4 Cups Roasted Spaghetti Squash, ((Recipe link in notes section))
14 Ounces Turkey Sausage
8 Ounces Baby Bella Mushrooms
2 Cloves Garlic
1 Shallot
2 Tablespoon Light Butter
2 Tablespoon White Whole Wheat Flour
1 Cup Fat Free Half and Half
½ Cup Low Sodium Vegetable Broth
1 Teaspoon Salt
½ Teaspoon Pepper
½ Teaspoon Dried Oregano
1 Teaspoon Red Pepper Flakes
5 Ounces Baby Spinach
1 ½ Cup Canned Garbanzo Beans, (Rinsed and drained)
¼ Cup Reduced Fat Shredded Mozzarella Cheese
2 Tablespoons Parmesan Cheese
2 Tablespoons Breadcrumbs
Basil, (For garnish)

Steps:

  • Preheat oven to 400°.
  • Roast Roasted Spaghetti Squash according to recipe instructions.
  • Dice mushrooms and set aside.
  • Mince shallot and set aside.
  • Mince garlic and set aside.
  • Slice turkey sausage in half, then cut into pieces and set aside.
  • Heat large skillet over medium low heat and add butter.
  • Once butter is melted, add diced mushrooms and shallot. Sauté for 7 minutes until mushrooms are tender.
  • Add garlic and sauté 1 minute.
  • Sprinkle flour on top and mix well. Let cook 1 minute.
  • Slowly add half and half and stir continuously.
  • Slowly add vegetable broth and stir continuously.
  • Let cook until sauce and thickened, about 5 minutes.
  • Add salt, pepper, dried oregano, and red pepper flakes. Mix well.
  • Add baby spinach, sausage, and garbanzo beans. Let cook until spinach has wilted.
  • Add mozzarella cheese and shredded spaghetti squash to skillet and mix well. Turn off heat and let rest.
  • Spray casserole dish with cooking spray and spread squash mixture into the dish, spread evenly.
  • In a small bowl, mix breadcrumbs and parmesan cheese. Sprinkle on the top of the casserole.
  • Bake for 15 minutes then broil on high for 3 minutes.
  • Garnish with fresh basil.

1 lb ground turkey
1 cup onion, diced
1 cup green bell pepper, diced
salt, to taste
pepper, to taste
2 cups tomato, diced
3 cloves garlic
½ teaspoon dried thyme
½ teaspoon dried basil
½ teaspoon dried oregano
1 medium spaghetti squash
1 cup shredded mozzarella cheese, divided
green onion, to serve

Steps:

  • Preheat oven to 350°F (180°C).
  • Heat the olive oil over medium heat in a large skillet.
  • Add the turkey and cook until browned, about 5-6 minutes.
  • Add the onion, bell pepper, salt, and pepper. Cook for 5-6 minutes.
  • Add the tomatoes, garlic, thyme, basil, and oregano. Cook for 2-3 minutes.
  • Add the spaghetti squash. Cook for 4-5 minutes until most of the liquid has cooked off.
  • Add half of the mozzarella and stir until cheese has melted, about 1-2 minutes.
  • Remove from heat and ladle the mixture into a baking dish.
  • Bake for 20 minutes.
  • Carefully remove then add the remaining mozzarella cheese.
  • Bake for an additional 10 minutes.
  • Carefully remove and allow to cool for 5-10 minutes.
  • Garnish with green onions, if desired and serve.

