Steps:
- In a small bowl, stir together the red onion, thyme, mayonnaise and mustard. Spread some of this mixture onto one side of each slice of bread. Spread butter onto the other side of the slices of bread.
- Heat a large skillet over medium heat. Place 4 slices of the bread into the skillet with the butter side down. On each slice of bread, layer 1/4 of the sliced turkey, then 2 slices of tomato, and top with 2 slices of Swiss cheese. Place remaining slices of bread over the top with the butter side up. When the bottoms of the sandwiches are golden brown, flip over, and cook until golden on the other side.

- For the carrot slaw: Mix the grated carrots with the vinegar, mayonnaise, chives, parsley, caraway, 1/2 teaspoon salt and a few grinds of pepper in a medium bowl.
- For the sandwiches: Lightly toast the bread. Prop the bread against something and let it cool upright so that the steam does not make it soggy.
- Lay out the bread and generously slather with mustard. Divide the turkey equally among 4 slices of the bread and the cheese evenly among the remaining 4 slices. Top the turkey with the carrot slaw and pickles, then invert the bread with the cheese over top to make 4 sandwiches. Wrap each sandwich in wax paper and refrigerate for up to 4 hours until ready to serve.
- Cut the sandwiches in halves or thirds before serving.

- Preheat an oven to 400°F Prepare 2 qt shallow baking dish for use.
- In a large pot or a dutch oven, combine the chard, the garlic, onions and 1 cup of the water, cover and cook over medium-high heat, stirring once or twice until the chard is wilted and barely tender, about 10 minutes. Spread the chard mixture evenly in the prepared baking dish.
- Coat a large nonstick frying pan at med-high heat with non-stick cooking spray. Add the turkey cutlets in a single layer and sprinkle with pepper. Cook, turning once until the turkey is lightly browned on the outside but still pink in the center, about 3 minutes. Using a slotted spoon remove the turkey and arrange on top of the chard.
- In the turkey pan, bring the wine and lemon zest to a boil. Boil, scraping any browned bits from the pan, for 3 minutes. Add the chicken broth, 3/4 cup of the remaining water, and 1 1/2 teaspoons of the paprika and return to a boil.
- In a small bowl, whisk the cornstarch with the remaining 1/4 cup water until smooth. Add to the boiling broth, whisking constantly until thickened, about 1 minute. Pour the cornstarch mixture over the turkey and chard.
- Bake until the turkey is fully cooked and the sauce is bubbling, about 20 minutes. Dust with the remaining paprika. Serve from the baking dish.

- Preheat large skillet over medium-high heat with the 2 tablespoons olive oil.
- Add onions ans season with salt and pepper.
- Cover pan with foil and set a lid or plate on top to smother onions, for 5 minutes.
- Add mushrooms to the onions and smother them for another 5 minutes, stirring occasionally.
- Uncover pan and let juices cook off a little. Sprinkle with the flour.
- Cook for 1 minute; add wine and chicken broth and cook sauce until nice and thick, about 2 minutes.
- Combine ground turkey, cheese, salt and pepper, poultry seasoning, and cayenne pepper in a medium bowl.
- Score the meat with the side of your hand to separate it into 4 equal amounts.
- Form the mixture into 4 large patties no more than 1" thick.
- Drizzle the patties liberally with olive oil.
- Preheat a large nonstick skillet over medium-high heat.
- Once the skillet is hot, add the patties and cook them for 5-6 minutes on each side, or until turkey is cooked through.
- Serve the burgers on the toasted English muffins, smothered with the onions and mushrooms.

- In a large non-stick skillet, heat oil & add onion. Cook on medium-low heat for 10 minutes. Season with a little salt, stir & continue cooking, uncovered, for another 20 minutes (30 minutes total), stirring every five to ten minutes. You will want to caramelize the onions LOW & SLOW. If they look dry at all, add a Tablespoon or two of water occasionally. If the onions start to stick to your pan, add a little more olive oil. Keep warm.
- Cook turkey burgers according to the directions on the package: Preheat grill to medium heat. Lightly spray or brush both sides of FROZEN turkey burgers with oil and place on grill, about 4" above heat. Grill burgers 8 minutes on one side; turn and grill on the other side for 7 minutes or until center of burger reaches 165 degrees Fahrenheit.
- Top warm burgers with one slice of swiss cheese and a scoop of warm caramelized onions. Place on a toasted hamburger bun. Enjoy!
