- Melt butter in 10-inch skillet until sizzling; stir in garlic, salt, pepper and thyme. Add turkey tenderloins and onion. Cook over medium-high heat, turning occasionally, 10-12 minutes or until turkey is browned.
- Reduce heat to low. Cover; cook 25-30 minutes or until turkey is fork tender. Stir relish into pan juices. Slice turkey; serve with relish mixture and orange slices, if desired.

- Cut tenderloins widthwise in half. Slice each half lengthwise in half, but do not cut all the way through. Open and flatten each piece. Sprinkle both sides with poultry seasoning. In a large skillet over medium-high heat, cook turkey in oil and butter for 3-4 minutes on each side. Reduce heat to medium-low; cover and cook for 12-15 minutes or until juices run clear. Remove turkey to platter and keep warm. Add cranberry sauce, jelly, mustard and allspice to skillet; simmer for 2-3 minutes. Spoon over turkey.

- Mix lemon juice, oil, Worcestershire sauce and pepper in shallow glass or plastic dish. Add turkey, turning to coat. Cover and refrigerate at least 1 hour but no longer than 24 hours.
- Brush grill rack with vegetable oil. Heat coals or gas grill. Grease 9-inch square aluminum pan.
- Remove turkey from marinade; reserve marinade. Cover and grill turkey 4 to 5 inches from medium heat 15 minutes. While turkey is grilling, stir stuffing mix with amount of water called for on package. Spoon stuffing into aluminum pan; cover with aluminum foil.
- Add stuffing to grill rack. Brush turkey with marinade and turn. Cover and grill 10 to 15 minutes longer or until juice is no longer pink when center of thickest piece of turkey is cut. Discard any remaining marinade. Remove stuffing and turkey from grill; let stand 10 minutes.
- Cut 1 1/2 turkey tenderloins into 1/2-inch slices; serve with stuffing. Refrigerate remaining turkey to use for Easy Turkey Fajitas.

- 1. Heat oven to 400°. Spray square pan, 9 X 9 X 2 inches, with cooking spray. Cut pocket lengthwise in each turkey breast tendeloin to within 1/2 inch of ends. 2. CRANBERRY STUFFED TURKEY BREASTS
I made these once for a holiday dinner party, and they were such a hit that I started making them for Thanksgiving instead of a whole turkey.

- Preheat the oven to 350 degrees F (175 degrees C). Prepare stuffing mix according to package directions. Set aside to cool.
- With a sharp knife, butterfly breasts open to lay flat. Place each breast between two sheets of waxed paper, and flatten with a mallet. Spread the prepared stuffing to within 1/4 inch of the edge of each breast. Sprinkle each one with chopped pecans and dried cranberries, reserving some of the cranberries for garnish. Roll up tightly in a jellyroll style, starting with the long end. Tuck in ends, and tie in sections with string, about 4 sections around the middle and one running the length of the roll to secure the ends.
- Heat olive oil in a large cast iron skillet over medium-high heat. Carefully brown rolls on all sides.
- Place skillet in oven, uncovered. Bake in a preheated 350 degrees F (175 degrees C) oven for 1 hour, or until the internal temperature is at 170 degrees F (78 degrees C) when taken with a meat thermometer. Do not let these get overly dry.
- Allow rolls to set for 15 minutes before removing string, and slicing into 1/2 to 3/4 inch circles. Leave one roll whole, and slice the other for presentation. Stuffing will be spiraled into meat. Present on your prettiest platter on a bed of curly lettuce, and garnish by sprinkling with the remaining 1/2 cup pecan halves and the reserved dried cranberries.

PORK TENDERLOIN WITH CRANBERRY STUFFING
This recipe was featured years ago in Homemakers Magazine. It is quite easy to make and so elegant to serve for a dinner party or a special evening for two.

Steps:
- To make the stuffing, melt the butter in a large saucepan and saute the onion until tender but do not brown.
- Stir in the cranberries, celery seed, sage, thyme and allspice.
- Add the breadcrumbs and stir until evenly mixed.
- Season with salt and pepper.
- Cut the tenderloins lengthwise but do not cut right through.
- The meat should open like a book.
- Pound lightly with a cleaver or rolling pin to flatten slightly.
- Spread the stuffing on one side of the meat, fold the other side over the stuffing and tie with cotton string.
- Place the meat on a rack in a roasting pan.
- Rub with butter.
- Bake in a preheated 325 degree F oven for 20 to 30 minutes to the pound for approximately 1 hour.
- Baste several times with the pan juices.
- Let stand for 10 minutes before serving.
