PEPPER & TUNA PANINI PIZZAS
A great snack for kids or a tasty weekend lunch. Learn how to roast your own peppers too

Steps:
- Heat grill to medium. Split the panini rolls in half and lightly toast on each side. Slice the peppers into strips and mix well with the tomato purée, parsley and some seasoning. Spread over the toasted bread.
- Flake the tuna over the pepper mixture, then scatter with cheese. Grill for 3-5 mins until the cheese is golden and bubbling.

- Puree the olives, oil, garlic, and zest in a food processor until smooth and spreadable. Blend in the mayonnaise. Toss the tuna, artichokes, lemon juice, and pepper in a medium bowl, keeping the tuna in small chunks.
- Hollow out the bottom and top halves of the bread. Spread the olive puree over both cut sides of the bread. Spoon the tuna and artichoke mixture onto the bottom half of the bread. Sprinkle the tomatoes over. Cover with the bread top. Cut the sandwich crosswise into 6 pieces and serve.

- Spread tuna mixture over 2 slices of bread. Top with American cheese and remaining 2 slices of bread.
- Cook in a panini press until bread is crispy and cheese is melted, 3 to 4 minutes.

- Process Country Crock® Spread, basil and garlic in food processor or blender until almost smooth.
- Spread 2 slices bread with basil butter. Top with spinach, roasted pepper, mozzarella, and remaining bread slices.
