My mother found this recipe about 20 years ago. A great find! This is a great recipe for leftover turkey or chicken. You can even use tuna or salmon. My kids LOVE it, especially paired with leftover mashed potato cakes.

¼ cup water
1 ½ teaspoons baking powder
2 cups shredded cooked turkey
½ cup all-purpose flour
1 egg
1 pinch salt and ground black pepper to taste
1 tablespoon vegetable oil, or as needed

Steps:

  • Stir water and baking powder together in a bowl (mixture should foam). Mix turkey, flour, egg, salt, and black pepper into water and baking powder. Form mixture into bite-size nuggets.
  • Heat vegetable oil in a skillet over medium heat. Fry the nuggets in the hot vegetable oil until golden brown, 5 to 8 minutes per side.

Cheesy turkey nuggets with smoking chips image

A healthy family meal that swaps chicken for leaner turkey meat, coated in a crispy Parmesan breaded crust, served with paprika fries

1 egg
3 tbsp finely grated parmesan
3 garlic cloves , 1 crushed, 2 finely chopped
500g pack turkey breast pieces, large chunks halved to make 16 pieces in all
750g large potato , cut into thick chips
2 tbsp sunflower oil
65g fresh breadcrumb (all crusts if possible)
½-1 tsp smoked paprika
salad , to serve

Steps:

  • Heat oven to 220C/200C fan/gas 7. Beat the egg in a bowl with the Parmesan, crushed garlic and some seasoning, then stir in the turkey pieces.
  • Toss potatoes in the oil, then spread out on a baking tray and bake for 15 mins.
  • Meanwhile, toss the turkey into the breadcrumbs and spread out on another baking tray. Take the chips from the oven and tip in a bowl with the chopped garlic, paprika and sea salt. Mix well, then spread back out on the tray and return to the oven with the turkey. Bake for 10-12 mins, then serve with a salad.

This is something I made for my kids tonight. I was looking for a recipe along these lines and didn't find one, so I made it up! This was easy, and much healthier than the regular "nugget" fare that's out there. They are easy to make and everybody loved them! You could make them nugget shape, but I made them about the shape of small breakfast sausages.

Number Of Ingredients 9

1 lb ground turkey
2 eggs
1 teaspoon Worcestershire sauce
1/4-1/3 cup minced onion
1 tablespoon chopped fresh parsley
1 -2 teaspoon salt
1/4 teaspoon ground black pepper
1 -1 1/2 cup panko breadcrumbs or 1 -1 1/2 cup dry breadcrumbs
1/4 cup vegetable oil (for stove top frying)

Steps:

  • Mix the turkey with one of the eggs, the Worcestershire sauce, onion, parsley, salt, pepper and 3/4 cup of the panko breadcrumbs.
  • Beat the egg in a shallow bowl or dish. Set aside.
  • Put the remainder of the panko in a shallow dish. Set aside.
  • Form the turkey mixture into your desired shape. You don't want them too big or thick; you want them to be cooked inside before the outside gets too brown.
  • Dip the turkey nuggets into the egg, then roll in the panko crumbs.
  • Fry over medium heat in the oil. Use just as much as you think you need, they don't need to swim in it! As they brown turn them, so they get nice and crispy all over.
  • Cool slightly on a paper towel before serving to your kids -- with ketchup!

  • Mix the flour with the spice mix; I use Cavender's mostly. Mix together the eggs, buttermilk and mustard. Mash the Saltines. I do this by putting them in a heavy freezer bag and crushing them with a rolling pin.
  • Dredge about 1/4 of the turkey chunks in the flour, then the egg wash, then put them in the freezer bag with the crushed Saltines and shake well to coat. Before you take them out, press the crushed Saltines into the meat. Set the chunks on a baking sheet, and do the rest of the turkey, 1/4 of it at a time.
  • In an ideal world, you would rest the breaded turkey nuggets in the fridge for 1 hour. Do this if you can, because it will make the coating stick to the turkey better. If you are rushed for time, you can skip this.