1 spaghetti squash
1 tsp olive oil
half of a medium onion (chopped)
kosher salt & pepper
1 clove garlic (minced)
one pound hot Italian turkey sausage (removed from its casings)
one 10 oz. package mushrooms (sliced)
one 28 oz. can crushed tomatoes
one 15 oz. container ricotta cheese (I used part skim)
1 cup about 4 oz. shredded mozzarella cheese
1/4 cup grated parmesan cheese

Steps:

  • Prepare the spaghetti squash by following these instructions or these instructions for cooking in the oven or these instructions for cooking in the microwave.
  • Scrape out the "noodles" into a large bowl using a fork and set aside.
  • Preheat oven to 400°F.
  • Meanwhile, heat the olive oil in a large saucepan over medium heat.
  • Add the onion, season with salt and pepper, and cook for about 3-4 minutes, or until onion starts to soften and become translucent.
  • Add the garlic and cook for another minute or two.
  • Add the turkey sausage to the skillet, and cook until nearly cooked through, crumbling it as it cooks.
  • Then add the mushrooms and cook for another 3-5 minutes.
  • Add the crushed tomatoes and heat through for a minute or two.
  • Combine the sauce and the spaghetti squash, and transfer to a 9/13 casserole or glass baking dish.
  • Place dollops of ricotta over the top of the spaghetti squash mixture and stir in partially.
  • Top with shredded mozzarella and parmesan and bake for 25-20 minutes, or until cheese is melted and lightly browned, and casserole is heated through.
  • Let sit for 5 minutes or so before serving.

I had a recipe for a 4-cheese baked spaghetti squash that I really liked, but it was hard to eat. It was baked in the shell of the squash, and then mixed together after baking. I wanted to try it as a casserole, and after a few tries, this is what I came up with.

1 (3 pound) spaghetti squash, halved and seeded
2 tablespoons olive oil, divided, or as needed
¼ teaspoon garlic-pepper seasoning, divided, or more to taste
1 (16 ounce) package sliced fresh mushrooms
1 large onion, diced
1 medium jalapeno pepper, seeded and diced
1 bulb garlic, cloves peeled and minced
1 pound ground pork sausage
1 ½ teaspoons fennel seeds
salt and ground black pepper to taste
1 pound broccoli, stem removed and broken into florets
2 tablespoons chicken soup base (such as Better than Bouillon®)
1 ½ teaspoons dried oregano
1 ½ teaspoons ground thyme
1 ½ teaspoons dried basil
1 ½ cups grated Parmesan cheese
1 ½ cups shredded Cheddar cheese
1 ½ cups shredded mozzarella cheese
nonstick cooking spray
1 ½ cups whipping cream

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Brush the squash flesh with 1 tablespoon olive oil and sprinkle 1/8 teaspoon garlic-pepper over top; rub the edges and insides to make sure it's distributed evenly. Place on a baking sheet.
  • Bake in the preheated oven until tender when pierced with a fork, 45 to 60 minutes.
  • Meanwhile, heat 1 tablespoon olive oil in a large cast iron pan over low heat. Add mushrooms, onion, and jalapeno and cook, stirring occasionally, for 30 minutes. Add garlic and cook for about 10 more minutes. Move everything to the outside edges of the pan; add sausage, fennel seeds, salt, and pepper to the center. Cook and stir until pork is browned, crumbly, and no longer pink, about 10 minutes. Fold in the broccoli and remove from the heat.
  • Remove squash from the oven and set aside to cool a bit. Leave the oven on.
  • Mix chicken base, oregano, thyme, and basil together in a large bowl. Add Parmesan cheese and mix thoroughly. Add Cheddar and mozzarella and mix until well combined; it may be a little clumpy, but as long as it's only small clumps, that's okay.
  • Shred squash flesh onto a sheet pan; use an oven mitt to hold it if it's still too hot. Toss with remaining garlic-pepper and season with salt and pepper if you want to. (Just remember the chicken base has a fair amount of salt in it already.)
  • Spray an 11x13-inch baking dish with nonstick spray. Spread 1/2 of the shredded squash evenly over the bottom of the dish and top with 1/2 of the pork-vegetable mixture. Repeat for a second layer. Pour cream over the entire dish.
  • Bake, uncovered, in the preheated oven for 30 minutes.

