- In a 2 quart saucepan over medium heat, combine the cream of mushroom soup, mixed vegetables, canned tuna, and 1 cup of the cheddar cheese. Gently fold pasta into the soup mixture and mix thoroughly. Pour pasta and soup mixture into a 11x7 inch baking dish. Sprinkle remaining cup of cheese on top.

- Preheat the oven to 400°F (200°C). Lightly grease a 9 x 13-inch (22 x 33cm) baking dish with nonstick spray.
- Melt the butter in a large saucepan over medium heat. Add the onion and sauté until softened and very fragrant, about 5 minutes. Stir in the garlic, flour, Italian seasoning, and salt and cook for another minute, until thickened.
- Slowly pour in the chicken broth and milk and stir to combine. Bring to a simmer, stirring constantly. Once the mixture has thickened, 10-12 minutes, stir in the peas, carrots, and tuna.

- Preheat oven to 425 degrees F (220 degrees C). Grease a 1 1/2 or 2 quart casserole dish.
- In a small bowl, combine baking mix with 2/3 cup milk and knead until the dough pulls together. Turn the dough onto a floured surface and form into a rectangle 1/4 to 1/2 inches thick. Arrange 1/2 of the pimento cheese and the pimentos on the dough and roll up the dough lengthwise. Cut the roll into 6 equal portions.

- Cook noodles according to package directions. Meanwhile, in a small saucepan over medium heat, melt 5 teaspoons butter. Stir in the flour, salt and pepper until blended; gradually add milk. - Bring a large pot of water to a boil and salt generously. Cook the pasta until it is al dente, about 8-10 minutes.
- While the noodles are cooking, preheat the oven to 425ºF. Spray a 9×13-inch casserole dish with nonstick cooking spray.
- Place a large skillet over medium-high heat and heat the olive oil. Add the onion and the mushrooms and cook until the mushrooms are soft and the onion is translucent. Season with salt and pepper.
- In a large bowl, combine the condensed soup, tuna fish, 1 cup of the cheese, the peas, the sour cream, and the cooked mushrooms and onions. Stir to combine.
- When the noodles are done, drain, then add to filling mixture. Stir gently to combine.
- Pour the mixture into the prepared casserole dish.
- Cover the casserole with foil and bake for 15 minutes.

- Preheat oven to 400°
- Prepare baking dish (approximately 1-quart casserole dish) by buttering edges or using pam spray. Set aside.
- Place noodles, and tuna in a mixing bowl. (Flake the tune gently so the pieces are broken apart.
- In a saucepan, melt butter on medium-high. Then add minced onion. Cook for 2 minutes until onion is translucent.
- Add flour while constantly stirring with a whisk. Cook for 2 minutes to cook out the powdery taste and bring out the nutty rich flavor.
- Add milk, and continue to whisk for 5-7 minutes until mixture thickens. Then add cheese, salt and pepper to taste Cook for 2-3 minutes more until all cheese has melted.
- Remove from heat and pour over tuna and noodles. Add peas. Stir to combine.
- Place into a buttered baking dish -- If making ahead, cover the dish with plastic, and place in the fridge. Don't place topping on until you are ready to bake it. (see notes)
- Stir panko and melted butter together and sprinkle over tuna and noodles.
- Bake for 20 minutes and serve.

- NOODLES: Cook the egg noodles in salted water until barely al dente, about 2 minutes less than packaging instructions. Reserve 1 cup pasta water, drain, rinse until cold and set aside.
- PANKO: Meanwhile, melt 1 tablespoon butter in 1 tablespoon olive oil over medium heat in a nonstick skillet. Add panko and stir to coat. Continue cooking until crumbs become golden brown. Transfer to a plate; set aside.
- CASSEROLE: Preheat oven to 350 degrees F. Lightly spray a 9x13 pan with nonstick cooking spray.
- SAUCE: Melt butter with olive oil in a very large skillet or Dutch over medium heat (something that can fit all ingredients). Whisk in flour then cook, while stirring for 2 minutes. Turn heat to low then gradually whisk in milk and 1 ½ cups chicken broth. Whisk cornstarch with remaining chicken broth and add to skillet followed by Dijon, Worcestershire sauce, chicken bouillon and all spices/seasonings.
- Bring sauce to a boil, whisking constantly then reduce heat to a simmer, whisking often until thickened. Remove from heat and whisk in 1 cup cheddar until melted followed by Gruyere cheese until melted. Whisk in sour cream until blended.
- COMBINE: Add the tuna and peas and stir to combine. Stir in the noodles until evenly combined. Stir in some of the reserved pasta water IF the sauce has become too thick. Transfer to prepared baking dish and top with remaining 1 cup cheddar cheese followed by panko.
- BAKE: Cover with foil and bake at 350 degrees for 30 minutes, uncover and bake an addition 10-15 minutes or until hot and bubbly and cheese is melted; serve piping hot. Season with freshly cracked salt and pepper to taste (I like more salt).

- Bring a large pot of lightly salted water to a boil. Cook the fusilli in boiling water, stirring occasionally for about 12 minutes until tender yet firm to the bite.
