Steps:
- Mix everything together except salsa and from into a loaf then put in the oven at 350 for 40 minutes.
- Take out of the oven and cover with salsa and bake for about 25 more minutes or until done.
TURKEY SALSA MEATLOAF
This recipe was modified from one I found in the Quaker Oats "All-Time Any Time Recipes" book. Its so easy, it hardly classifies as cooking. Note that this works well with ground venison or ground beef, too.

- Heat oven to 350 degrees F.
- Using your hands, combine all ingredients, except the ketchup, in a medium bowl until well mixed.
- Spray a 8 1/2 x 4 1/2 x 2 1/2 loaf pan with cooking spray.
- Pack the meatloaf mixture into the loaf pan. Drizzle ketchup over meatloaf.
- Bake (uncovered) 1 hour and 15 minutes.
- Let stand a few minutes before slicing and serving.
MOM'S TURKEY MEATLOAF

- Preheat the oven to 350 degrees F.
- In a small bowl, stir together the oats and milk. Thinly slice 1/4 of the onion and set aside. Finely chop the remaining onion. In a large bowl, combine the turkey, oat mixture, chopped onion, bell pepper, eggs, Worcestershire sauce, ketchup, salt and a few grinds of pepper. Mix just until well combined.
- Transfer the mixture to a 9-by-13-inch baking dish and shape into a loaf about 5 inches wide and 2 1/2 inches high. Pour the tomato sauce over the meatloaf and sprinkle with the sliced onions. Bake for about 1 hour or until an instant-read thermometer registers 160 degrees.F.
- Remove from the oven and let rest for 10 to 15 minutes before slicing.
EASY SALSA MEATLOAF
A crowd pleasing meatloaf, may be made with ground beef or ground turkey. Both are yummy.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, mix the ground sirloin, salsa, bread crumbs, cheese, egg, and garlic. Season with parsley, salt, and pepper. Transfer to a 5x9 inch loaf pan.
- Bake 45 minutes in the preheated oven, or to a minimum internal temperature of 160 degrees F (72 degrees C).

- Preheat oven to 350°. Cook rice according to package directions; cool slightly. In a large bowl, combine tomato sauce, 1/2 cup salsa, onion, egg, celery, parsley, cilantro, garlic and seasonings; stir in rice. Add beef and turkey; mix lightly but thoroughly., Shape into two 8x4-in. loaves in a greased 15x10x1-in. baking pan. - Heat oven to 375ºF.
- Combine corn, tomatoes, dressing, onions, cilantro and 2 Tbsp. barbecue sauce. Refrigerate until ready to use.
- Mix turkey, stuffing mix, water, onions, chiles, eggs and 1/3 cup of the remaining barbecue sauce just until blended; shape into loaf in shallow baking dish sprayed with cooking spray.
- Bake 1 hour. After about 45 min., mix remaining barbecue sauce with preserves, mustard and chili paste in saucepan; cook on medium heat until heated through, stirring occasionally.

- In a bowl, combine egg substitute, 1/3 cup pineapple and the seasonings. Add bread crumbs; mix well. Crumble meat over mixture; mix well. Press into an 8x4-in. loaf pan coated with cooking spray. - Heat oven to 350°F. Place cereal in resealable food-storage plastic bag; seal bag and finely crush with rolling pin or meat mallet (or finely crush in food processor).
- In large bowl, stir together cereal and 1 cup salsa (mixture will be thick). Let stand 5 minutes.
- Add eggs, chili powder, cumin, salt and pepper to cereal mixture; stir until blended. Add ground beef; stir until well mixed. Press evenly in ungreased 9x5-inch glass loaf dish.
