TURKISH VEGETARIAN EGGPLANT APPETIZER WITH GARLIC AND WALNUTS



Turkish Vegetarian Eggplant Appetizer with Garlic and Walnuts image

This Turkish meze is perfect for making ahead of time when you expect guests. The eggplant may also be pan fried, but it requires less oil and tastes better when roasted in the oven.

extra-virgin olive oil, or as needed
2 pounds eggplants, sliced
3 tablespoons white wine vinegar
salt to taste
7 cloves garlic, minced
1 bunch chopped fresh flat-leaf parsley
⅓ cup chopped walnuts

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil and brush with olive oil.
  • Brush eggplant slices on both sides with olive oil and place on the baking tray in a single layer.
  • Bake in the preheated oven until soft and browned, about 20 minutes, turning slices over once after 10 minutes. Transfer slices to a large serving place, brush with vinegar, and sprinkle with salt. Let cool.
  • Heat a drizzle of olive oil in a skillet over medium-low heat and cook garlic until softened and fragrant without browning, about 3 minutes.
  • Mix parsley and walnuts in a bowl. Add sauteed garlic and a little bit of olive oil to make a paste. Mix well, season with salt, and spread the paste onto the cooled eggplant slices.

Try out Turkish şakşuka, a delicious vegetarian ragout of fried eggplant and vegetables in tomato sauce.

2 large eggplants
1 green bell pepper
1 sweet red or Corni di Toro pepper
1 red onion
1 small zucchini or courgette squash
4 cloves garlic (chopped)
Vegetable oil for frying
5 large tomatoes (peeled and cut into large chunks)
2 tbsp. tomato paste
1 tsp. sugar
1 tsp. salt, more or less to taste
1/4 tsp. black pepper, more or less to taste
Garlic yogurt for garnish

Steps:

  • Prepare the eggplant: Cut off both ends and using the edge of a vegetable peeler or a paring knife, remove the skin in alternating strips going from top to bottom. Do this gently, saving as much flesh as you can.
  • Cut the eggplant into bite-sized rectangular chunks about 2 inches long. Put the chunks of eggplant in a large mesh strainer or colander and salt well, turning with your hands to salt all sides. Let the salted eggplant rest for about 15 minutes while you prepare the other vegetables. This removes the bitterness.
  • Coarsely dice the peppers, red onion, and zucchini.
  • Once the vegetables are ready, pour about 2 inches of oil in a deep frying pan or saucepan and turn the heat on high. While the oil is heating, wash the eggplant in the strainer with cold water, turning it with your hands, until the salt is removed. Drain it well and blot off the extra water with paper towels before you fry them.
  • Fry the eggplant until tender and just beginning to brown at the edges. Do the same with the squash. Strain out the fried vegetables and drain them on a thick layer of paper towels. Let them sit for several minutes to make sure as much oil as possible drains away.
  • In the meantime, put 2 tablespoons of olive oil in a skillet and fry the onion, garlic, and peppers until tender.
  • Add the tomatoes, tomato paste, sugar, salt, and pepper. Cover and reduce the heat to low. Let the sauce simmer until the tomatoes are soft and begin to break down.
  • Remove the lid, stir it well, and let the sauce simmer until most of the liquid is reduced. It should be the consistency of jarred pasta sauce.
  • In a mixing bowl, add the eggplant, squash, and tomato sauce and stir together well. Put the şakşuka in a serving dish and chill for several hours. Just before serving, spoon generous amounts of garlic yogurt over the top.

  • Peel half the skin off the aubergines, so they resemble a zebra pattern. Salt generously and set aside for half an hour.
  • Meanwhile, make the stuffing. Heat a thick bottomed frying pan over medium heat. Add 2 Tbsp olive oil and fry the onion until softened, but not browned, 8-10 minutes. Stir regularly. Add the garlic and fry for another minute, stirring constantly, taking care not to burn the garlic. Add the tomatoes and Aleppo pepper (if using). Keep frying until the tomatoes collapse and the liquid starts to thicken, 5-6 minutes. Stir every once in a while to ensure nothing catches at the bottom. Add the flat-leaf parsley and some salt and pepper. Take off the heat.
  • Brush the salt off the aubergines. Heat a thick bottomed frying pan over medium heat. Add 2 Tbsp olive oil and fry the aubergines until they start to soften, turning regularly. Alternatively, roast in a preheated oven at 200 C (390 F) until starting to soften, around 20 minutes.
  • Make a lengthwise incision in the aubergines, as if opening a baguette, leaving 2 cm at either end. The incision should not pierce through the bottom of the aubergines.

  • Mix the diced aubergine with 150 ml of the olive oil and some salt and pepper. Transfer to the baking sheets and roast until all the pieces are completely soft, 25-30 minutes or longer.
  • Meanwhile, place a large, thick bottomed pan or pot over medium heat. Add the remaining 50 ml olive oil, onion and pepper and fry until softened, but not browned, stirring regularly. This will take 10-12 minutes. Add the garlic and continue frying for another minute, stirring constantly and making sure the garlic doesn't colour. Add the tomatoes and sugar and continue to cook until the tomatoes have released their juices and cooked down a little, stirring occasionally, about 10 minutes. Add more salt and pepper, if needed.
  • Gently fold the roast aubergine into the sauce. Continue to cook for 5 minutes or more to allow the flavours to mingle, or until your aubergines are completely soft if they weren't already – undercooked aubergines is the only thing that can ruin this dish. Be careful when stirring so the aubergines don’t break and turn into a mash. Take off the heat and leave with the lid on until it has reached room temperature.
