1/2 cup cranberry sauce
1/4 cup mayonnaise
1/2 teaspoon grated orange zest
Vegetable oil, for frying
1 1/2 cups leftover stuffing
1 cup finely diced cooked turkey
1/4 cup freshly grated Parmesan cheese
1/2 teaspoon chopped rosemary
3 eggs
1/2 cup flour
1 cup panko breadcrumbs
4 ounces smoked mozzarella, diced into 16 (1/2-inch) pieces
Kosher salt

Steps:

  • For the dipping sauce: Puree the cranberry sauce, mayonnaise and orange zest in the bowl of a food processor until evenly combined. Refrigerate until ready to use.
  • For the bites: Heat 3 inches of vegetable oil in a medium saucepan over medium heat to 350 degrees F on a deep-fry thermometer. Put the stuffing, turkey, Parmesan, rosemary and 1 egg in a medium bowl and mix well until the mixture is evenly moistened. Place the flour, remaining 2 eggs and the panko in 3 separate shallow bowls. Beat the eggs to break apart until 1 cohesive color.
  • Shape 1 tablespoon of the turkey mixture into a ball. Press a piece of smoked mozzarella into the middle of the ball and reshape the mixture around the cheese. Bread the ball by rolling it first in the flour to coat, then the egg and lastly the panko. Repeat with the remaining turkey mixture and breading ingredients. Fry 4 to 5 or the balls at a time until deep golden brown and hot all the way through, 2 to 3 minutes. Remove to a paper-towel lined plate and sprinkle with a pinch of salt. Serve hot alongside the dipping sauce.

4 cups cornflakes, finely crushed (about 1 3/4 cups crumbs)
Grated zest and juice of 1 lemon
2 tablespoons plus 1 teaspoon honey mustard
1 large egg white, lightly beaten
1 1/2 pounds skinless, boneless turkey breast, cut into strips
2 cups cranberries (thawed, if frozen)
1 pear (such as Anjou or Bartlett), finely chopped
1/2 cup sugar
1 pound small carrots, greens trimmed
4 tablespoons unsalted butter, melted

Steps:

  • Position racks in the upper and lower thirds of the oven and preheat to 450 degrees F. Place the carrots on a large sheet of foil; drizzle with 2 tablespoons melted butter and season with salt and pepper. Fold up the edges of the foil and add 1/4 cup water, then seal into a packet. Set on a baking sheet and roast on the bottom oven rack until tender, 25 minutes.
  • Meanwhile, mix the cornflakes, the remaining 2 tablespoons melted butter, the lemon zest and 1/4 teaspoon each salt and pepper in a shallow dish. Whisk 2 tablespoons mustard and the egg white in another dish. Coat the turkey in the mustard mixture; dredge in the cornflake mixture. Place on a wire rack set on a baking sheet. Roast on the top oven rack until cooked through, 15 minutes.
  • Combine the cranberries, pear, sugar, lemon juice and 2 tablespoons water in a small saucepan; bring to a boil, stirring. Reduce the heat to medium low; simmer until the cranberries burst, 5 minutes. Transfer to a blender, add the remaining 1 teaspoon mustard and puree until smooth. Season with salt and pepper. Serve with the turkey and carrots.

12 sheets phyllo dough (14x9 inches)

DIPPING SAUCE:
1/2 cup jellied cranberry sauce
1/4 cup Dijon mustard

Steps:

  • In a small skillet, cook turkey over medium heat until no longer pink; drain. Remove from the heat. Stir in the cheese, parsley, cranberry sauce, 1 teaspoon walnuts, honey, mustard, salt and pepper. , Place one sheet of phyllo dough on a work surface with a long side facing you; brush with butter. Repeat with three more sheets of phyllo, brushing each layer. (Keep remaining phyllo covered with plastic wrap and a damp towel to prevent it from drying out.), Cut the stack widthwise into four strips. Place 2 tablespoons turkey mixture along one long side of each strip; roll up tightly. Pinch edges to seal. Cut roll in half; place seam side down on an ungreased baking sheet. Repeat. 2 small jalapeno peppers, stemmed and chopped
4 green onions, chopped
½ cup chopped fresh cilantro

8 ounces shredded sharp Cheddar cheese
4 (12 inch) spinach flour tortillas
32 thin slices turkey lunch meat

Steps:

  • Combine cranberries, jalapenos, green onions, and cilantro in the bowl of a food processor; blend until everything is finely chopped. Transfer mixture to a bowl. Stir in sugar and lime juice. Cover and refrigerate for 1 hour.
  • Mix cream cheese and Cheddar cheese together in a bowl until evenly combined. Spread mixture evenly on top of tortillas to cover. Spread 1/4 cup of cranberry mixture on one half of each tortilla. Layer 8 slices of turkey lunch meat over cranberry mixture.

