2 cans (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
1/2 cup 2% milk or chicken broth
4 cups cubed cooked turkey
2 celery ribs, thinly sliced
1 small onion, chopped
1 can (8 ounces) sliced water chestnuts, drained and halved
1 tablespoon reduced-sodium soy sauce
1 can (3 ounces) chow mein noodles
1/2 cup slivered almonds

Steps:

  • In a large bowl, combine soup and milk. Stir in the turkey, celery, onion, water chestnuts and soy sauce. , Transfer to a greased shallow 2-qt. baking dish. Sprinkle with noodles and almonds. Bake, uncovered, at 350° for 30 minutes or until heated through.

How to Cook a Turkey image

The biggest myth in all of American cookery is that a juicy, perfectly cooked turkey is difficult for the novice cook to achieve. Even if this is your first time, don't play scared, this will work! There is nothing to fear but the fear of dry turkey itself.

1 onion, coarsely chopped
1 stalk celery, coarsely chopped
1 carrot, coarsely chopped
1 (12 pound) whole turkey, neck and giblets reserved
2 tablespoons kosher salt
1 tablespoon ground black pepper
1 teaspoon cayenne pepper
3 tablespoons butter
4 sprigs fresh rosemary
½ bunch chopped fresh sage

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Place onion, celery, and carrot in a large, shallow roasting pan.
  • Place turkey, breast side up, on top of the vegetables in the roasting pan. Pat the outside and inside of the turkey dry with paper towels.
  • Combine salt, black pepper and cayenne pepper in a small bowl. Season the inside of the turkey with about 1/3 of the salt mixture. Fold wing tips under the bird.
  • Melt butter in small saucepan over medium heat until the edges begin to turn golden, about 2 minutes. Cook and stir rosemary and sage for 1 minute.
  • Place rosemary and sage inside the cavity of the turkey; reserve melted butter. Tie the legs together with twine.
  • Brush outside of the turkey completely with the melted butter. Season with remaining 2/3 of the salt mixture.
  • Bake turkey, uncovered, in the preheated oven until no longer pink at the bone and the juices run clear, about 3 hours. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C). Remove the turkey from the oven and allow to rest in a warm area 10 to 15 minutes before slicing.

I was inspired to create more Southwestern-flavored foods from our travels there. This is a great way to use leftover chips and salsa. You can substitute chicken cutlets for the turkey if you like. -Lisa Varner, El Paso, Texas

2 large eggs
2 tablespoons water
3 teaspoons ground cumin
1 teaspoon garlic salt
1/2 teaspoon pepper
1-3/4 cups crushed tortilla chips
1 package (17.6 ounces) turkey breast cutlets
2 tablespoons canola oil
1/2 cup pico de gallo
Optional: Sour cream and chopped fresh cilantro

Steps:

  • In a shallow bowl, whisk together the first 5 ingredients. Place crushed chips in another shallow bowl. Dip cutlets in egg mixture, then in chips, pressing to help adhere., In a large skillet, heat oil over medium-high heat. In batches, cook cutlets until golden brown, 2-3 minutes per side. Serve with pico de gallo and, if desired, sour cream and cilantro.

3 cups cooked turkey, chopped
4 ounces sliced mushrooms
1/2 cup celery, chopped
1/4 cup onion, chopped
1 (2 ounce) jar diced pimentos, drained
2 (10 ounce) mushroom soup (or chicken)
3/4 cup milk
1 1/2 cups French fried onion rings
1 (9 ounce) chow mein noodles

Steps:

  • Saute onion and celery in small amount of oil. Mix soups with milk, add onion, celery, mushrooms, pimentoes and turkey. Place into a greased casserole dish.
  • Sprinkle onion rings and noodles over top of casserole. Bake in a 325 degree oven for 35 minutes.
