream
12 ice cubes
1 cup milk
⅔ cup white sugar

Steps:

  • Bring water to a boil in a large stockpot. Pour in tapioca and simmer for 25 minutes. Stir occasionally to prevent sticking. Remove from heat and let balls sit in water for 25 minutes.
  • Return stockpot to the heat; simmer and stir for 25 minutes more. Remove from heat and let rest again until centers of the balls are no longer powder, another 25 minutes. Drain.
  • Combine brown sugar and white sugar in a large bowl. Pour tapioca balls into the sugar mixture. Cover with a damp cloth and let rest for 15 minutes while preparing the tea.
  • Process tea, coconut cream, ice, milk, and sugar together in a blender until combined.
  • Scoop 1/4 cup of the tapioca into each tall glass and fill with tea. Enjoy with large straws to suck up the tapioca, or use spoons.

2-1/4 cups sweetened shredded coconut, divided
2 tablespoons butter, melted
1 can (20 ounces) crushed pineapple, undrained
32 large marshmallows
2 teaspoons rum or vanilla extract
1/4 teaspoon salt
1 cup heavy whipping cream, whipped

Steps:

  • In a bowl, combine 2 cups coconut and butter. Press onto the bottom and up the sides of a greased 9-in. pie plate. Bake at 325° for 8-10 minutes or until golden brown. Cool on a wire rack. Toast the remaining coconut; set aside., Drain pineapple, reserving 1/2 cup juice (discard remaining juice or refrigerate for another use); set pineapple aside. In a saucepan, combine marshmallows and reserved juice. Cook and stir over medium heat until marshmallows are melted. Remove from the heat. Add pineapple, extract and salt; mix well. Refrigerate for 2 hours or until cool., Fold in the whipped cream; spoon into prepared crust. Sprinkle with toasted coconut. Refrigerate for 2 hours or until set. Refrigerate leftovers.

It's simple but some of the ingredients may be a little tough to find. Just be patient and look for them in Chinese grocery stores. It is worth the trouble!

1 teaspoon white sugar
⅓ cup pearl tapioca
1 cup brewed black tea
2 tablespoons milk
4 teaspoons white sugar
1 cup ice cubes

Steps:

  • In a small saucepan, bring 2 cups water to a boil. Stir in 1 teaspoon sugar until it dissolves. Toss in the pearl tapioca. Cook for about 20 minutes. Rinse, drain, and refrigerate until chilled.
  • Pour tea, milk, and 4 teaspoons sugar into a cocktail shaker. Stir until the sugar has dissolved and the milk is well mixed in. Add the ice cubes, and shake so the whole drink can get cold. Pour into a glass, and add tapioca.

This is my recipe for a homemade bubble tea flavor. It tastes delicious and my friends all loved it. Note: This uses Minute Tapioca Pearls from an Asian Grocery. They are grey in color and have a colourful package with asian writing on it.

1/2 cup water
1/2 cup coconut milk
1/4 cup milk
1/2 cup tea, base
1/2 teaspoon rum extract
1 tablespoon sugar syrup
2 -4 tablespoons cooked tapioca
ice

Steps:

  • Place all ingredients, except ice and tapioca pearls, in cocktail shaker or thermos or other tightly sealed container and shake for about 10 seconds.
  • Place tapioca pearls at bottom of a tall glass and pour liquid mixture over it.
  • Add ice and serve with Bubble tea straw.

Drink it because it's GOOD! *Large, specialty tapioca pearls specifically designed for bubble teas are available in Asian markets and gourmet food stores. If using straws, make sure they have a large diameter.

2 cups prepared brewed green tea
1/3 cup sugar
4 cups water
1/2 cup pearl tapioca (Raw, black or pastel-colored)
4 cups cantaloupes or 4 cups watermelon, chunks
4 cups ice cubes
2 cups orange juice
1/2 cup coconut milk

Steps:

  • Combine green tea with sugar and set aside.
  • In a medium saucepan, bring water to boil over high heat; add tapioca pearls. Stir lightly and let pearls float to top. Reduce heat to low and simmer, uncovered, 25 minutes. Remove from heat and let pearls sit in water 25 minutes until chewy and translucent.
  • Drain and rinse under cold water. Combine in medium bowl with sweetened tea. Refrigerate until needed.
  • Blending in 2 batches, combine melon, ice cubes, orange juice and coconut milk in blender or food processor. Process until smooth.
  • Place about 1/4 cup tapioca mixture in bottom of large glass. Fill with melon mixture. Serve with straws if desired.

1 cup light brown sugar
1 cup white sugar
2 cups tapioca pearls (1/4-inch wide)
1/2 cup chilled tapioca pearls
1 cup crushed ice
1 cup canned litchi nuts in syrup
3/4 cup coconut milk
1/4 cup milk
1 to 2 teaspoons fresh lime juice

Steps:

  • In a saucepan, combine the sugars with 2 cups of water. Bring to a boil; then turn off the heat. In a pot, bring 4 quarts of water to a boil. Add the tapioca and cook until tender, about 8 minutes if parboiled. Drain. Mix the pearls with the sugar mixture and chill.
  • To make a drink, spoon the pearls into a large glass. In a blender, purée the ice, litchis, coconut milk, milk and lime juice. When smooth and frothy, pour over the pearls and stick in a straw.
