Turkey Wraps are full of fresh veggies, turkey slices, cheese, and cranberry sauce!

2 large flour tortillas (10")
4 ounces turkey (leftover or deli turkey)
1 ½ cups lettuce ( or fresh spinach, shredded)
4 large slices tomato
2 ounces cheddar cheese (or havarti, sliced)
¼ cup honey mustard sauce (store bought or below)

Steps:

  • Place tortillas on a place and cover with plastic wrap. Warm tortillas slightly in the microwave, about 20 seconds.
  • Add 2 tablespoons honey mustard to each tortilla. Divide remaining ingredients over tortillas. Roll tightly.
  • Refrigerate up to 24 hours or serve immediately.

1 large red or green sweet pepper, cut into 1/2-inch-wide strips
1 medium yellow summer squash, cut lengthwise into 1/4-inch-thick slices
1 small red onion, cut into 1-inch-wide wedges
2 teaspoons canola oil
3 tablespoons bottled reduced-calorie ranch salad dressing
3 10-inch spinach or whole grain tortillas
6 ounces thinly sliced cooked turkey breast
2 ounces reduced-fat Monterey Jack cheese or Monterey Jack cheese with jalapeño chile
peppers, cut into thin slices
1/4 cup snipped fresh cilantro

Steps:

  • Brush sweet pepper, squash, and onion with oil. Place vegetables in a greased grill wok, grill basket, or grill tray. For a charcoal grill, place wok, basket, or tray on the rack of an uncovered grill directly over medium-hot coals. Grill just until tender, turning occasionally; allow 6 to 8 minutes for sweet pepper and squash and 10 to 12 minutes for onion. Remove vegetables from grill; set aside and keep warm. (For a gas grill, preheat grill. Reduce heat to medium. Place wok, basket, or tray on grill rack over heat. Cover and grill as above.)
  • To assemble wraps, spread ranch dressing on one side of each tortilla. Divide turkey among tortillas. Top with cheese. Spoon grilled vegetables over cheese just below center of each tortilla. Top vegetables with cilantro. Fold bottom third of each tortilla partially over the vegetables. Fold in sides and roll up tortillas. Cut wraps in half.

Trying to mix up your lunch routine? A homemade wrap is always a yummy idea! This turkey bacon wrap combine lots of turkey, crispy bacon, Swiss cheese, veggies and ranch dressing. Such a satisfying and delicious meal!

4 slices thick-cut bacon (or a regular variety)
2 flour tortillas (each about 9.5 to 10 inches in diameter)
4 teaspoons ranch dressing
2 sliced Swiss cheese
1/2 roma tomato (sliced)
1/2 pound cooked turkey (cut into bite-sized pieces or shredded)
3 to 4 leaves lettuce (use romaine or your favourite variety)

Steps:

  • To cook bacon, preheat oven to 400 degrees Fahrenheit. Place bacon strips on a sheet pan and bake for 18 to 20 minutes or until cooked through and crispy. Time may vary slightly, depending on how thick your bacon is and how crispy you like it. Once the bacon is cooked, you can transfer it to a paper towel-lined plate to drain of any grease. Now it's ready to be used in the wrap.
  • For each turkey bacon wrap, spread 2 teaspoons of ranch dressing in the centre of the tortilla.
  • Then start layering on the ingredients: cheese, tomato, cooked turkey, cooked bacon slices and lettuce. Note: If you want to sprinkle your tomatoes with a pinch each of salt and freshly ground pepper, you can totally do that (optional, of course).
  • Now it's time to fold into a wrap. For each one, bring one side of the tortilla up over the ingredients (covering them), fold in each side, then begin to tightly roll the wrap (keeping everything tucked in as you roll, so it's compact). I like to fold wraps burrito-style. Alternatively, you can fold the wrap your favourite way. Cut each wrap in half, if you like. Serve and enjoy!Optional: Warm the wraps. Lightly grease a non-stick frying pan with a little vegetable oil. Place over medium heat. Add wrap to the pan and warm about 2 minutes per side.

4 flour tortillas (8 to 10 inch), any flavor
1 cup Roasted Red Pepper Dip*
3 cups lightly packed baby spinach leaves
2 large plum (Roma) tomatoes, thinly sliced
1/2 lb thinly sliced cooked smoked turkey (from deli)

Steps:

  • Spread each tortilla evenly with dip. Arrange spinach leaves evenly over dip to within 1 inch of top edge. Top with single layer of tomato slices. Evenly layer turkey slices over tomatoes.
  • Starting with bottom edge, tightly roll up each tortilla. Wrap rolls individually in plastic wrap. Refrigerate at least 1 hour but no longer than 24 hours.
  • To serve, trim off uneven ends of rolls. Cut rolls into 1-inch slices; arrange on serving platter.
