Anchovy Pâté image

Greek chef and restaurateur Theodore Kyriakou (widely considered to be the finest Greek chef in Britain) says of this recipe: "This dish is best made with the strongly flavoured salted anchovy fillets (be sure to rinse them well), but the anchovies from tins or jars will do as well. You can either use a food processor or pound everything with a pestle and mortar. This paste will keep for several weeks in the fridge and is served on biscuits or bread." This recipe is from his book 'real greek food', which he co-authored with food writer Charles Campion. It's obviously a recipe for those who love anchovies! I'm posting it here for the 2005 Zaar World Tour.

200 g anchovies
50 capers
150 g pickled vegetables
2 teaspoons fresh flat-leaf parsley, finely chopped
200 ml extra virgin olive oil
1 tablespoon white wine vinegar

Steps:

  • Making the pâté with a pestle and mortar: Work the anchovies, capers, vegetables and herbs together in a paste; add the oil and, finally, the vinegar. You should end up with a thick paste.
  • Making the pâté in a food processor: Start by adding the anchovies to the bowl, process; them stream in the oil; add the other ingredients and process to finish up with a thick paste.

2 cloves garlic, minced
500 g ripe plum tomatoes or 1 (400 g) can chopped tomatoes
4 tablespoons olive oil
1 (200 g) can tuna, in olive oil
8 oil-preserved anchovy fillets
1 tablespoon salt-cured capers, rinsed
8 green olives
8 black olives
salt & freshly ground black pepper
2 tablespoons parsley, finely-chopped
dried chili pepper flakes
500 g spaghetti

Steps:

  • If using fresh tomatoes, start by covering them with boiling water, leaving for 30 seconds, then draining and peeling.
  • Remove the core, quarter the tomatoes, scrape away the seeds and coarsely chop.
  • If using canned tomatoes, strain them.
  • Heat the oil in a saucepan and cook the garlic gently, stirring until golden.
  • Add the tomatoes, stir well, and leave to simmer for 10 minutes.
  • Meanwhile, drain the tuna and flake into pieces.
  • Drain the anchovies as well and chop.
  • Slice the flesh off the olives and also chop.
  • Add the tuna, anchovies, capers and olives to the pan, and season well with pepper.
  • Check to see if you need salt.
  • The anchovies are very salty so you may not.
  • Stir and allow all ingredients to heat through, then stir in the parsley and dried chilli flakes, to taste.
  • Meanwhile, cook the spaghetti according to the packet directions.
  • Drain, turn into a serving dish, pour over the sauce and mix thoroughly.

Tuna Steaks, With Anchovy Tomato Sauce image

2 tuna fish steaks (about 1 1/2 pounds total weight)
Juice of 1 lemon
3 tablespoons olive oil
1 medium onion, sliced
2 garlic cloves, minced
2 anchovies
1 cup chicken stock
1 cup canned plum tomatoes
1 teaspoon tomato paste
1 cup dry red wine
Coarse salt and freshly ground pepper to taste
2 tablespoons chopped fresh parsley leaves
2 tablespoons capers

Steps:

  • Wipe the tuna steaks dry with paper towels. Squeeze the lemon juice over the steaks and sprinkle them with half the olive oil. Leave to marinate while you prepare the sauce.
  • Heat the remaining oil in a large heavy frying pan. Saute the onion and garlic until soft. Mash the anchovies into a paste and add. Cook for two minutes.
  • Add the chicken stock, tomatoes, tomato paste and red wine. Season with salt and pepper and simmer gently, uncovered, for 30 to 40 minutes. The sauce should be thick but if it gets too dry, add a little more wine or water.
  • Place the tuna steaks in the pan with the sauce. Cover and cook for five minutes. Turn over, cover, and cook another five minutes, or until done. Do not overcook. Garnish with parsley and capers and serve.
