- Scrub and pierce potatoes; place on a microwave-safe plate. Microwave, uncovered, on high for 15-20 minutes or until tender, turning once., When cool enough to handle, cut each potato in half lengthwise. Scoop out the pulp, leaving thin shells., In a small bowl, mash the pulp. Add the cottage cheese, tuna, celery, onion, 1/4 cup cheese, paprika, salt and pepper. Spoon into potato shells. Place on a baking sheet. Bake, uncovered, at 350° for 18-22 minutes or until heated through. Sprinkle with remaining cheese. Bake 5 minutes longer or until cheese is melted.,

- Peel and mash potatoes. Mix next 6 ingredients with mashed potatoes until well blended; spread into 15x11-inch rectangle on large sheet of foil sprayed with cooking spray.
- Spread mayo over potato mixture; sprinkle with chile powder. Top with tuna, 2-1/2 sliced eggs and 3/4 of the avocados. Roll up, starting at one long side, removing foil as potato log is rolled up.

CRISPY POTATO SPRING ROLLS WITH TUNA SUSHI IN A LEMON THYME VINAIGRETTE
Steps:
- Make the vinaigrette: In a bowl, whisk together lemon juice, pink pepper, white pepper, and salt. Whisk in honey. Drizzle in olive oil in a slow stream to emulsify. This is a temporary emulsification and needs to be whisked just before serving.
- In a heated pan with olive oil saute the potatoes. Season with salt and pepper. Cover the pan and roast until potatoes are tender. Add sun dried tomatoes to the pan. Transfer mixture to a bowl. With a hand-held masher, mash the mixture until fluffy. Check for seasoning. Place the potatoes mixture into a pastry bag fitted with a round tip.
- To hydrate the rice paper wrappers, fill a large bowl with warm water. Place the wrappers in water for about 3 minutes until soft.
- Remove one wrapper at a time from the water, lay out on a flat surface, and blot with a paper towel. Pipe a 5-inch strip of mashed potatoes in the center of the wrapper. Lay a tuna bar and a piece of scallion evenly next to the potato. Roll into a spring roll.
- In a very hot pan with oil saute the spring rolls quickly, browning all sides. Cook on very high heat, making sure not to cook the tuna.
- Cut each spring roll into 5 pieces. Brush with olive oil. Drizzle with the vinaigrette and serve immediately.

- Preheat oven to 375°F Wrap potatoes in foil and bake until fork tender, about an hour. Let cool.
- Split potatoes in half and spoon out the filling into a medium sized bowl leaving enough in the shell so that the skin does not break when handling. Break up potatoes with fork.
- To potatoes add mayo, 1 cup cheese, green onion, green pepper, and tuna.
- Restuff potatoes with mixture to a slight mound. Sprinkle with remaining cheese.
- Place in 13x9-inch baking dish and bake for 20 minutes.

- Preheat oven to 350˚F (180˚C).
- Using a knife or mandolin cut the potatoes into slices ⅛-inch (3 mm) thick.
- On a parchment paper-lined baking sheet, sprinkle half of the Parmesan cheese and spread until it is evenly covering the parchment paper.
- Place the potatoes over the parmesan so each potato is overlapping the previous potato both vertically and horizontally. Continue until the entire pan is filled with potatoes.
- Sprinkle to rest of the Parmesan evenly over the potatoes. Season with 1 teaspoon of salt. Bake for 30 minutes, until golden and the potatoes are flexible and slightly crispy.
- In a skillet heat 2 tablespoons of olive oil over medium heat. Once the oil begins to shimmer, add the onions, and cook until caramelized, about 15 minutes.
- Add the beef break up and mix with the onion until cooked. Mix in the tomatoes, 3 tablespoons of parsley, paprika, 1 teaspoon of salt, and pepper. Stir, cooking until the beef is browned and cooked through. Remove from heat.
- In a skillet heat 2 tablespoons of olive oil over medium heat. Add the spinach, cook until wilted. Add 1 teaspoon of salt and the garlic. Stir to combine. Remove from heat.
- In a bowl combine the spinach mixture and the ricotta. Set aside.
- Evenly spread the spinach mixture over the cooked potato sheet.
- Evenly spread the beef mixture over the spinach. Sprinkle mozzarella over the beef.
- Take one end of the potato sheet holding the parchment paper begin rolling upward, making sure the ingredients are not coming out the ends.
- Once the it is completely rolled place the potato roll on the parchment paper and bake for 15 minutes.
- Sprinkle with parsley for garnish. Slice and serve immediately.

- Scrub potatoes, prick with fork, bake in 400 degree oven for 1 hour.
- When cool enough to handle, cut potatoes in half lengthwise, scoop out potato pulp into large bowl, leaving shells intact.

- Cook potatoes in boiling water 20 min. or until tender; drain. Place in medium bowl; mash until smooth. Refrigerate 1 hour or until chilled.
- Meanwhile, heat 2 tsp. oil in medium skillet on medium heat. Add peppers, onions, garlic and oregano; cook 5 min., stirring occasionally. Remove from heat. Stir in tuna, cheese and 2 Tbsp. olives.
- Heat remaining oil in medium saucepan to 375ºF. Using lightly floured hands, shape potato mixture into 8 (3-inch) balls, using about 1/3 cup potato mixture for each. Make large indentation in center of each; fill with about 1/4 cup tuna mixture, pressing tuna mixture into center of ball to completely enclose filling. Re-roll into balls, if necessary. Beat egg in small bowl; place flour in separate bowl. Dip potato balls, 1 at a time, in egg, then roll in flour until evenly coated.
- Add potato balls, 2 at a time, to hot oil; cook 5 to 6 min. or until golden brown. Drain on paper towels. Mix remaining olives and mayo. Serve with the warm potato balls.