1 (4 lb) spaghetti squash
4 Italian turkey sausage links, casings removed (about 12 oz.total)
2 tablespoons parmesan cheese, shredded
2 teaspoons garlic and herb seasoning (I use Mrs. Dash)
1 medium tomatoes, diced
1 cup chopped Baby Spinach

Steps:

  • Preheat oven to 350 degrees. Mist a 9x13 baking pan with Pam. Cut squash in half lengthwise, scoop out seeds and place cut side down in baking pan. Bake 45 minutes until tender.
  • Remove squash from oven and let cool slightly. Remove squash from pan, and using a fork, scrape out flesh back into pan. Spread out slightly.
  • Mist a large skillet with Pam. Crumble sausage into skillet and cook over med-high heat until no longer pink, breaking into small pieces with spoon. Remove from heat.
  • Sprinkle 1 tbsp parmesan cheese and 1 tsp Mrs. Dash over squash. Top with tomato spinach and crumbled sausage; sprinkle with remaining 1 tbsp parmesan and remaining 1 teaspoons seasoning. Lightly coat the mixture's surface with Pam.
  • Bake 20-25 minutes more, or until casserole heats through and cheese melts.

1 tablespoon canola oil
2 cups sliced yellow summer squash
1 medium onion, chopped
2 large eggs
1 cup evaporated milk
1 cup shredded part-skim mozzarella cheese
6 tablespoons butter, melted
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup crushed saltines (about 30 crackers)

Steps:

  • In a large skillet, cook turkey in oil over medium heat until no longer pink. Add the squash and onion. Cook until vegetables are crisp-tender; drain. , In a small bowl, combine eggs, milk, cheese, butter, salt and pepper. Stir into the turkey mixture. Transfer to a greased 8-in. square baking dish. 1 medium spaghetti squash (about 4 pounds)
1 pound lean ground turkey
2 cups sliced fresh mushrooms
1 medium onion, chopped
2 garlic cloves, minced
1/2 cup white wine or beef stock
3 tablespoons cornstarch
2 cups beef stock
2 tablespoons Worcestershire sauce
1 tablespoon Montreal steak seasoning
1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
1/4 cup half-and-half cream
Optional: Grated Parmesan cheese and minced fresh parsley

Steps:

  • Cut squash in half lengthwise; discard seeds. Place squash cut side down on a microwave-safe plate. Microwave, uncovered, on high until tender, 15-18 minutes., Meanwhile, in a large nonstick skillet, cook the turkey, mushrooms and onion over medium heat until turkey is no longer pink, breaking it into crumbles; drain. Add garlic; cook 1 minute longer. Stir in wine., Combine cornstarch and stock until smooth. Add to pan. Stir in the Worcestershire sauce, steak seasoning and thyme.   • Place a rack in the center of your oven and preheat the oven to 400 degrees F. Roast the spaghetti squash according to this recipe for Roasted Spaghetti Squash. When cool enough to handle, pull the squash strings out of the squash's center with a fork and transfer to a large mixing bowl. The squash strings should look like spaghetti.
  • Reduce the oven temperature to 350 degrees F. Heat the olive oil in a large, deep skillet over medium high. Add the turkey, onion, bell pepper, salt, and black pepper. Cook, breaking apart the meat, until meat is browned and the vegetables are tender, about 8 minutes. Add the drained tomatoes, garlic, Italian seasoning, and red pepper flakes. Let cook until most of the liquid from the tomatoes has cooked off, about 4 minutes, and then add the reserved squash. Cook and stir until most of the remaining liquid has cooked off, about 1 to 2 minutes more, increasing the heat if needed. Stir in 1/2 cup of the shredded cheese. There may be some liquid remaining in the pan.
  • Lightly coat a deep 8x8-inch baking dish or 2-quart casserole dish with nonstick spray. With a slotted spoon, scoop the squash mixture into the pan in an even layer, discarding any excess liquid (some in the pan is OK—just not too much). Bake, uncovered, for 20 minutes. Remove from the oven and sprinkle with the remaining 1/2 cup cheese, and then return to the oven and bake until the cheese melts, about 5 to 10 additional minutes. For an extra-golden-brown top, place the casserole under the broiler for a few minutes. Remove from the oven, sprinkle with parsley and/or basil, and let rest 5 minutes. Serve hot.
