I was looking through my new Taste of Home Magazine, and came across this recipe. My family loves asparagus, and I think this will be a perfect side dish for my Easter dinner this year. Photo: Taste of Home-March/2013 issue

1 1/2 lb fresh asparagus, trimmed
1 1/2 c grape tomatoes, halved
3 Tbsp pine nuts
3 Tbsp olive oil, divided
2 garlic cloves, minced
1 tsp kosher salt
1/2 tsp pepper
1 Tbsp lemon juice
1/3 c grated parmesan cheese
1 tsp grated lemon peel

Steps:

  • 1. Preheat oven to 400 degrees. Put asparagus, tomatoes and pine nuts on a foil-lined 15x10x1 inch baking pan. Mix 2 tablespoons oil, garlic, salt and pepper; toss with asparagus.
  • 2. Bake for 15-20 minutes or unil asparagus is just tender. Drizzle with remaining oil and lemon juice; sprinkle with parmesan cheese and lemon peel. Toss to combine. Enjoy

1 pound asparagus, trimmed
1 tablespoon olive oil
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Snap or cut the dry stem ends off each asparagus and place on a heavy baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and toss. Roast until the asparagus is tender, about 15 minutes. Cool slightly and serve warm or at room temperature.

Asparagus and tomatoes seasoned with salt and pepper and roasted to perfection with a topping of melted parmesan cheese.

1 1/2 pounds asparagus, trimmed
1 tablespoon oil
1 tablespoon lemon juice
1 teaspoon lemon zest
salt and pepper to taste
1/2 teaspoon oregano (or italian seasoning)
1 large tomato, sliced thinly
1/2 cup parmigiano reggiano (parmesan), grated

Steps:

  • Toss the asparagus and tomatoes in the oil, lemon juice and zest, salt and pepper, place the asparagus on a baking sheet in a single layer with the slices of tomato on top, sprinkle on the parmesan and roast in a preheated 400F/200C oven until they start to caramelize, about 15-20 minutes, mixing half way through.

Steps:

  • Place the asparagus, tomatoes and pine nuts on a foil-lined 15-in. x 10-in. x 1-in. baking pan. Mix 2 tablespoons oil, garlic, salt and pepper; add to asparagus and toss to coat. Bake at 400° for 15 - 20 minutes or just until asparagus is tender. Drizzle with remaining oil and lemon juice; sprinkle with cheese and lemon peel. Toss to combine. Yield: 8 servings. 1 bunch fresh asparagus, trimmed
½ pound fresh mushrooms, quartered
2 sprigs fresh rosemary, minced
2 teaspoons olive oil
kosher salt to taste
freshly ground black pepper to taste

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Lightly spray a cookie sheet with vegetable cooking spray.
  • Place the asparagus and mushrooms in a bowl. Drizzle with the olive oil, then season with rosemary, salt, and pepper; toss well. Lay the asparagus and mushrooms out on the prepared pan in an even layer. Roast in the preheated oven until the asparagus is tender, about 15 minutes.
