Great little bite sized biscuits. My husband calls them granny biscuits. These are the size she made. They're about 2 bites worth and she would serve them with country ham. These are great when you're in a hurry and still want that home made taste! Enjoy!

2 c biscuit mix - i used bisquick
2/3 c cream
1 1/2 Tbsp sugar

Steps:

  • 1. Preheat oven to 450 degree F. I place the biscuit mix, cream and sugar in my food processor, pulse just until moistened. Lightly flour a spot on your counter and pour out the mix. Knead the mixture 8 - 10 times or until holding nicely together.
  • 2. Roll biscuits to about 1/2 inch thickness. I use a 3 inch biscuit cutter. Cut into dough, don't twist the cutter. ( I use the scraps too - pat together and cut a few extras.)- not pretty but still tastes good! LOL Place on a lightly greased sheet pan, about 1 inch apart.
  • 3. Bake for 8 - 10 minutes or until golden. Serve as mini biscuit sandwiches as I did or jam, sausage gravy. Great just slathered with butter.

GRANNY'S BISQUITS. These are the bisquits my granny use to make(God rest her soul) I watched her make these so many times when I was a kid. I have never found a recipe that comes close to these. They are very moist and delicious.

4 -6 cups self-rising flour
1 1/2 cups buttermilk (start with about 1 1/2 c)

Steps:

  • Mix flour and buttermilk together until mixture is stiff but not dry.
  • It will be sticky On floured surface turn dough out.
  • Add flour on top of dough and knead until dough is kind of dry but still sticky in the middle.
  • Pat dough out to about 1/2 in thick and cut with cutter.
  • In a cookie pan melt about 1/4 c butter flavored crisco (or reg. Crisco) in a 425 degree oven When melted remove from oven, tilt to cover pan.
  • Then, tilt pan so extra oil runs to one end.
  • Take each bisquit and dredge in the oil so that both sides of bisquits are coated.
  • Place bisquits close together in pan (touching).
  • Now bake at 425 degrees F until the tops are brown.
  • THESE ARE ABSOLUTELY,NO DOUBT ABOUT IT THE BEST, MOST DELICIOUS, MOIST, BISQUITS YOU HAVE EVER TASTED.

My Granny's Old-Fashioned Biscuits image

A simple, basic buttermilk biscuit with minimal ingredients. It's an old-fashioned recipe everyone should have handy. If you follow Elaine's directions, once baked the biscuit is perfectly flaky and fluffy with a little tang from the buttermilk. They're melt-in-your-mouth good.

2 c self-rising flour (Martha White or White Lily for best results)
1/4 c lard or shortening (about egg-sized and very cold)
1 c very cold buttermilk (may need to adjust amount)
3 Tbsp melted shortening or butter

Steps:

  • 1. Preheat oven to 450 degrees. Heavily grease a large cast-iron skillet or biscuit pan and set aside. (I prefer the cast iron skillet).
  • 2. Put the flour into a large bowl and add lard/shortening.
  • 3. Cut into flour using the usual pastry method.
  • 4. Add buttermilk and mix with fork or hands.
  • 5. Mix into a light dough.
  • 6. Turn dough onto a floured board and knead a couple of times.
  • 7. Pat dough to flatten to about 1/2 inch thick. Using a biscuit cutter, cut dough into biscuits.
  • 8. Place cut biscuits in the prepared pan.
  • 9. Pour melted shortening/butter over each biscuit.
  • 10. Bake for about 13 to 15 minutes or until golden. Remove from pan and place into a covered container and allow to steam for about 5 minutes. You may also brush melted butter over top prior to steaming (if desired).
  • 11. Serve hot with butter, apple butter, jellies, jams, honey, or anything else that you like.
  • 12. Special Note: I didn't have a biscuit cutter, so what I did was open both ends of a 4-ounce sized mushroom can, washed and removed the label and it works perfectly.

  • Preheat oven to 425°F. Line a large rimmed baking sheet with parchment paper. Break cheese into large chunks; transfer to a food processor, and pulse until coarsely ground, 16 to 20 times. (You should have a little over 12/3 cups ground cheese.) Reserve 2 tablespoons cheese.
  • Stir together flour, sugar, pepper, and 1 cup ground cheese in a large bowl. Cut butter into flour mixture using a pastry blender or your fingers until mixture resembles coarse crumbs. Stir in buttermilk until a shaggy dough forms.
  • Transfer dough to a floured work surface. Pat into a 1-inch-thick rectangle, and cut into quarters; stack quarters on top of each other. (Dough will be crumbly at first but will come together as you work.) Pat stacked dough back into a rectangle. Repeat cutting and stacking 2 more times. Roll or pat dough into a 3/4-inch-thick rectangle (about 8 1/2 x 10 inches). Cut rounds out of dough using a 11/2-inch round cutter, pressing straight down, without twisting cutter. (You’ll have about 35 biscuits; discard dough scraps.)
  • Sprinkle 2/3 cup ground cheese in a 12- x 8-inch rectangle on prepared baking sheet. Arrange biscuits 1/2 inch apart on cheese. Freeze 10 minutes. Remove from freezer; brush biscuit tops evenly with egg. Sprinkle lightly with pepper and reserved 2 tablespoons ground cheese.