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch pan with cooking spray.
  • Whisk melted butter with Dijon mustard, dried onion, and Worcestershire in a small bowl.

Easy ... A few fresh ingredients, some canned (Pillsbury type) crescent rolls, spreadable cream cheese and leftover cranberry sauce. This is a great little sandwich. Serve with some butternut, sweet potato, or even a potato soup for a great quick easy week night dinner. This is a great way to use up, the cranberry sauce, turkey and makes a nice light dinner.

1 1/2 cups whole cranberry sauce
1 pear, peeled and diced fine
1 small shallot, diced fine
1/4 cup apple cider (you could use apple juice)
1/2 teaspoon allspice
1/8 teaspoon ground ginger
2 (8 ounce) cans Pillsbury Refrigerated Crescent Dinner Rolls
2 cups fine diced turkey
2 scallions, fine chopped (whites and greens)
1 shallot, diced fine
1 (4 ounce) container spreadable herb cheese spread
1/4 cup pecans, fine chopped (one of those small pre-chopped bags)
1/2 teaspoon butter
1 egg, beaten

Steps:

  • Sauce -- Mix everything; cranberry, pear, shallot, seasoning and cider in a small sauce pan and just simmer on low. Will take around 20 minutes for the pear to soften. Just stir now and then, nothing more. Just let it hang out on low heat. This is your dip.
  • Turkey -- In a small saute pan, add the butter and bring to medium high heat. Add the shallot and cook 1 minute, then add the scallions, nuts and turkey and cook another 2 minutes until heated through. Remove and let cool slightly before you fill your turnovers.
  • Turnovers -- You can use a baking sheet sprayed with non-stick spray, but I prefer to use parchment paper for no clean up. Heat the oven to 375.
  • Crescent Rolls -- Roll out both cans of crescent rolls on the parchment paper or on the baking sheet. I like to use my rolling pin and roll, just until the seams are pressed together and it resembles one large sheet. You will have two flat sheets. Cut each sheet with a pizza cutter or a knife; the top left corner to the bottom right corner corner and vice versa to make 4 large triangles per sheet. Two (2) cans will give you 8 triangles.
  • Filling -- Spread the Boursin or herbed cheese on each triangle in the center and then place a couple of tablespoons of the turkey mix on top of that and bring the corners up to the center and press together. I just crimp together in the middle and sort of make like a small package. No exact method.
  • Brush with the beaten egg and cook 15-18 minutes on the baking sheet until golden brown.
  • Serve -- Once golden brown, just serve with the warm cranberry sauce for dipping and a nice bowl of soup for an easy midweek dinner. ENJOY!

3 tablespoons stone ground mustard
1 cup gravy
1 cup chicken stock,
freshly ground black pepper, to taste
2 French rolls, halved lengthwise
6 oz turkey breast, thinly sliced
4 slices swiss cheese

Steps:

  • Make the cranberry mustard sauce: In a small bowl, mix together the cranberry sauce and mustard.
  • Make the gravy au jus: In a small saucepan, whisk together the gravy and chicken stock over medium heat until gently simmering. Season with black pepper as needed. Remove from the heat and divide between 2 small bowls for dipping.
  • Turn the broiler on high.
  • Place the bottom of each French roll, cut-side up, on a baking sheet. Spread about 2 tablespoons of cranberry mustard sauce on each half, then layer on the sliced turkey. Top with the Swiss cheese. Broil for 30 seconds.
  • Remove the pan from the oven and add the top buns, cut-side up. Broil for another 30 seconds, until the top buns are golden brown and the cheese is melted and lightly bubbling.
  • Place the top buns on top of the melted cheese and transfer to plates with the au jus alongside for dipping. Serve immediately.
  • Enjoy!

2/3 cup ground walnuts

Cranberry Dip:
1 (8-ounce) can jellied cranberry sauce
1/4 cup sour cream
2 tablespoons horseradish

Steps:

  • Combine sour cream, lemon juice, horseradish and salt in nonmetal bowl; blend well. Add uncooked turkey breast pieces. Toss to coat. Cover; marinate in refrigerator 2-24 hours. In shallow pan, combine bread crumbs and ground walnuts. Remove turkey from marinade. Roll in crumbs. Place on greased 10x15-inch pan. Drizzle melted margarine over turkey. Bake at 350° for 35 minutes or until golden brown. Serve warm or cold with Cranberry Dip. Cranberry Dip: Mix all ingredients.
