This delicious tuna salad and sauerkraut sandwich boasts fresh veggies, protein and probiotics. Super easy to prepare for home or to go.

2 stalks celery
1/2 small red bell pepper
1/4 small red onion
5 ounces canned tuna ((I like Wild Planet's canned tuna which is lower in mercury))
2 tablespoons mayonnaise
sea salt (to taste)
freshly ground black pepper (to taste)
4 slices bread (any kind)
2 leaves green leaf lettuce (or other lettuce)
1/4 cup sauerkraut ((see notes))

Steps:

  • Prep: Finely chop the celery, red pepper and onion, and wash the lettuce leaves; set aside. Place the tuna in a large mixing bowl and use a fork to separate into flakes.
  • Mix: Add the vegetables and mayonnaise to the tuna as well as salt and pepper to taste, and mix well to incorporate.
  • Assemble: Place one slice of lettuce, half the tuna salad and half the sauerkraut on each sandwich, slice in half and serve.

1/4 small onion (any kind)
2 medium stalks celery
5 ounces canned tuna ((I like Wild Planet's canned tuna which is lower in mercury))
2 tablespoons mayonnaise
sea salt (to taste)
freshly ground black pepper (to taste)
1/3 cup sauerkraut ((see notes))
4 cups salad greens (any variety)

Steps:

  • Prep: Wash the salad greens if necessary, and set aside. Wash and finely chop the onion and celery and place in a medium mixing bowl. Drain the tuna and add to the bowl, flaking it with a fork into small pieces.
  • Mix: Add the mayonnaise, salt and pepper to the bowl and mix well to combine.
  • Serve: Place an equal serving of salad greens, tuna salad and sauerkraut in each bowl. Serve immediately and enjoy!

TUNA MELT AND SAUERKRAUT

Number Of Ingredients 11

2 cans wild tuna
1 red onion
1 clove garlic
6 oz mild cheddar cheese
5 tbsp. butter, softened
3 tbsp. mayonnaise
coarse sea salt, to taste
8 slices sourdough bread
ground black pepper, to taste
ranch dressing
1 c sauerkraut, or more to taste - storebought or homemade

Steps:

  • Drain water from tuna.
  • Slice the onion and mince the garlic. Slice the cheese.
  • In a small pan over medium heat, melt 1 tablespoons of butter; sauté onion and garlic on low heat until soft and caramelized.
  • Meanwhile, in a medium sized bowl, break tuna apart with a fork.
  • Add mayo and mash together until desire consistency is reached.
  • When onions and garlic are caramelized, mix them into the tuna mixture.
  • Butter the bread, placing half butter side down in a large pan over medium heat.
  • Lay a thin layer of cheese atop the bread, top each with 1/4 of the tuna/onion mixture. Layer remaining cheese and top with bread - butter side up.
  • Cover and cook until bottom slice of bread is nicely browned. Flip and repeat on other side.
  • Cheese should be completely melted by the time the sandwich is done grilling.
  • Serve with a side of ranch dressing and generous scoop of sauerkraut.

2 tablespoons minced celery

1 tablespoon whole-grain mustard
Freshly ground black pepper
Freshly squeezed lemon juice (optional)

Steps:

  • In a small mixing bowl break up the tuna with a fork. Toss with the celery, onion and parsley. Add the mayonnaise, mustard and season with pepper, to taste. Stir to combine. Add lemon juice, to taste, if using.

1 quart sauerkraut, drained
1 onion, chopped
2 stalks celery, chopped
1 green bell pepper, chopped
1 large carrots, chopped
1 (4 ounce) jar diced pimento peppers, drained
1 teaspoon mustard seed
1 ½ cups white sugar
1 cup vegetable oil
½ cup cider vinegar

Steps:

  • In a large bowl, mix together sauerkraut, onion, celery, green bell pepper, carrot, pimientos, and mustard seed. Set aside this mixture.
  • In a small saucepan, mix together sugar, oil, and vinegar. Bring to a boil. Remove from heat.
  • Pour sugar mixture over salad, cover, and leave it in the refregerator for 2 days before serving.
