APPLE AND ROSEMARY TARTE

Number Of Ingredients 12

For the pastry:
1 1/2 cups all-purpose flour
Large pinch sea salt
7 tablespoons unsalted butter, chilled and cut in small pieces
5 to 6 tablespoons chilled water.
For the filling:
1 tablespoon fresh rosemary leaves
6 good-sized tart apples, cored, peeled and cut in 1/4-inch thick slices
2/3 cup sugar
For the egg wash:
1 small egg
1 teaspoon water

Steps:

  • Make the pastry:
  • Place the flour and salt in a food processor, and process to mix. Add the butter and process until the mixture resembles coarse cornmeal. With the food processor running, slowly add the water and process just until it is combined and the mixture is crumbly. Turn it out onto a lightly floured surface and gently press it into a ball. Let the pastry sit, covered, at room temperature for 1 hour.
  • Preheat the oven to 425°F.
  • Lightly flour a work surface, and roll out the pastry to a 14-inch circle. Roll the pastry around the rolling pin and unroll it in a 9 1/2 inch, removable bottom tart tin, with the edges of the pastry overlapping evenly all around. Gently fit the pastry against the sides of the tart tin.
  • Make the filling:
  • Mince the rosemary. Place half the apple slices in the pastry, sprinkle with half the sugar and the rosemary. Top with the remaining apples and the remaining sugar. Bring the edges of the pastry up and over the apples- they won't completely cover the apples, which is fine.
  • Make the egg wash:
  • Whisk together the egg and the water, and brush the pastry with the mixture. Place the tart tin on a baking sheet, and bake in the lower third of the oven until the pastry is golden and the apples are softened and juicy, about 30 minutes.
  • Remove from the oven and place the tart tin on an upturned bowl to remove the sides. Let the tart cool to lukewarm, or room temperature,then serve.

Number Of Ingredients 9

All-purpose flour, for rolling out dough
Walnut Pate Brisee
4 Rome apples
Juice of 1 lemon
2 sprigs fresh rosemary, needles only
1/4 cup sugar
2 teaspoons cornstarch
2 tablespoons unsalted butter, chilled and cut into small pieces
8 Glazed Walnut Halves

Steps:

  • Lightly dust a clean work surface with flour; have ready a 9-inch fluted tart pan with a removable bottom.
  • Roll one disk of dough to an 11-inch circle, with an 1/8-inch thickness. Roll dough around rolling pin, and unroll over tart pan. Using your fingers, gently press dough into pan. Trim any excess dough flush with the edges of the pan, and chill 30 minutes.
  • Line a baking pan with parchment. Roll remaining disk of dough to an 1/8-inch thickness. Using a fluted pastry wheel, cut into 10 3/4-by-12-inch strips. Transfer strips to pan, and chill 30 minutes.
  • Peel, core, and cut each apple into 16 wedges. Place wedges in medium bowl; toss with lemon juice and rosemary. In a small bowl, combine sugar and cornstarch. Sprinkle sugar mixture over apples; toss to coat.
  • Heat oven to 400 degrees. Line crust with a 12-inch circle of parchment, and fill with pie weights or dried beans. Bake until crust starts to take on color, about 15 minutes. Remove weights and parchment. Reduce temperature to 350 degrees; continue baking until crust has cooked through, about 7 minutes.
  • Fill crust with apple mixture, and dot with butter. Using chilled strips of dough, weave lattice pattern over top.
  • Bake until lattice crust has slightly browned and apples are tender, about 1 hour. Remove from oven; transfer to a wire rack to cool. Decorate with glazed walnuts.

