Steps:
- Cook and stir onions and pepper in butter until tender.
- Removed from heat and add gread crumbs, parsley, lemon juice and basil.
- Rub cavities of trout with salt then stuff each with approx 1/4 cup of stuffing.
- Place fish in baking dish
- Cook uncovered in 350 degree oven until fish flakes easily. approximately 30 - 35 minutes.
- Garnish with cherry tomatoes and parsley if desired.

STUFFED TROUT WITH PORTER SAUCE

- Dry trout. Open it flat on a sheet of foil. Brush flesh with half the soy sauce and sprinkle on the five-spice powder. Heat oven to 500 degrees.
- Heat 1 tablespoon of the grapeseed oil in a medium skillet on low. Add onion, ginger and garlic, and saute until soft. Stir in bread crumbs, increase heat to medium and cook, stirring until crumbs are golden brown. Fold in chives.
- Spread bread crumbs on fish. Arrange anchovies atop bread crumbs on one side of the fish. Using the foil to lift the fish, close it up around the bread crumb stuffing. Skewer the cavity shut. Brush fish on both sides with remaining oil. Transfer to an ovenproof baking dish that can also go on top of the stove
- Roast fish for 15 minutes. Remove baking dish from the oven and transfer fish to a serving platter. Add lime juice, porter, sesame oil and remaining soy sauce to baking dish. Cook on medium-high until sauce has reduced by about half and starts to become syrupy. Pour over fish and serve.

STUFFED BAKED TROUT

- Pour the stock over the couscous in a bowl, cover with cling film and leave until the couscous has soaked up the liquid. Stir the toasted pine nuts into the couscous along with parsley, lemon zest and juice. Add salt and pepper to taste.
- Heat oven to 200C/180C fan/gas 6. Lightly oil 2 sheets of foil. Season the trout, then make 2 'sandwiches' of 2 fillets with the couscous in the middle. Repeat with the rest of the trout and the couscous. Wrap the 'sandwiches' individually in foil, then bake for 15-20 mins. Serve with potatoes and salad.

TROUT STUFFED WITH DATES
This is a North African version of trout in foil packets. The spices, combined with the dates and rice, are a wonderful combo and the aroma is divine! This is also good if you use banana leaves to wrap the trout. The leaves give it a slightly different flavor, but it works. Try a side of Saffron Rice (my recipe #502997) but use almonds in place of the pistachios.

- Preheat oven to 350F.
- Rinse the trout under cold running water and pat dry with paper towels. Season the cavities lightly with salt and pepper.
- Combine the dates, rice, HALF the onion, the coriander, ginger, cinnamon, almonds and HALF the butter in a bowl. Season well with salt and pepper.
- Spoon the stuffing in the fish cavities and place each fish on a well-greased, double sheet of foil. Brush the fish with the remaining butter, season with salt and pepper and divide the remaining onion among the four parcels.
- Wrap the fish neatly and seal the edges of the foil.
- Place the parcels on a large baking trap and bake for 15-20 minutes, or until cooked to your liking. Serve with a light dusting of cinnamon.

- Preheat oven to 375 degrees.
- Fry the bacon slices until crisp and rendered of fat.
- Drain on paper towels.
- Crumble the bacon.
- Pour off all but 1 tablespoon bacon fat from the pan into a small bowl and reserve.
- Brush a little reserved fat over the bottom of a baking dish that will fit the fish comfortably.
- Set aside.
- Heat the fat still in the frying pan and cook the scallions and celery, stirring occasionally, until softened, about 5-7 minutes.
- Mix together the vegetables, lemon rind, parsley, crumbs, salt and pepper.
- Fold in the crabmeat and bacon.
- Bind with the egg.
- Open each fish like a book, skin side down.
- Spread the stuffing over one half.
- Pack it down firmly, then fold over the other half and press down gently.
- Close the opening with toothpicks if desired.
- Set the fish in the prepared baking dish or roasting pan.
- Brush the tope of the fish with a little reserved bacon fat.
- Bake until the fish is cooked, 25-30 minutes.
- Carefully transfer the fish to warmed serving plates and serve immediately.

Posted this recipe on recipezaar.com before it became food.com almost 10 years ago when I was a freshman in high school. It is a modified version of my uncles trout recipe and still a staple when I get trout. Please note that the cooking time is for moderately small trout under 3 pounds or so. If you have larger trout from the great lakes you can still use this recipe but be sure to check doneness by ensuring it's flaky throughout.

- Wash trout and pat clean with a paper towel.
- Cube Apple.
- Chop Onion.
- Chop Chives. Cube Lemon.
- Mix apple, onion, chives, lemon, salt pepper, and oil in a medium bowl.
- Stuff inside the cavity of the fish. Wrap the fish in aluminum foil twice over.
- Bake in 375 deg F (190 deg C) oven for 45 minutes.
- You could do this over an open fire but I wouldn't know the cooking times.

- To prepare the trout: Preheat the oven to 400°F Coat a large baking sheet with oil.
- With a tweezer or pin-nosed pliers, remove any tiny bones from the fillets, skin side down, on the baking sheet.
- In a large sauté pan, heat the oil over medium heat.
- Pour half into a cup; set aside.
- Add the scallions and carrot to the pan.
- Cook for about 3 minutes, or until soft.
- Add the bread cubes, broth, egg, 1/4 teaspoon salt, and the pepper.
- Toss to moisten.
- Spoon oval mounds of the stuffing on the fillets.
- Press lightly to pack.
- Drizzle with the reserved oil.
- Bake for 18 to 20 minutes, or until the stuffing is golden.
- With a panckae turner, transfer the stuffed fillets to plates.
- Note: This dish may be put together several hours in advance.
- Allow the stuffing to cool to room temperature before mounding the fillets.
- Cover with plastic wrap and refrigerate.
- The baking time may increase by 5 minutes.

- Toast pistachios in a dry small skillet over medium heat, tossing occasionally, until golden brown, 5-8 minutes. Let cool slightly, then finely chop.
- Mix goat cheese, salami, and lemon zest in a medium bowl.
- Slice dates in half lengthwise, taking care not to cut all the way through, and open like a book. Stuff each date with a small scoop of goat cheese mixture.
