Steps:

  • In a medium bowl, blend cream cheese and confectioners' sugar until smooth. Gradually mix in the pumpkin. Stir in the cinnamon, pumpkin pie spice, and orange juice until smooth and well blended. Chill until serving.

  • Beat cream cheese in a bowl with an electric mixer until smooth; mix in pumpkin puree until smooth. Stir confectioners' sugar and pumpkin pie spice into mixture until evenly mixed; fold in whipped topping. Cover bowl with plastic wrap and refrigerate for flavors to blend, about 2 hours.

We usually serve it with gingersnaps and sliced apples, and occasionally spread it over bagels for a morning treat.

This is a traditional Tunisian recipe for a classic salad of cooked carrots and potatoes that are mashed and mixed with garlic, cumin, olive oil, white wine vinegar and cayenne pepper. This dish looks more like a carrot purée that you would serve as side, but in Tunisia it is served as a starter.

1 1/2 lbs carrots, peeled
1 1/2 lbs potatoes, peeled
2 garlic cloves, chopped
sea salt, to taste
4 teaspoons cumin seeds, roasted in a dry frying pan and ground
3 tablespoons olive oil
2 tablespoons white wine vinegar
1/8 teaspoon cayenne pepper (to taste)

Steps:

  • Chop the carrots and potatoes into equal-sized pieces. Place them in a large pot along with the garlic and cover with water.
  • Bring to a boil, reduce to a simmer, and cook until the vegetables are tender (about 20 minutes).
  • Drain and mash well then add the remaining ingredients and beat until creamy.
  • Place in a serving bowl and serve at room temperature.

1 butternut squash
2 cups water
1/2 tablespoon salt
7 garlic cloves
1/4 cup olive oil
1 tablespoon sweet paprika

Steps:

  • Peel and chop butternut squash. Place in a sauce pan with water oil and salt. Bring to the boil.
  • Simmer covered until butternut squash is cooked, then uncover and simmer until all the water has evaporated.
  • Grate or crush garlic and add to the pan along with the paprika. Stir in and cook for a further five minutes.
  • Leave to cool and refrigerate, serve chilled with bread or rolls. Or alternatively serve hot over rice.

1 1/2 lbs fresh pumpkin, peeled and de-seeded
1/4 teaspoon caraway seed
1/4 teaspoon ground coriander
1 1/2 tablespoons olive oil
1 garlic clove, minced
1/2 teaspoon harissa (or to taste)
3 tablespoons lemon juice
salt, to taste

Steps:

  • Chop the pumpkin into cubes. Place in a pan with about 1/3 cup water. Bring to a gentle simmer, cover tightly and allow to cook in its own juices until tender.
  • Drain the pumpkin in a colander then set aside.
  • Add the oil to a pan and fry the caraway seeds and coriander, stirring occasionally, until fragrant and aromatic (about 4 minutes).
  • Stir-in the garlic and fry for 1 minute then add the pumpkin, mashing with a fork before adding all the remaining ingredients.
  • Stir well to combine then remove from the heat.
  • Mash the ingredients thoroughly then set aside to cool before serving.
  • Serve with bread pieces or flatbread, such as pita.
