ITALIAN TURKEY AND PARMESAN MEATLOAF
A modified version of this (http://www.food.com/recipe/turkey-meatloaf-54752) recipe. I love Italian flavors and cheese, so I changed the recipe a bit for personal taste. It turned out great so I want to share it :-).

Steps:
- 1. Preheat oven to 350 degrees F.
- 2. Dice onion and mushrooms. Mince garlic. Sautée in a skillet with EVOO until onions are golden and translucent. Season with seasoned pepper. Remove from heat.
- 3. Grate carrot into a large mixing bowl then add 1/2 cup BBQ sauce, 4 oz shaved Parmesan cheese and remaining ingredients and blend thoroughly. When finished, mixture should be firm enough to maintain a loafed shape. If needed, add more bread crumbs to stiffen mixture.
- 4. Place ground turkey mixture into 5 small loaf pans approx 5x3 inches (I purchased mine from grocery store in a set of 5 disposable pans with lids).
- 5. Bake at 350 degrees for approximately 40-45 minutes. With approximately 15 min remaining, spread remaining BBQ sauce over loafs then sprinkle with remaining Parmesan cheese. When done internal temp should be 165 degrees F and cheese on top melted and golden.

- Soften onion in small skillet.
- Mix all ingredients together in a large bowl.

- Preheat the oven to 350 degrees. Lightly grease a loaf pan with cooking spray, set aside. In a large bowl, combine the ground turkey and beef, eggs, breadcrumbs, thyme, oregano, basil, garlic, onion, salt, pepper and Parmesan cheese. To not over handle the mixture otherwise it will get tough. Place the mixture in the greased loaf pan and form into a loaf. Top the meatloaf with pasta sauce. Place filled loaf pan on a baking sheet and bake in the preheated oven for 40-45 minutes. Remove the meatloaf from the oven and sprinkle the top with the remaining shredded cheese. Place the meatloaf back in the oven and bake until the cheese is melted. Remove the meatloaf from the oven and allow to rest for 5-10 minutes before serving/slicing. Garnish with parsley if desired.
BEST TURKEY MEATLOAF
After much trial and error trying to make a more healthy meatloaf, I came up with this recipe. It is important to make this on a baking sheet so the liquids can be drained off the meatloaf. Also, do not put the topping on before the meatloaf has cooked for 30 minutes. Turkey creates a lot of juices, so if you put the topping on first it will become watery and runny.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a jelly roll pan.
- Mix ground turkey, buttery round cracker crumbs, milk, onion, egg, salt, garlic, and black pepper in a bowl; shape into a loaf and place on the prepared jelly roll pan.
- Mix ketchup, brown sugar, and Worcestershire sauce in a separate bowl; set aside.
- Bake meatloaf in preheated oven for 30 minutes; remove from oven and drain liquids. Top meatloaf with ketchup topping. Return loaf to oven and continue baking until no longer pink in the center, about 30 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

- Fold an 18-in. square piece of heavy-duty foil in half to make an 18x9-in. strip. Place strip on bottom and up sides of a 5- or 6-qt. slow cooker. Coat strip with cooking spray., In a large bowl, combine the first 6 ingredients. Add turkey, 2 cups cheddar cheese and Parmesan cheese; mix lightly but thoroughly (mixture will be moist). Shape meat into an 8x5-in. loaf; place in center of strip., Cook, covered, on low 3-4 hours or until a thermometer reads 165°. Sprinkle with remaining 1/2 cup cheddar cheese during the last 20 minutes of cooking. Using ends of foil strip as handles, remove meat loaf to a platter. Let stand 15 minutes. , Freeze option: Prepare meat loaf as directed, omitting cheddar cheese over top. Securely wrap cooled meat loaf in foil, then freeze; freeze remaining 1/2 cup cheddar cheese in a freezer container. To use, partially thaw in refrigerator overnight. - In a bowl, combine the water, teriyaki sauce and bread cubes; let stand for 5 minutes. Add the egg, onion, green pepper, mozzarella and cheddar cheeses, garlic powder and celery seed.
