EASY GROUND TURKEY LO MEIN



Easy Ground Turkey Lo Mein image

This lo mein can be on the table in no time and is packed with flavor without having to use those fancy sauces. The excess liquid will be soaked up by the noodles. Top with sriracha sauce to taste (optional).

1 (8 ounce) package dried lo mein noodles
4 teaspoons toasted sesame oil, divided
1 pound lean ground turkey
1 cup diced onion
1 ½ tablespoons minced garlic
1 (15 ounce) can low-sodium chicken broth
1 (8 ounce) can water chestnuts, drained and sliced
¼ cup low-sodium soy sauce
1 envelope onion soup mix
3 cups chopped celery, 1/4-inch pieces
1 cup sugar snap peas
¼ cup diced red bell pepper
1 (12 ounce) package fresh mung bean sprouts
1 pinch red pepper flakes

Steps:

  • Bring a large pot of water to a boil; cook noodles, stirring occasionally, until tender, about 6 minutes. Drain and toss with 1 teaspoon sesame oil.
  • Heat remaining sesame oil in a large saucepan over medium heat. Add turkey, onion, and garlic to the hot oil. Cook, stirring occasionally, until ground turkey is no longer pink, about 5 minutes. Drain excess grease and return to the pan.
  • Pour in chicken broth, water chestnuts, soy sauce, and onion soup mix. Stir until well combined. Add celery, snap peas, and bell pepper. Cook and stir until slightly softened, 3 to 5 minutes.
  • Add noodles and bean sprouts to the pan. Stir to combine and serve immediately, topped with red pepper flakes.

2 medium carrots, thinly sliced
1 medium onion, chopped
1/2 teaspoon garlic powder
2 packages (3 ounces each) chicken ramen noodles
1-1/2 cups water
6 cups shredded cabbage
1 cup frozen peas, thawed
1/4 cup reduced-sodium soy sauce

Steps:

  • In a large skillet, cook and crumble turkey with carrots, onion and garlic powder over medium-high heat meat is until no longer pink, 5-7 minutes., Break up noodles and add to skillet; stir in contents of seasoning packets and water. Bring to a boil. Reduce heat; simmer, covered, 3-5 minutes. Add remaining ingredients; cook and stir until cabbage is crisp-tender, 1-3 minutes.

¼ cup vegetable oil
2 cups fresh sliced mushrooms
1 cup shredded carrots
½ cup sliced red bell peppers
1 onion, chopped
2 cloves garlic, minced
2 cups fresh bean sprouts
½ cup chopped green onions
1 tablespoon cornstarch
1 cup chicken broth
¼ cup hoisin sauce
2 tablespoons honey
1 tablespoon soy sauce
1 teaspoon grated fresh ginger
¼ teaspoon cayenne pepper
¼ teaspoon curry powder

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Heat oil in a large wok or saute pan. Stir fry mushrooms, carrots, peppers, onion and garlic until tender. Stir in bean sprouts and green onions; cook one minute. Mix cornstarch and chicken broth in a small bowl and add to stir fry. Stir in hoisin sauce, honey, soy sauce, ginger, cayenne pepper and curry powder. Cook and stir until thickened and bubbly.
  • Add cooked spaghetti, and toss. Serve immediately.

8 ounces uncooked linguine
2 pounds turkey breast tenderloins, cut into 1/4-inch strips
2 tablespoons canola oil, divided
1-2/3 cups julienned sweet red, yellow and/or green peppers
1/3 cup chopped onion
1/2 pound sliced fresh mushrooms
2/3 cup stir-fry sauce

Steps:

  • Cook linguine according to package directions. Meanwhile, in a large skillet or wok, stir-fry turkey in batches in 1 tablespoon hot oil for 5-6 minutes or until no longer pink. Remove and keep warm., In the same pan, stir-fry peppers and onion in remaining oil for 4-5 minutes or until crisp-tender. Add mushrooms; stir-fry for 3-4 minutes or until vegetables are tender. An excellent side dish for any Asian meal, try adding ¾ lb cooked meat (chicken, pork, beef, shrimp), cut in julienne, for a main dish. * The best noodles to use are found in Asian markets, labelled "lo mein." They're a slightly dry, curly, fresh egg noodle. Next best is regular dried linguini. Dried egg noodles will turn mushy, as will vacuum-packed "fresh Chinese-style" egg noodles. * Hoisin sauce, also called Peking sauce, is a thick, reddish-brown sauce that is sweet and spicy, and widely used in Chinese cooking. It's a mixture of soybeans, garlic, chile peppers and various spices. It can be found in Asian markets and many large supermarkets. Look in the Asian or ethnic section. If this item is not in stock at your local store, ask your grocer to special order it for you. Most grocers will be happy to do this for their customers.
