TUNA, CELERY AND EGG SPIRALIZED PASTA SALAD (NO-MAYO!)



Tuna, Celery and Egg Spiralized Pasta Salad (No-Mayo!) image

Number Of Ingredients 10

2 large whole eggs
1/4 tsp salt
2/3 cup nonfat plain Greek Yogurt
1/2 tbsp dijon mustard
1/4 tsp garlic powder
1/2 cup chopped celery
2/3 cup drain canned white albacore tuna (in water)
salt and pepper to taste
1 medium cucumber (Blade A)
1 medium zucchini (Blade A)

Steps:

  • Place your eggs in a medium saucepan. Add water into the saucepan until the eggs are covered by about 1/2 inch. Add in the 1/4 tsp of salt. Place a lid on the saucepan and turn up heat and bring to a boil.
  • Once the water is boiling, turn the heat off and let cook for 12 minutes. Once done, drain the eggs out carefully into a colander and then place in a bowl of cold water. Let cool for a few minutes and then peel each egg. Set aside.
  • While the eggs are cooking, prepare the pasta salad mixture. Add the greek yogurt, dijon mustard, garlic powder and celery into a bowl, season with salt and pepper and mix to combine.
  • Once the eggs are finished, dice them and add them to a bowl along with the tuna and spiralized cucumber and zucchini noodles.
  • Pour the pasta salad mixture over the tuna and noodles and toss to combine thoroughly. Season with more pepper, if desired. Enjoy!

This creamy Tuna Pasta Salad recipe is served with macaroni, eggs, celery, onions, peas, and of course- tuna fish. This makes an easy lunch, snack, or side dish that is pulled straight from the fridge and served cold!

¾ lb. macaroni
3 (5 oz.) cans tuna packed in water (drained well.)
2 celery sticks (finely diced)
¼ cup red onion (finely diced)
4 hard-boiled eggs (see notes)
¾ cup frozen peas (thawed)
¾ cup mayonnaise
¼ cup yellow mustard
1/4 cup sweet relish
1 Tablespoon lemon juice
1 Tablespoon white vinegar
¼ teaspoon celery salt
¾ teaspoon garlic salt
½ teaspoon salt
½ teaspoon pepper
1 pinch cayenne (optional)
Pinch paprika
Diced green onions

Steps:

  • Combine dressing ingredients and set in the fridge to chill.
  • Boil macaroni in salted water until just al dente, about 7 minutes (verify time on package).
  • Drain and rinse with cold water until the water on the bottom of the colander comes through cold. Drain as much of the water as possible, (I lay my macaroni on a dry dish towel).
  • Cut the hard-boiled eggs into pieces of desired size, reserve some to garnish on top if desired.
  • Add the pasta, dressing, and all remaining ingredients to a large bowl. Use a silicone spatula to gently stir until evenly combined. Transfer to a clean serving dish.
  • Garnish with green onions and paprika.
  • Cover and refrigerate for a minimum of 4 hours or up to overnight. The pasta will absorb more of the dressing during this time. Serve!

Number Of Ingredients 7

14-16 oz. box of macaroni or corkscrew pasta
5 oz. can of solid white albacore tuna (in water (refrigerated), drained)
4 celery stalks (diced (I use Dandy Fresh brand))
4 boiled eggs (refrigerated, peeled & then diced)
2/3 cup mayonnaise
1 lemon
salt & pepper

Steps:

  • Cook pasta acording to the instructions on the box, allow to cool and then refrigerate.
  • Combine cold tuna, celery stalks and cold diced eggs together in a large mixing bowl and add salt and pepper to taste.
  • Add macaroni pasta and mix well. Add mayonnaise and mix well.
  • Add more salt and pepper to taste and squeeze as much lemon juice as you want into the pasta, to taste. Refrigerate and serve cold.

1 cup seashell pasta
1 bunch green onions, chopped
½ cup iceberg lettuce, rinsed and chopped
1 (5 ounce) can tuna, drained
1 (15 ounce) can peas, drained
½ cup shredded Cheddar cheese
½ cup creamy Italian salad dressing, or more to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a boil. Stir in seashell pasta, and return to a boil. Cook pasta uncovered, stirring occasionally, until cooked through, but still firm to the bite, about 11 minutes; drain.
  • Place green onions and lettuce in a large bowl. Add pasta, tuna, peas, and grated Cheddar cheese; mix well. Stir in dressing; toss to coat.

1 (16 ounce) package cavatappi (corkscrew macaroni)
1 cup mayonnaise
3 tablespoons lemon juice
2 tablespoons honey
½ tablespoon garlic powder

3 stalks celery, sliced
1 red onion, diced
1 cup peas
¼ cup chopped fresh parsley
½ cup chopped green olives
