Steps:
- To make the dressing, in a small bowl whisk together the olive oil, sugar, white wine vinegar, chili powder, and salt to taste (I like 1 teaspoon).
- In a large bowl, add tomatoes, black-eyed peas, black beans, corn, red onion, bell peppers, and cilantro. Drizzle with the dressing and stir to combine. Cover and chill until serving time.

Every time I make this I get asked for the recipe. I keep it on a file in my computer so I can print and email it easily. To add heat it is also good with jalapenos. Serve with tortilla chips.

Steps:
- Combine olive oil, vegetable oil, cider vinegar, and sugar in a saucepan; bring to a boil, remove from heat, and cool to room temperature.
- Stir pinto beans, black-eyed peas, corn, onion, celery, red bell pepper, and cilantro together in a large bowl. Pour cooled oil mixture over bean mixture and toss to coat. Cover the bowl with plastic wrap and refrigerate, stirring occasionally, for 24 hours. Drain excess dressing before serving.

- Combine the black beans, black-eyed peas, pinto beans, shoepeg corn, celery, cilantro, red and yellow bell peppers, green onion, pimento peppers, jalapeno pepper, and garlic in a large bowl. Set aside.
- Bring the rice vinegar, olive oil, sugar, salt, and black pepper to a boil in a saucepan over medium-high heat until sugar is dissolved, about 5 minutes. All to cool to room temperature, then pour over the bean mixture. Cover and refrigerate for 2 hours or overnight. Drain before serving.

SEARED TUNA WITH CAVIAR

Steps:
- Brush egg white on all sides of the tuna with a pastry brush.
- Mix the ground pepper and coriander and press the tuna into this mixture, using as much of it as necessary to cover each side and the ends.
- Heat a heavy saute pan and pour about half of the oil into the pan. Bring to the smoking point and carefully place the tuna in the pan. Sear each side until dark brown and crusty, adding more oil if needed to keep the tuna from sticking. Sear the ends as well. Each side should take about one to one and a half minutes. Remove the tuna and let it rest for at least 10 minutes before slicing.
- Using a very sharp knife, cut the tuna into one-half- to one-third-inch slices, allowing three slices per serving.
- Arrange the dressed salad greens on each of eight plates at 12 o'clock.
- In a semicircle, overlap three slices of tuna below the greens, with the top edges of tuna resting on the salad. At the base of each piece of tuna, place a dollop of the sauce.
TUNA COWBOY CAVIAR
Created for the Dining on a Dollar contest. A tasty, healthy, jazzed up cowboy caviar. Full of fiber and protein. Good as a dip, over lettuce, by it's self or wrapped in a tortilla with cheese for a filling lunch. You can easily turn up the heat. Servings depend on if it's a main course or appetizer.

- Toss salad ingredients together (except avocado, until just before serving. You can cover avocado with a layer of dressed salad to keep it from browning or just add it as you eat it.).
- Whisk dressing ingredients together and stir into salad.
- Optional: You can stir in shredded cheddar cheese and/or cubed cream cheese.
- Serve as a dip with tortilla chips, over lettuce as a salad, wrapped in a tortilla with cheese or on it's own as a filling lunch.
TUNA TARTARE IN A CUCUMBER BOAT TOPPED WITH CAVIAR

- With a heavy sharp knife, chop tuna into very small slices. In a mixing bowl, combine tuna, chives, capers, shallots, lemon juice, oil, salt and freshly ground pepper and chill for 1 hour. While tuna is chilling, prepare cucumber boats. Peel cucumber and cut into 2-inch long cylinders. With a teaspoon, scoop out the seeds from inside the cucumber disk without touching the very bottom of the cucumber. (In other words, leave a "bottom" in the hollowed-out center of the cucumber.) Season cucumber with salt and pepper. Fill with 1-ounce of tuna tartare. Top with 1/8 teaspoon of caviar. Finish with a sprig of parsley.
