MINI TUNA CASSEROLES
I CAN whip up this dish in a hurry, and it's perfect for a light supper or luncheon for two. I always have a can of tuna on my pantry shelf, and when I prepare it, I feel I've served us a healthy, nutritious meal. -Rebecca Reese, Jacksboro, Texas

Steps:
- In a saucepan, saute onions in butter. Stir in flour until blended. Gradually stir in milk. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir in the tuna, 1/2 cup of potato chips and pepper. , Pour into two greased 8-oz. baking dishes. Sprinkle with remaining potato chips. Bake, uncovered, at 350° for 20-25 minutes or until hot and bubbly.

TUNA MINI QUICHES
Can be made ahead. Cover and refrigerate once cooled. To serve, place on a cookie sheet and cover with foil. Bake 10 minutes at 375 degrees.

Steps:
- Heat oven to 375 degrees. Spray 24 mini muffin cups with cooking spray.
- Make the crust by mixing the Bisquick and butter in a small bowl. Add boiling water, stirring quickly until soft dough forms.
- Make teaspoon sized balls of dough and press into the muffin cups, forming a little pie crust up the sides and on the bottom.
- Divide the tuna evenly among the muffin cups.
- Beat the milk, butter and egg in a small bowl. Stir in the chives and salt. Spoon 1 1/2 teaspoons of the egg mixture into each muffin cup. Sprinkle cheese on top.
- Bake 20 minutes or until edges are brown and centers are cooked.

MINI TACO QUICHES
These tasty mini taco quiches are a party favorite. The crust is a flour tortilla and the quiches are comprised of ground beef, taco seasoning, Cheddar cheese, black olives, and sour cream.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin with cooking spray.
- Cook beef and onion in a large, nonstick skillet over medium-high heat until beef is browned and crumbly, 5 to 7 minutes. Remove from the heat. Drain and discard grease.
- Stir in tomato sauce, olives, water, hot sauce, egg, and taco seasoning; mix well.
- Cut each flour tortilla into 3 rounds using a 4-inch round cookie cutter. Fit a round into each of the prepared muffin cups and fill each with 1/4 cup meat mixture. Top with sour cream and Cheddar cheese.
- Bake in the preheated oven until heated through, about 25 minutes.

- Place the flour, butter and salt in a bowl and rub the mix together until it resembles coarse sand. You can do this in the food processor too.
- Add water (1 tbsp at a time), and mix well until it starts to form a ball - It only took about 5 tbsp of water for me.
- Place the dough ball on a floured surface, and bring it together to form a dough and then flatten it out to a disc. Wrap it in plastic wrap and let it rest in the fridge for at least 30 minutes - up to overnight. Remove the dough from the fridge and let it soften (if you keep it in the fridge overnight).
