A traditional Cuban dish made dieter and taste bud friendly. Serve with brown rice or make them into Cuban Sloppy Joes by putting the mixture inside whole wheat hamburger buns.

1 tablespoon olive oil
1 pound ground turkey
1 ½ teaspoons olive oil
1 large yellow onion, chopped
1 green bell pepper, chopped
4 cloves garlic, minced
2 bay leaves
½ cup white wine
1 (8 ounce) can tomato sauce
⅓ cup chopped green olives
⅓ cup raisins
½ cup canned black beans
1 tablespoon olive brine
1 tablespoon capers
2 teaspoons cayenne pepper, or to taste
2 teaspoons ground cumin

Steps:

  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat and stir in the ground turkey. Cook and stir until the turkey is crumbly, evenly browned, and no longer pink. Remove the turkey and drain and discard any excess grease.
  • Heat 1 1/2 teaspoons olive oil in the skillet over medium heat. Add the onions, bell pepper, garlic, and bay leaves; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the cooked turkey, wine, tomato sauce, olives, raisins, black beans, olive brine, capers, cayenne, and cumin. Simmer about 15 minutes.

This is another one of my favorite recipes. You can use Pace "HOT" or "MEDIUM" strength chunky salsa for this recipe.

1 lb uncooked ground turkey breast
1 tablespoon canola oil
1/2 cup scallion, sliced
2 medium garlic cloves, minced
1 teaspoon ground cinnamon (to taste)
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon dried thyme
1 cup chunky salsa
1 large mango, cubed
2 cups cooked brown rice, kept hot

Steps:

  • Cook turkey in a large skillet over medium-high heat until browned, stirring occasionally, about 5 minutes.
  • Drain off any fat.
  • Add oil to skillet and heat until sizzling.
  • Stir in scallions, garlic, cinnamon, coriander, cumin, oregano and thyme.
  • Cook, stirring, for 2 minutes.
  • Gently stir in hot or medium chunky salsa and mango.
  • Cover and cook until heated through, about 2 minutes more.
  • Serve over brown rice.

2 tablespoons unsalted butter
1 lb cooked turkey, chopped
1 small yellow bell pepper, seeded & chopped fine
1/2 cup chopped sweet onion
2 chipotle chiles in adobo, drained and chopped
1 teaspoon ground cinnamon
1 teaspoon ground cumin
1 teaspoon coriander
1 teaspoon dried oregano
1 cup thick salsa
1/4 cup golden raisin
2 cups chopped mangoes
8 (8 inch) whole wheat tortillas

Steps:

  • Over medium heat, melt butter in a large skillet. Stir in cooked turkey, bell pepper, onion, chilies, herbs and spices - mixing well. Sauté for about 2 minutes or until vegetables are crispy and turkey is hot.
  • Reduce heat to low and gently stir in salsa, raisins and mango, blending well. Cook and stir about 3 to 4 minutes or until mixture in hot throughout.
  • Heat tortillas as directed on the package.
  • Spoon turkey mixture down the center of each warmed tortilla. Fold up the bottom end, and then fold in the sides. Serve immediately.

1 lb ground lean pork
1/3 cup thinly sliced onion
2 garlic cloves, minced
1 teaspoon ground cinnamon
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon dried oregano, crushed
1 teaspoon dried thyme, crushed
1 cup thick & chunky salsa
1 mango, peeled, pitted, cubed
2 tablespoons smoked almonds, chopped
2 tablespoons cilantro leaves
hot cooked rice (white or yellow)

Steps:

  • In a large skillet cook the ground pork until it is no longer pink. Drain off fat.
  • Stir in onions, garlic, cinamon, coriander, oregano, thyme. Cook and stir for 2 minutes more.
  • Gently stir in salsa and mango. Cover and heat through, about 2 minutes.
  • Spoon into serving dish. Sprinkle with chopped almonds and cilantro. Serve with hot cooked rice.

1 Tbsp canola oil
1 pound lean ground turkey

Steps:

  • 1. Cook turkey in a large skillet over medium-high heat until browned, about 5 minutes. Drain off any fat. 2. Add oil to skillet and heat over medium-high heat until sizzling. Stir in scallions, garlic, cinnamon, coriander, cumin, oregano and thyme. Cook, stirring, for 2 minutes. Gently stir in salsa and mango. Cover and cook until heated through, about 2 minutes more. Serve over brown rice. Yields about 3/4 cup of stew and 1/2 cup of rice per serving. This recipe freezes well.

4 tablespoons olive oil
2 medium onions, finely diced
6 cloves garlic, minced
2 red bell peppers, finely diced
2 green bell peppers, finely diced
4 pounds ground turkey
2 1/2 teaspoons ground cumin
1 tablespoon ground oregano
2 teaspoons dried tarragon
1 teaspoon ground coriander
5 dried bay leaves
Salt and freshly ground black pepper
2 cups dry white wine
2 cups tomato puree
1/2 cup Homemade Chicken Stock, or canned low-sodium chicken broth, skimmed of fat
3/4 cup raisins
1 cup pimiento-stuffed green olives, thinly sliced
Easy Cuban Black Beans
12 sunny-side-up fried eggs (optional)

Steps:

  • Heat olive oil in a wide, shallow stockpot over medium heat. Add onions and garlic; cook, without browning, 4 minutes. Add red and green bell peppers; cook until onions are soft and translucent, about 10 minutes.
  • Raise heat to high; add turkey, cumin, oregano, tarragon, coriander, and bay leaves. Season with salt and pepper. Break meat up into small pieces; cook until opaque, about 7 minutes. Add wine; cook until most of the liquid has been absorbed, about 15 minutes.
  • Reduce heat to medium low. Add tomato puree and chicken stock; stir to combine. Simmer until most of liquid has been absorbed, about 20 minutes. Stir in raisins and olives; cook 2 minutes. Serve with Cuban black beans; top with fried eggs, if desired.
