Tuna Alfredo with Penne Pasta image

This family invention is a favorite. It's quick, easy and only requires three core ingredients. The entire family loves this meal and always come running when they know this is being served. Serve with broccoli or fresh salad and garlic bread on side.

1 cup penne pasta
24 ounces tuna, drained
1 teaspoon onion powder
1 pinch salt
1 (16 ounce) jar Alfredo sauce
2 ounces grated Parmesan cheese

Steps:

  • Bring a large pot of water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain pasta; return to pot.
  • Place tuna in a skillet over low heat; season with onion powder and salt. Cook until lightly browned, about 5 minutes. Stir tuna into cooked pasta. Add Alfredo sauce; stir until combined. Garnish with grated Parmesan cheese.

This was given to me by a Marine mom to put in our cookbook that we are selling to raise funds to send care packages to the troops. I tried it out one HOT Texas night and it was too good not to post! I hope you like it...

1 lb rotini noodles
2 (6 ounce) cans tuna, drained
1 -2 cup mayonnaise (depending on how creamy you want it) or 1 -2 cup salad dressing (depending on how creamy you want it)
1 (1 7/8 ounce) box dry vegetable soup mix (I use Lipton brand)
6 -8 baby carrots, chopped
2 celery ribs, chopped
10 black olives, chopped (optional)

Steps:

  • Boil Rotini noodles according to package directions.
  • Rinse in cold water to cool.
  • Blend thoroughly tuna, mayonnaise, vegetable soup mix, carrots, celery and black olives.
  • Serve immediately, or place in refrigerator to cool and serve cold.
  • If refrigerated for a couple hours, you may need to add more mayo or a little milk to make this creamy.
  • Enjoy!

This is a simple recipe that can be made with mostly canned and dry ingredients for those times when you don't have anything set out for dinner.

16 ounces rotini pasta (or any other pasta)
2 (10 3/4 ounce) cans cream of mushroom soup
2 (5 ounce) cans tuna
1/2 cup parmesan cheese
1 cup of shredded cheddar cheese
1/4 cup Italian breadcrumbs

Steps:

  • Preheat oven to 350°F.
  • Boil the pasta following the instructions on the package.
  • Drain the pasta, then return it to the pot and mix in the Cream of Mushroom soup, tuna, half of the parmesan cheese, and about 2/3 of the cheddar cheese.
  • Pour the mixture into a 9x13 glass dish, then sprinkle the remaining cheeses and bread crumbs over the top.
  • Cook at 350°F for 15 minutes, then (optionally) turn on the broiler for a couple minutes to brown the top, watching it closely to make sure it doesn't burn.

1 box (8.4 oz) Betty Crocker™ Tuna Helper™ creamy Parmesan
2 cups water
1 2/3 cups milk
3 tablespoons butter or margarine
1/4 teaspoon garlic powder
1 can (5 oz) tuna in water, drained
1 box (9 oz) frozen chopped spinach, thawed, squeezed to drain
1 cup cherry tomatoes, halved
1 tablespoon lemon juice
2 tablespoons grated Parmesan cheese

Steps:

  • In 12-inch skillet, stir together uncooked pasta and sauce mix from Tuna Helper box, water, milk, butter and garlic powder. Heat to boiling over medium heat, stirring occasionally. Stir in tuna, spinach and tomatoes.
  • Reduce heat to medium-low; cover and cook 13 to 15 minutes, stirring occasionally, until pasta is tender. Stir in lemon juice; sprinkle with cheese.
