These Baked Chicken Parmesan Sticks are simple, easy, and best of all, baked! Coated in crisp panko crumbs & parmesan cheese, these make a delicious meal.

1/2 cup all-purpose flour
2 large eggs
1 cup panko breadcrumbs
1/2 cup grated Parmesan
1 tablespoon parsley (dried or freshly chopped)
1 1/2 lbs. boneless skinless chicken tenderloin
4 tablespoons melted butter
salt and pepper (to taste)
granulated garlic (to taste)
1 cup finely grated mozzarella cheese
1/4 cup finely grated parmesan cheese (optional)
12-16 wooden skewers
olive oil
1 small red onion (diced )
4 garlic cloves (minced)
1/2 cup red wine ((optional))
14.5 ounces diced tomatoes
salt and pepper (to taste)
29 ounces tomato sauce
3-4 tablespoons Italian Seasoning

Steps:

  • If you are making homemade marinara, prepare ahead of time. Heat oil on medium heat, sauté onions and garlic until tender. Deglaze with red wine if using. Stir to combine and add diced tomatoes. Cook for a couple of minutes to soften, then season with salt and pepper. Quickly add the tomato sauce. Stir in Italian seasoning until well combined. Let it come to a slow boil. Then reduce heat to low and cook for 2-3 hours.
  • Preheat the oven to 400 degrees F. Line a baking sheet with a wire baking rack, set aside.
  • Season chicken tenders with salt, pepper, and granulated garlic.
  • Spread the flour on a large plate, I used a dinner plate.
  • In a small or medium bowl, beat eggs.
  • In a medium mixing bowl mix together panko, grated Parmesan cheese, and parsley.
  • Dredge each tenderloin one at a time in the flour, and then into the beaten eggs until fully coated, then into the panko, pressing the chicken into the panko so that it sticks.
  • Place on the rack on the baking sheet. Once all the tenderloins are coated, brush the chicken sticks lightly with the melted butter and set in the oven.
  • Bake until golden brown and fully cooked, about 20 minutes. Remove pan from oven and sprinkle with mozzarella and parmesan cheese, set back in the oven and bake another 3-5 minutes until the cheese is melted and bubbly.
  • Remove from oven, and skewer each piece of chicken. Set on a plate to serve along with marinara sauce.

I was searching for a good baked chicken recipe with Panko that didn't have Parmesan cheese as an ingredient. My mouth likes it, my waist doesn't. Anywho this is a hybrid of a recipe I was experimenting with, and I think it's pretty tasty and kinda lean ;-) You be the judge....

6 chicken drumsticks
1/2 teaspoon garlic powder
1/2 teaspoon ground black pepper
3/4 teaspoon season salt
1 tablespoon onion powder
1 tablespoon paprika
1 1/2 tablespoons oregano
1 cup panko breadcrumbs
cooking spray

Steps:

  • Preheat oven to 350.
  • In a large bowl, combine all of the ingredients except the cooking spray. Use a whisk to be sure the ingredients are all combined well. Set aside.
  • Wash the chicken drumsticks in cold water; don't dry them.
  • Roll each drumstick into the crumb mixture, and carefully transfer each piece to the baking sheet. Do no discard the leftover crumbs.
  • Lightly spray the drumsticks with the vegetable oil.
  • Bake, loosely covered with aluminum foil for 45 minutes.
  • Remove from oven. turn chicken over. and top each drumstick with some of the leftover crumb mixture. Spray once again, liberally with the vegetable oil.
  • Return the baking sheet to the oven, this time uncovered for another 45 minutes.

3 chicken breasts, boneless and skinless
salt, to taste
1 cup mozzarella cheese
2 cups flour
6 eggs, beaten
2 cups bread crumbs
1 cup oil, for frying
3 cups tomato sauce
½ cup grated parmesan cheese
2 tablespoons fresh basil

Steps:

  • Season chicken with salt.
  • Cut a pocket into each chicken breast.
  • Stuff the pockets evenly with the mozzarella cheese.
  • Press the edges of the chicken together to seal the pocket.
  • Separate the flour, eggs, and bread crumbs into 3 separate bowls.
  • Being careful to keep the chicken from opening, dip the stuffed chicken in the flour, shaking off the excess.
  • Dip the floured chicken into the egg, then the bread crumbs, coating it evenly.
  • Heat the oil in a large pan over medium heat. Preheat oven to 180°C.
  • Fry the chicken until golden brown on both sides.
  • Place ⅔ of the tomato sauce evenly on the bottom of a baking dish. Place the chicken on top.
  • Top with the rest of the tomato sauce, then sprinkle the parmesan and basil on top.
  • Bake for 20 minutes.
  • Enjoy!

Bamboo skewers (6 to 10 inches long) or ice-cream sticks

Steps:

  • Lay the chicken breasts on a cutting board and slice each diagonally into 4 or 5 large strips.
  • Combine the flour, salt, and pepper on a dinner plate. Beat the eggs with 1 tablespoon of water on a second plate. Combine the breadcrumbs and Parmesan on a third plate. Dredge the chicken breasts on both sides in the flour mixture, then dip both sides into the egg mixture and roll in the bread-crumb mixture, pressing lightly to coat.
  • Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a large saute pan and cook the chicken strips on medium-low heat for about 3 minutes on each side, until just cooked through. Don't crowd the pan. Add more butter and oil and cook the rest of the chicken breasts. Serve each strip on a skewer or stick.
  • You can keep the chicken breasts warm for about 15 minutes on a sheet pan in a preheated 200 degree F oven.

1 ½ cups seasoned Italian breadcrumbs
5 tbsp canola oil
Kosher salt and freshly ground black pepper
8 chicken drumsticks (about 2lbs), skin on, at room temperature
1 ½ cups jarred marinara sauce, warmed, plus more for serving
⅓ cup grated Parmesan (about 1 oz)
6 ounce part-skim mozzarella, thinly sliced into 1/8" pieces

Steps:

  • Position an oven rack on the lowest shelf and preheat the oven to 450ºF. Combine the breadcrumbs, oil, 1/2 teaspoon salt and 1/4 teaspoon pepper in a large resealable plastic bag. Put the drumsticks in a large bowl and toss to coat with 1 tablespoon water. Place the drumsticks in the bag with the breadcrumbs and shake well to coat, pressing the breadcrumbs firmly into the meat. Arrange the drumsticks in a circle on a 9-inch pie dish with the tips facing out (they may rest on the rim of the dish). Bake until the breadcrumbs are dark golden and the internal temperature registers 165ºF on an instant-read thermometer (avoid touching bone), 30 to 35 minutes.
  • Divide the sauce evenly over the drumsticks. Sprinkle the Parmesan over the top and lay 1 slice of mozzarella on top of each drumstick. Return the drumsticks to the oven and cook until the cheese is melted and bubbly, about 10 minutes. Serve.

Steps:

  • Heat greased grill for indirect grilling: Light one side of grill, leaving other side unlit. Close lid; heat grill to 350°F.
  • Combine dressing mix, dry seasonings and 1 Tbsp. sugar. Spoon 2 Tbsp. seasoning mix into medium bowl. Add mayonnaise, vinegar, 2 Tbsp. cheese and remaining sugar; mix well. Refrigerate until ready to use.
