TROPICAL TUNA HASH
A paleo-friendly entree that is quick and easy! It's a perfect summer recipe. The paleolithic diet is low-carb, dairy-free, and soy-free. I serve this with pineapple rings and other fruit. I also like to put a little unsweetened shredded coconut over the hash. This would also be good topped with a fruit chutney or a fruit puree. Goes great with green beans or broccoli.

Steps:
- Mix together almond flour, coconut flour, tuna, orange juice, almond milk, baking powder, pineapple, and egg in a bowl until incorporated into a batter.
- Heat olive oil in a large skillet over medium heat. Scoop batter into skillet and allow it to cook, without mixing, about 3 minutes. Flip batter with a spatula every 3 minutes for about 15 minutes, or until there is an even mixture of light tuna color and golden, crispy batter on each side.

Steps:
- Grill pineapple slices, uncovered, over medium heat for 5-7 minutes on each side. Chill for 30 minutes.
- Dice the pineapple; place in a bowl.
- Stir in the onion, jalapenos, cilantro and lime juice.
- Refrigerate for 1 hour or until chilled.
- Brush tuna steaks with oil; sprinkle with salt and pepper.
- Grill, covered, over medium heat for 5 minutes.
TROPICAL TUNA SALAD SUPPER
Recipe from Rachael Ray magazine (from this summer). WOW was this a fun and tasty dinner. . .so different from the usual meat and potatoes! Do NOT skip the oranges or mango (actually I had to skip the mango due to an allergy) because the sweet really pulls this dish together. I actually added a few fresh squeezes of orange juice to the dressing and would do that again. I also just seared my small tuna steaks whole and then sliced them to assure they stayed rare. YUMMO! This is so pretty on the plate!

- In a salad bowl, whisk together the marmalade, tamari sauce, honey, lime peel, lime juice and hot sauce.
- Whisk in the oil. Stir in the garlic, ginger and sesame oil.
- Add the mango, bell pepper, chiles, cucumber, onion, edamame and orange (and avocado if using it).
- In a large skillet, heat a drizzle of oil over medium-high heat. Season the tuna with salt )I used seasoning salt) and pepper. Add to the pan and cook, turning, until just browned, about 3 minutes.
- Sprinkle the chives on top. Add the tuna to the salad and toss gently.
- Top with the sesame seeds and serve with the plantain chips.

- Thaw tuna or salmon and potatoes if frozen. Set fish aside. In a very large skillet heat the 2 tablespoons olive oil over medium heat. Add potatoes, onion, dill, cumin, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Spread evenly in skillet. Cook over medium-high heat for 20 to 25 minutes or until potatoes are golden brown and slightly crisp, stirring occasionally. Transfer to a medium bowl; cover and keep warm.
- In the same skillet, heat 1 tablespoon olive oil over medium heat. Lightly sprinkle tuna with salt and pepper. Add tuna to skillet; cook for 4 minutes. Carefully turn tuna. Reduce heat to medium-low; cook for 2 to 4 minutes more or until fish flakes easily when tested with a fork (tuna should be slightly pink in the center). Remove tuna from skillet; keep warm. Add greens to skillet. Cook over medium-low heat, tossing frequently, for 5 to 7 minutes or until tender and beginning to wilt if using Swiss chard or kale; or 1 to 2 minutes or beginning to wilt if using spinach (add more oil to skillet during cooking if necessary).
- Divide wilted greens among 4 serving plates. Top with potato mixture, tuna steaks, and, if desired, Caramelized Red Onion. Garnish with dill sprigs if desired. Pass salad dressing. Makes 4 servings.
