- Combine the turkey, pork fatback, sage, garlic, chives, pepper, nutmeg, orange zest and 2 tablespoons salt in a large bowl. Transfer to a large plastic zip-top bag and refrigerate overnight.
- At least 30 minutes before grinding the meat, place all of your tools (including the meat grinder parts, stand mixer bowl, stand mixer paddle attachment and sausage stuffer parts) in the freezer to chill.
- Using your meat grinder, grind the marinated meat mixture through the small die plate into the chilled bowl of the stand mixer. Refrigerate at least 30 minutes, then return the mixture to the mixer. Add the milk and wine and beat on medium speed using the chilled paddle attachment until combined. Refrigerate until ready to use.
- Stuff the sausages (see Cook's Note) and, for best results, refrigerate overnight.
- Before cooking, pierce each sausage several times with a pin. Grill over medium heat until the center registers 160 degrees F, 10 to 12 minutes. (You can also pan-fry or broil the sausages.) Serve in split toasted buns with spicy brown mustard and grilled red onions.

- In 12-inch nonstick skillet, heat oil over medium-high heat. Add sausage; cook 8 to 10 minutes or until no longer pink and completely cooked (at least 165°F). Using slotted spoon, transfer to plate, and keep warm.
- Reduce heat to medium; add onions and peppers to drippings. Cook 8 to 10 minutes, stirring occasionally, until tender. Stir in garlic and seasoning; cook 30 to 60 seconds or until garlic is fragrant.

- In a large skillet, heat 1 tablespoon oil over medium-high. Add onions and peppers; cook, stirring occasionally, until beginning to brown, about 7 minutes. Season with salt and pepper and add 3/4 cup water; cover and simmer 3 minutes. Uncover and cook, stirring occasionally, until vegetables are soft and liquid has evaporated, 2 minutes. Cover and refrigerate 1 cup onion-pepper mixture for later use.
- Meanwhile, heat 1 teaspoon oil in a small skillet over medium. Add sausages and cook, turning occasionally, until browned and cooked through, 10 to 12 minutes. Place sausages and vegetables on bread and top with mustard if desired.

HOMEMADE SPICY TURKEY SAUSAGE

- Prepare the smoker. In a large mixing bowl, add the turkey. In a small mixing bowl, combine the remaining ingredients together. Mix well. Toss the turkey with the seasoning blend and mix well. Cover and refrigerate for 24 hours. Grind the meat twice in a meat grinder fitted with a 1/2-inch die. A food processor could also be used to grind the meat. Stuff half of the mixture into 1 1/2-inch casings, forming 6-inch links. Form the remaining into 3 (1/2 pound) patties. You can either use the sausage fresh or smoke the sausage. For the smoked sausage: Place the sausage in the smoker and cook for 10 to 15 minutes.
HOMEMADE TURKEY SAUSAGE
These low-fat homemade turkey sausage patties are simple to prepare and can be refrigerated or frozen. Be sure to buy ground turkey with some fat in it, ideally 93 percent lean, because some fat is needed to achieve that rich sausage essence. - Whisk together the fennel seed, sage, salt, pepper, thyme, garlic powder and allspice in a small bowl.
- Place the turkey in a medium bowl, then sprinkle the seasoning blend over it.
- Use your clean hands or 2 forks to gently work the seasoning into the meat, being careful not to overmix.
- It's OK if they are not absolutely evenly distributed throughout.
- Form the mixture into 8 (3 inch) patties. May be refrigerated to meld flavors or frozen for future use.
- Heat half the oil in a medium skillet over medium high heat. Once the oil shimmers, add half the patties; cook until nicely browned on the outside and cooked through, about 3 minutes per side.
- Transfer to a plate; repeat with the remaining oil and patties.

Increase the heat to moderately high, sauté the mixture, uncovered, stirring frequently and adding more water if necessary to keep the mixture from sticking, for 20 minutes, or until the vegetables are tender, and sprinkle it with the scallions.