1 tablespoon unsalted butter
3 medium Gala apples, peeled, cored, halved, and sliced 1/4 inch thick
8 medium yellow onions, halved and thinly sliced
3 tablespoons cider vinegar
1/2 teaspoon coarse salt
All-purpose flour, for dusting
Rosemary-Manchego Tart Dough
1 cup coarsely grated manchego cheese (2 to 3 ounces)
Freshly ground pepper, to taste

Steps:

  • Heat oil and butter in a large skillet over medium-high heat. Add apples and onions, and cook until golden brown, about 15 minutes. Cover, reduce heat to low, and cook until very soft and caramelized, about 35 minutes. Add vinegar and salt, and cook 5 minutes. Let cool.
  • On a lightly floured surface, roll out dough to a generous 1/8 inch thick. Cut out six 7-inch rounds, gathering scraps and rerolling dough if needed. Place on parchment-lined baking sheets.
  • Puree half the apple-onion mixture in a food processor until smooth. Using an offset spatula, spread 3 tablespoons apple-onion puree over each dough round, leaving a 1-inch border around edges. Sprinkle each with 2 tablespoons cheese. Season with pepper. Top each with a generous tablespoon of remaining apple-onion mixture, and sprinkle with 2 teaspoons cheese. Fold edges of dough in, crimping with your fingers. Refrigerate until chilled, about 30 minutes. Meanwhile, preheat oven to 350 degrees.
  • Bake until edges are golden brown, 40 to 45 minutes. Serve tarts warm or at room temperature.

375 g puff pastry
1/3 cup creme fraiche
200 g vintage cheddar cheese, grated

Steps:

  • Preheat oven to 200°C Heat the oil in a frying pan over medium heat. Add the leek and fry, for 5 minutes, or until softened.
  • Remove to a bowl and add the rosemary, vinegar, and apple slices. Toss to combine, then season with salt and pepper. Set aside.
  • Roll the pastry out into a rectangle. Spread the creme fraiche over the pastry, leaving a 4 cm border.
  • Sprinkle half the cheddar over the creme fraiche, scatter with the apple mix, top with the remaining cheddar. Fold the pastry border over.
  • Bake for 25-30 minutes or until the filling is set and the puff pastry is well cooked.

2 1/2 tablespoons unsalted butter, melted and cooled
3/4 cup plus 1 tablespoon sugar
4 large eggs at room temperature
1 cup sifted all-purpose flour
1/2 teaspoon baking powder
1 large golden delicious apple, peeled, cored and diced fine
1 teaspoon minced fresh rosemary leaves
1/2 teaspoon orange extract

Steps:

  • Preheat oven to 350 degrees. Brush one-half tablespoon of the butter in six-cup loaf pan. Dust with tablespoon of sugar.
  • Place the eggs in the bowl of electric mixer. Add the remaining sugar, beat to combine, then beat over high speed, with a wire whisk attachment, if possible, until mixture is very light and the consistency of softly whipped cream, at least five minutes.
  • Meanwhile, sift the flour and baking powder together and set aside.
  • When the eggs and sugar have been whipped sufficiently, fold in the flour mixture by hand, then fold in the diced apple, rosemary, orange extract and remaining melted butter.
  • Pour the batter into the prepared pan, smooth the top and bake 40 to 45 minutes, until the cake has risen, is evenly browned and a cake tester comes out clean. Allow to cool briefly on a rack, then unmold to permit them to complete their cooling.

2 tablespoons sugar
3/4 teaspoon kosher salt
3/4 cup cold, unsalted butter, cut into 1/2-inch pieces
2 egg yolks, beaten with 1 tablespoon of water
1 cup sugar
10 large Granny Smith apples, peeled, quartered and cored
2 tablespoons unsalted butter, melted
1 1/2 tablespoons chopped fresh rosemary

Steps:

  • To make the crust, place the flour, sugar and salt in a food processor and pulse just to combine. Add the butter and pulse until most of the butter is incorporated into the flour. Add the yolk mixture and pulse until mixture just begins to come together. Gather the dough into a ball, flatten into a disk, wrap in plastic and refrigerate.
  • To make the filling, place the sugar in an 11-inch ovenproof skillet over medium-low heat. When the sugar begins to melt, stir until it melts completely and turns into a caramel-colored syrup. Remove from the heat. Toss the apples with the melted butter and rosemary. Arrange the apples in the skillet on top of the syrup in 2 layers, making concentric circles; put the first layer in core side down and the second layer core side up.
  • Place over medium heat and cover the skillet. Cook for 5 minutes. Uncover and cook for 10 minutes. Set aside to cool.
  • Preheat the oven to 350 degrees. Roll the dough out into a circle slightly larger than the skillet. Place the dough over the apples and fold in the extra dough, pressing it against the skillet to form a seal. Bake until the crust is lightly browned, about 30 minutes.
  • Let stand for 10 minutes. Quickly but carefully invert the skillet over a large plate or platter. Serve warm with creme fraiche or vanilla ice cream.

¼ cup white sugar
⅛ teaspoon salt
½ cup butter, at room temperature
1 egg
5 apples, quartered and thinly sliced
1 cup white sugar
¼ cup butter
1 teaspoon water
1 teaspoon allspice
⅛ teaspoon ground cinnamon, or to taste
⅛ teaspoon ground cloves
2 apples, diced
¼ cup walnuts
1 cup heavy cream
1 egg, at room temperature

Steps:

  • Whisk flour, sugar, and salt together in a bowl. Add butter and egg; mix with a fork until crumbly. Work dough with your hands until fully blended. Wrap in plastic wrap and refrigerate, about 1 hour.
  • Preheat the oven to 400 degrees F (200 degrees C). Roll dough out to fit a 9-inch pie plate. Place crust in the pie plate and prick with a fork.
  • Bake in the preheated oven for 10 minutes. Remove and let cool.
  • Meanwhile, place sliced apples, sugar, butter, water, allspice, cinnamon, and cloves in a large pot; cook over medium heat until apples start to release their juices and are just malleable enough to curve while still holding their shape, 4 to 5 minutes. Remove apple slices to a plate, reserving cooking juices in the pot.
  • Add diced apples to the cooking juices and bring to a boil. Cook until apples are mushy, 5 to 10 minutes.
  • Transfer mushy apples to a medium saucepan. Place walnuts in the bowl of a food processor; process until finely ground. Add nuts to the apples; stir until a paste forms. Add cream; bring to a boil. Remove from heat.
  • Whisk egg thoroughly in a small glass bowl. Add 1 tablespoon of the hot cream mixture, whisking vigorously to make sure the egg doesn't curdle. Repeat twice more. Pour egg mixture into the saucepan; mix to incorporate. Allow custard to cool, stirring often.
  • Spread cooled custard evenly over the crust. Arrange apple slices on top, working from the outer edge to the center in concentric circles, overlapping the slices to look like a rose.
  • Bake in the preheated oven until browned, about 50 minutes.

10 medium apples - peeled, cored, and thinly sliced
1 medium lemon, zested and juiced
½ cup walnuts, finely chopped
1 teaspoon ground cinnamon
½ cup white sugar
1 ¼ sticks unsalted butter, softened
1 large egg
1 ¾ cups all-purpose flour
⅓ cup apricot jam
¼ cup cognac

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a small cookie sheet.
  • Mix apple slices with lemon juice in a bowl. Stir lemon zest, walnuts, and cinnamon together in a separate bowl.
  • Mix sugar and butter together in another bowl. Mix in egg, followed by flour until a dough forms.
  • Spread dough over the prepared cookie sheet with your hands. It will be thin. Sprinkle walnut mixture evenly over the dough and press it in with your hands. Arrange the apple slices over top.
  • Bake in the preheated oven for 30 minutes.
  • While the tart is baking, heat the apricot jam in microwave or stovetop until it reaches a liquid consistency, about 1 minute.
  • Remove the tart from the oven and brush it with warmed jam. Return to the oven and bake until golden and set, 15 to 20 more minutes.
  • To serve, pour cognac into a ladle, carefully light with a match, and pour over the whole tart. The alcohol will burn off.
